- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and cook, stirring occasionally, until soft, about 3 more minutes. Season with salt and pepper, transfer to a large bowl and set aside.
- Lightly pound the steak between 2 sheets of plastic wrap until about 1/8 inch thick. Heat the remaining 2 tablespoons olive oil in the same skillet over medium-high heat. Add the steak in batches and cook until browned, about 30 seconds per side; season with salt and pepper. Transfer the steak to the bowl with the onion and garlic. Add the parsley and giardiniera brine and toss to coat. Drizzle the cut sides of the rolls with olive oil. Pile the steak and onion mixture on the roll bottoms and top with the giardiniera and provolone. Cover with the roll tops. Serve with hot sauce, if desired.

A bit of wine for the marinade, the rest with dinner! You can boil the herbed marinade until reduced and use it as a sauce to top off the steak.

- Combine the olive oil, red wine, basil, thyme, black pepper, onion, and garlic in a zip-top plastic bag or non-reactive container. Add the steak and let marinate in the refrigerator for 4-10 hours. Remove the steak from the marinade and grill or cook the steak as desired. Discard the marinade.

- In a large skillet, cook the steaks in 2 teaspoons oil in batches over medium heat for 3-4 minutes or until no longer pink. - Preheat an oven to 300 degrees F (150 degrees C). Whisk together the flour, salt, pepper, and paprika in a large bowl; set aside.
- Dissolve the bouillon cube in the water in a 2 quart casserole dish, then whisk in the sherry, tomato soup, garlic powder, sugar, oregano, thyme, rosemary until blended; set aside. - Whisk the olive oil, vinegar, garlic, rosemary, parsley, oregano, honey, red pepper flakes and 1/2 teaspoon each salt and pepper in a medium bowl. Transfer 3 tablespoons of the vinaigrette to a small bowl; cover and refrigerate until ready to serve.
- Combine the remaining vinaigrette with the steak in a large resealable bag; turn the bag several times to coat the meat. Refrigerate at least 4 hours or overnight, turning the bag occasionally.
- Preheat a grill to high. Transfer the steak to a plate or baking sheet, letting the excess marinade drip off; season the steak with salt and pepper. Let stand at room temperature, 30 minutes. Grill the steak until a thermometer inserted into the thickest side reaches 130 degrees F, 16 to 20 minutes for medium rare, flipping every 4 to 5 minutes. Transfer the meat to a cutting board and let rest 10 minutes. Thinly slice the meat against the grain; serve with the reserved vinaigrette.

- Combine all ingredients in a freezer bag. Remove air and either marinate 2 hours or freeze.
- Defrost bag in fridge. Preheat gas grill to high heat. Grill steak 6 to 7 minutes per side (or broil in oven).
- Remove steak from grill and let rest 5 minutes before slicing to preserve juices.
- While steak is cooking, cook peppers and onions in remaining dressing in a large skillet until tender.

I was having a huge steak craving, but it's like the world was consipring against me--the restaurants nearby had both run out of beef! So I pulled this recipe from TOH and decided to resolve the issue in my own kitchen. I didn't have many leftovers, even though I was the only one eating it. And I got jealous glares from everyone who had to smell the heated leftovers in our small office the next day.

- Combine 1/2 teaspoon Italian seasoning, 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Rub mixture over both sides of steak; set aside.
- In large nonstick skillet, saute the peppers, onion and garlic in oil until vegetables are crisp-tender.
- Add tomatoes and remaining Italian seasoning, salt and pepper. Stir.
- Reduce heat; cover and simmer for 5 minutes. Remove from the heat.
- Stir in vinegar; keep warm.
- Place steak on a broiler pan coated with nonstick cooking spray. (I used my Calphalon hard anodized skillet.).
- Broil 4-6 inches from the heat for 4-8 minutes on each side or until desired doneness.
- Let stand for 5 minutes before slicing.
