ASPARAGUS TERRINE

- Spritz a 9 by 5-inch loaf pan with water and line it with plastic wrap, leaving enough excess to fold over the top when filled.
- Combine the gelatin and water in a 1-quart saucepan and set aside to bloom for 5 minutes.
- Put the quark, cream cheese, anchovies, chives, and black pepper in the bowl of a food processor and process for 1 minute. Stop and scrape down the sides of the bowl.
- Put the bloomed gelatin over low heat until melted, about 1 minute. Remove from the heat. With the food processor running, slowly pour the melted gelatin into the cheese mixture and process for 30 seconds.
- Sprinkle the parsley evenly across the bottom of the prepared loaf pan. Pour 1/4 of the cheese mixture over the parsley. Top with 1/3 of the asparagus in a single layer, alternating direction of tips. Repeat with remaining cheese mixture and asparagus, ending with the cheese mixture. Fold the excess plastic wrap over the filling. Set a second loaf pan on top of the plastic wrap and press down to compact. Refrigerate until firm, about 2 hours.
- Serve chilled, cut into 1-inch slices, along with crackers or toasted French bread slices.
- To store, wrap in plastic wrap and refrigerate for up to 2 days.
- Pour or spritz the water onto 4 paper towels. Spread out the paper towels and lay the asparagus on top of the dampened towels. Sprinkle with the salt. Roll up the asparagus in the dampened towels. Lay the bundle, seam side down, in the microwave. Microwave on high until the asparagus is just crisp tender, about 3 to 4 minutes. Remove from the microwave using tongs and carefully unwrap.
VEGETABLE TERRINE WITH HERB SAUCE
A cold treat for a summer lunch. A two day process, so plan ahead. Find asparagus, zucchini and beans that are fairly long, so they cover the layer.

- Bring a large pot of water to a boil. Dip the chard leaves in the boiling water and quickly remove carefully with a slotted spoon. Place them flat on a paper towel.
- Add carrots to the boiling water and cook for 25 minutes, or until tender. Drain and cool.
- Lightly oil an 8 x 2 3/4 x 3 1/2 inch terrine or loaf pan. Line with a layer of plastic wrap, leaving enough hanging over the sides to cover the top. Then line the pan with the chard leaves, making sure there are no gaps and leaving enough hanging over the sides to cover the top.
- Trim the asparagus at the thicker end so they fit the length of the pan.
- Slice each zucchini in half lengthwise, and then each half into four lengthwise.
- Steam the asparagus, zucchini and green beans for 6 minutes, or until tender. Drain and refresh in cold water so they keep their color. Pat dry with paper towels.
- Puree carrots with 1 cup creme fraiche in a food processor. Season with salt and pepper.
- Put 2 tablespoons water in a small bowl and sprinkle with gelatin. Let sit 5 minutes, then put bowl over a pan of simmering water until melted. Add to the carrot puree and mix well.
- Spoon a quarter of the carrot puree into the terrine and smooth out. Arrange 6 asparagus spears on top, all pointing in the same direction. Arrange all of the zucchini on top in a flat layer. Add another quarter of the puree and smooth out. Add tomato halves, cut side up. Add another quarter of the puree and smooth. Arrange the remaining asparagus spears, all one direction, and top with green beans (beans can be layered widthwise so they cover layer completely. Top with remaining puree and smooth out. Fold the overhanging chard leaves and plastic wrap over top. Refrigerate overnight.
- Fold back plastic wrap from top and unmold onto a plate and peel off plastic wrap.
- To make sauce: Fold the herbs and lemon zest into the creme fraiche and season with salt and pepper.
- Cut the terrine into 1-inch slices and serve with a dollop of the herb sauce on the side.

PRESSED LEEK, ASPARAGUS, AND ZUCCHINI TERRINE WITH MUSTARD-LEMON DRESSING

- Oil the sides and bottom of a 5 × 9-inch loaf pan and set aside together with an unoiled loaf pan the same size.
- Trim the root ends and tops from the leeks (save 10 tender green inner leaves from the tops), leaving about 1 inch of dark green leaves.
- Cut the leeks in half lengthwise and rinse under running water, gently separating the layers to remove dirt. Rinse the reserved inner leaves and set the leeks aside.
- In a 4- to 5-quart pan, bring the tarragon, salt, and stock to a boil over high heat.
- Add all the leeks, reduce the heat, cover, and simmer until tender when pierced, about 15 minutes. Remove the leeks from the pan and drain, reserving the cooking water.
- Add the zucchini and asparagus to the pan and let boil for 4 minutes. Remove and drain.
- Layer the vegetables in the prepared loaf pan, beginning with the leeks, until all the vegetables are in.
- Set the other loaf pan on top of the vegetables and fill with 4 pounds of weight to weigh them down. Canned goods or dried beans work best.
- Refrigerate for at least 8 hours or up to 2 days to firm.
- Prepare the dressing: In a blender, combine the olive oil, lemon juice, mustard, pepper, and salt. Refrigerate until ready to use.
- When ready to serve the vegetables, remove from the refrigerator and pour off any liquid that has accumulated. Remove the weighted pan, and with a very sharp knife, gently cut the loaf crosswise into 10 slices.
- Using two spatulas, lift out the slices to a platter or individual salad plates. (Though more difficult to slice, the terrine is handsome inverted onto a platter. Cut carefully.) Top with the dressing and season with salt.
LEEK, ASPARAGUS, SMOKED SALMON TERRINE

Steps:
- Blanch the asparagus in boiling water for 2-3 minutes until bright green and just tender.
- Remove and plunge into cold water, drain well.
- Finely chop the white section of the leeks to give 1 cup.
- In a large pan, melt the butter, add white leeks and cook for 2 minutes or until soften, cool.
- Slice the green section lengthwise into long ribbon like leaves.
- Blanch in boiling water for 1-2 minutes or until softened, then plunge into cold water, drain well.
- Combine with the Philly, salmon, rind, juice, horseradish, and seasonings in a large bowl until combined.
- Line an 11cm x 21cm loaf pan with plastic wrap.
- Layer the leek ribbons across the pan ensuring they overlap by 1 cm.
- Spoon half the Philly mixture evenly into the pan, top with the asparagus spears, then spoon in the remaining Philly.
- Fold the leek ends over the filling to enclose, trim if necessary.
- Chill until firm.
- Invert onto a serving plate.
- Serve sliced.
