Provided by Barbara Schieving

Categories     Chicken

Time 1h2m

Number Of Ingredients 14

1 1/2 lbs. boneless, skinless chicken thighs
salt and pepper
1 tablespoon oil
1 cup diced onion
3 garlic cloves, minced
2 1/4 cups chicken broth
1 1/2 cups mild salsa verde or green chile sauce
4-ounce can green chiles
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon salt
2 cups brown rice
15-ounce can white beans, rinsed
Toppings: cheddar or pepper jack cheese, chopped avocado, chopped tomato, corn, cilantro, sour cream or yogurt, crushed tortilla

Steps:

  • Season chicken with salt and pepper. Add oil into the pressure cooker pot. Using the brown function, heat the oil until hot. Add chicken and brown 2-3 minutes on each side. Remove chicken from the pot and set on a plate.
  • Select saute on the pressure cooker and add onions (add an extra teaspoon of oil if the pot is dry). Cook until soft, about 4 minutes. Add garlic and stir for 1 minute. Turn off pressure cooker. Pour chicken broth into the pot and scrape any brown bits from the bottom of the pot. Add salsa, green chiles, cumin, coriander, salt, and brown rice; stir to coat the rice. Place chicken on top; do not stir. Secure the lid and turn pressure release knob to a sealed position. Cook at high pressure for 27 minutes.
  • When cooking is complete, use a natural release.
  • Remove chicken to a cutting board and shred into bite-sized pieces. Return the chicken to the pot, add the white beans, and stir.
  • To serve, spoon into a bowl and add desired toppings.

INSTANT POT GREEN CHILI CHICKEN TACOS

Instant Pot Green Chili Chicken Tacos image

Provided by Megan Mitchell

Categories     main-dish

Time 50m

Yield 8 to 10 servings

Number Of Ingredients 16

2 tablespoons avocado oil
4 scallions, thinly sliced
3 cloves garlic, gently smashed
1 jalapeno, minced (leave the seeds in)
1/2 cup chicken stock
Three 4-ounce cans diced mild green chiles
2 limes, zest removed, limes halved
1 tablespoon ground cumin
1 tablespoon dried oregano
1 1/2 teaspoons kosher salt, plus more as needed
1 teaspoon freshly ground black pepper, plus more as needed
2 pounds boneless skinless chicken thighs
Butter lettuce cups, for servings
Sliced avocado, for serving
Cilantro leaves, for garnish
Thinly sliced radish rounds, for garnish

Steps:

  • Set a 6-quart Instant Pot® to high saute (see Cook's Note). When hot, add in the oil, scallions, garlic and jalapeno. Cook, stirring, until softened and fragrant, 2 to 3 minutes. Hit cancel.
  • Add the stock, chiles, lime zest, cumin, oregano, salt and pepper. Mix together. Add in the chicken and stir so everything is coated and covered. Follow the manufacturer's guide for locking the lid and preparing to cook. Set pressure to normal (or "poultry" setting) for 20 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid.
  • Set the pot to high saute and cook 12 to 15 minutes, stirring frequently. As you stir the chicken will begin to break apart and shred. You want most of the liquid to absorb, leaving a thick sauce. Squeeze in the juice of the halved limes. Taste the chili and add more salt or pepper if needed.
  • To serve, fill the lettuce cups with the shredded chicken followed by a few slices of avocado, cilantro leaves and radish rounds.

INSTANT POT GREEN PORK CHILI

Instant Pot Green Pork Chili image

Chili is best simmered low and slow, but sometimes you don't have the time. A pressure cooker helps tenderize pork shoulder, a cut of meat that's usually tough, in minutes rather than hours. A mixture of green chiles, cilantro, garlic and lime brighten up this easy and wonderfully speedy.

Provided by Megan Mitchell

Categories     main-dish

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 16

8 scallions, cut into 2-inch lengths
3 cloves garlic, peeled
1 poblano pepper, stemmed and cut into small chunks
1 jalapeno, stemmed and cut into small chunks
1/2 cup packed cilantro leaves and stems
4 to 5 pounds boneless pork shoulder, cut into 1 1/2-inch cubes
Two 7-ounce cans mild diced green chiles
2 tablespoons ground cumin
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
Two 16-ounce cans pinto beans, rinsed and drained
Juice of 2 limes
Thinly sliced avocado
Crumbled Cotija
Cilantro leaves
Lime wedges

Steps:

  • For the chili: In a small food processor, combine the scallions, garlic, poblano, jalapeno and cilantro. Process until a chunky paste forms, 2 to 3 minutes. Scrape into a 6-quart Instant Pot®, add the pork, canned chiles with their liquid, the cumin, salt and pepper. Stir together.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 35 minutes. After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete.
  • Being careful of any remaining steam, unlock and remove the lid. Set the pot to saute on high and stir in the beans and lime juice. Taste for seasoning and add more salt or pepper, if needed. Simmer, stirring occasionally, until thickened slightly, 10 to 15 minutes. For a thicker chili, simmer until it reaches your desired consistency.
  • Meanwhile, prepare the toppings. When ready to serve, ladle the chili into shallow bowls and garnish with avocado, Cotija, cilantro and lime wedges.

