- Thoroughly rinse the roast in cool water, and pat dry with a paper towel. Let the roast rest on a plate covered with plastic wrap on the counter for at least 30 minutes to come up to room temperature. Massage all sides of the roast with cooking oil. I often use olive oil, however if I am preparing the roast for carnitas or pulled pork I use vegetable oil which does not add flavor. Liberally sprinkle all sides of the roast with salt and pepper (do not season the roast until you are ready to cook, salting the meat ahead of time will draw moisture out of the roast). Heat your grill on high and brush to clean. Reduce the heat to medium high and place the seasoned roast directly over the heat source and brown on all sides. You are not trying to cook the roast, rather just get some good color on it. Do not be alarmed if the grill flames up, it will. Due to the high fat content of the meat it is bound to do so. Some fire won't hurt the roast but do keep an eye on it and move it out of the way if it begins to burn. Once the roast is browned on all sides it is ready for the crock pot. Chop the onions into large pieces and place them in the bottom of the crock pot. Peel the garlic and add the whole cloves to the onions. The onions will not only add flavor, but hold the meat up off of the bottom of the crock pot. Place the roast fat cap up directly on the onions. This will allow the fat to drip down through the meat as it cooks keeping it extremely moist. Put the lid on the crock pot and set heat to high. Do not add any liquid to the crock pot. That might sound different to how you have cooked in the past, but please just trust me on that. Cook on high for two hours. Reduce heat to low and cook for about another four hours. Keep the lid on, resist the temptation to open the crock pot to check the roast. You will see the meat pull away from the bone through the lid. Roast is done when the bone can easily be removed with tongs. If you prepared a boneless roast, test for tenderness with a fork. The meat should easily fall apart when tested. Lift the roast from the crock pot and loosely tent with foil on a platter or cutting board for 15 - 20 minutes before slicing or shredding.
DAD'S BASIC MOIST PORK ROAST
This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

- Take your pork roast out of the fridge and let it sit at room temperature for 30 minutes to an hour. Preheat oven to 300°F.
- If your pork roast has a thick layer of fat on the outside, cut about half of it away so that it's a thinner layer. You can throw this out. Or, the best thing to do, is to turn it into a snack to have while your pork is roasting. Put the fat that you removed from the roast in a single layer on its own cake pan. Use a pan with edges because a lot of hot fatty liquid is going to come out of it. Season it lightly with salt. Roast the layer of fat in the 300F oven until it's brown and very crispy. Check it often. Blot it on kitchen towel. Break it into pieces and offer it as nibbles to anyone who is lured into your kitchen by the roasting pork smells.
- Meanwhile, mix the pepper, garlic powder, and salt in a small bowl and then sprinkle liberally all over the roast.
- Put the roast in a large roasting pan, fat-side-up. You do not need to use a rack in the pan.
- Add about half an inch of low or no-sodium chicken broth to the bottom of the pan. Put it into the oven, uncovered.
- Cook for 40 minutes per pound or until an instant read thermometer reaches 180F. This may seem high for pork but your goal is really tender, slow-cooked pork, almost like the texture of pulled pork.
- If at any point most of the broth has evaporated, add more. Add enough to cover any brownings on the side of the pan from where the previous broth evaporated away. This will dissolve those brownings and flavor your gravy.
- Take the roast out of the oven. Transfer it to a plate so that you can get at the roasting pan and make your gravy. Let the roast rest for 30-40 minutes. This is important because this is the only time the roast will rest. The roast does not need to be covered during resting time. Use this time to make your gravy. (Here's how to make gravy using the flavorful broth from the bottom of the roasting pan) and to finish off your other side dishes and set the table.
- Preheat the oven to 475F.
- Once the roast has rested, and the oven has preheated, and once you have everything else for your dinner just about ready, put the roast into a clean roasting pan or onto a baking sheet, uncovered, and put it into the hot oven for 13-17 minutes. You want the outside to get nice and brown.
- When it's really nice and browned, take the roast out of the oven and immediately carve it* and serve it. Do not let it rest now since it has already rested.

- Put a large ovenproof Dutch oven, without the lid, into the oven and preheat to 425 degrees F.
- Meanwhile, rub the pork all over with 2 tablespoons salt and 1 teaspoon pepper.
- Once the oven is preheated, carefully remove the Dutch oven and add the pork to it fat-side down. Roast until golden all over, 45 minutes. Reduce the oven temperature to 300 degrees F and flip the pork so it is fat-side up. Continue to roast until the internal temperature is about 175 degrees F, about 3 hours. Cover the pot with the lid and continue to cook until the internal temperature is 195 to 200 degrees F, about another 30 minutes. Remove the pot from the oven, uncover and let rest until the meat is cool enough to handle, about 30 minutes.
- Transfer the pork to a cutting board. Skim off the fat from the liquid at the bottom of the pot with a spoon or ladle and discard it. Reserve the liquid for re-warming the meat.
- Pull the meat from the bone and discard it. The part of the meat that was in the bottom of the pot and cooks in the liquid is perfect for shredding with two forks. The top part that roasts for most of the cooking time should be sliced in to 1/2-inch pieces for browning in other recipes Refrigerate in airtight containers for up to 5 days.

- Preheat the oven to 450 degrees.
- In a small bowl, combine garlic, soy sauce, salt, pepper, thyme, rosemary, olive oil, and mustard.
- Rub seasoning mixture on all sides of the pork roast.
- Place a rack inside a roasting pan and place roast covered in rub on top of the rack.
- Cook uncovered roast in preheated oven for 20-25 minutes or until the top starts to slightly brown.

- Pour chicken broth and liquid smoke over roast and add vegetables on top and around roast.
- Make a tent out of aluminum foil to put over the roast and return to the oven. Let the pork cook for 2 hours uninterrupted, but then start checking every hour or so and baste the roast with liquids from the bottom of the pan. Add more chicken broth to the pan if needed (you want liquid in the bottom the whole time so that the roast doesn't dry out).
- The cook time will vary based on the size of your roast and your oven, so that's why it's recommended to start checking and basting your roast hourly. As a guideline, here are some cooking times:4 lb roast: 3.5 - 5 hours5 lb roast: 4 - 5.5 hours6 lb roast: 4.5 - 6 hoursThe roast is done cooking when the internal temperature somewhere between 175-180 degrees.
- Remove the roast from the oven, but keep the aluminum foil tent on top and let the roast rest for 15-20 minutes.
- Slice or shred the pork (it should almost be falling apart at this point) and then drizzle with some of the pan juices.