PRESSURE COOKER SALSA VERDE CHICKEN

Pressure Cooker Salsa Verde Chicken image

This warming, satisfying stew takes about 30 minutes from start to finish, thanks to the pressure cooker, which makes quick work of braising chicken and melding flavors. Use your favorite jarred green salsa as a shortcut: The salsa mingles with the chicken juices to make a thick, tangy sauce that tastes like more than the sum of its parts. (Jarred salsas vary in heat levels, so be sure to taste yours first. Make the dish spicier by leaving some of the jalapeño seeds in.) Serve the chicken over rice or whole grains, which soak up the sauce, or use the chicken in tacos, burritos or enchiladas. You can also add one cup of frozen or fresh corn, or a drained 15-ounce can of black or pinto beans to the cooked chicken and simmer until just warmed through. Pass around toppings like crunchy pepitas, tortilla chips, crumbled queso fresco or avocado, to customize at will.

Provided by Sarah DiGregorio

Categories     dinner, weekday, poultry, main course

Time 35m

Yield 4 servings

Number Of Ingredients 13

1 1/2 pounds boneless, skinless chicken thighs
1 1/2 cups jarred salsa verde
1 (4-ounce) can mild chopped green chiles
8 garlic cloves, finely chopped
1 jalapeño, stemmed, seeded and diced
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
3 scallions (green and white parts), thinly sliced
1 small bunch cilantro, leaves and tender stems finely chopped (about 1 heaping cup)
Kosher salt, to taste
Fresh lime juice, to taste
Any combination of cooked rice, tortillas, pepitas, queso fresco, diced avocado and crushed tortilla chips, for serving

Steps:

  • Add the chicken, salsa verde, canned chiles, chopped garlic, jalapeño, garlic powder, onion powder and cumin to a 6- to 8-quart electric pressure cooker; stir to combine. (Don't add salt yet, as many jarred salsas are high in sodium.) Close the lid and turn the pressure knob to sealed. Cook on high pressure for 8 minutes.
  • Turn off the pressure cooker and allow the pressure to release naturally for 10 minutes, then release the remaining pressure manually. Open the lid. If you would like to reduce the sauce, remove the chicken with a slotted spoon to a bowl and turn on the simmer function; let the sauce bubble for about 5 minutes, stirring occasionally, to thicken. Add the chicken back into the pot if you have removed it. Use two forks to coarsely shred the chicken. Stir in the scallions and cilantro. Taste, and season with salt and lime juice.
  • Serve in bowls, alone or with rice, or in tortillas, with desired toppings.

INSTANT POT CHICKEN CHILE VERDE RECIPE

Instant Pot Chicken Chile Verde Recipe image

This Instant Pot Chicken Chile Verde tastes amazing and is so easy to make. Add a few ingredients into the instant pot and dinner is made in minutes. It doesn't get much better than that.

Provided by Steph Loaiza

Categories     Main Course

Time 30m

Number Of Ingredients 12

2 pounds boneless, skinless chicken thighs
4 tomatillos (quartered)
3 poblano peppers (diced)
4 ounces green chili peppers (1 can)
1 medium onion (diced)
3 teaspoons minced garlic
1 Tablespoon cumin
salt (to taste)
Worcestershire sauce (dash)
½ cup cilantro (roughly chopped)
3 limes (for serving)
16 soft taco size tortillas (for serving)

Steps:

  • Place chicken thighs, tomatillos, peppers, onion, garlic, cumin, and salt in an Instant Pot. Saute on high for 5-8 minutes, until chicken is lightly seared. Place lid on Instant Pot, seal, and cook manually on high pressure for 15 minutes. When finished, allow pressure to release naturally.
  • Remove chicken from pot and shred, then set aside.
  • Add cilantro and Worcestershire sauce to the remaining ingredients in the Instant Pot. Using an immersion blender (or transferring everything in the Instant Pot to a high-power blender), blend until sauce is smooth. Pour sauce over shredded chicken (as much or as little as you want).
  • Serve warm topped with cilantro, fresh squeezed lime juice, and tortillas.
