HOMEMADE PRETZEL BUNS WITH BUTTER AND HAM

Steps:
- Add 1 1/2 cups of lukewarm water and the yeast to a large bowl and allow the yeast to sit until foamy, about 5 minutes. Whisk in 1 teaspoon of salt and 1 tablespoon of the melted butter. Add the flour and stir with a wooden spoon to combine. Once the dough is shaggy, but mostly holding together, turn it out onto a lightly floured surface. Dust your hands with flour and knead the dough for about 3 minutes, adding more flour as needed to prevent sticking. Form the dough into a ball and place back inside the mixing bowl. Cover with plastic wrap or a clean kitchen towel and leave in a warm, dry place to rise until the dough has doubled in size, about 1 hour. Punch the dough down once to release some of the air bubbles. Turn the dough out onto a very lightly floured surface and divide the dough into 8 equal pieces with a pizza cutter or a sharp knife. Form each piece into a ball, and place seam side down. Let rise, uncovered, for 10 minutes.
- Meanwhile, line a rimmed baking sheet with parchment paper. Preheat the oven to 400 degrees F. Bring 12 cups of water and the baking soda to a light simmer in a large pot.
- Submerge 2 to 3 dough balls at a time into the simmering water using a slotted spoon. Let them sit in the water for 10 seconds per side. Carefully remove each roll, making sure to drain off as much liquid as possible and place on the prepared baking sheet. Using a sharp knife, make an X on the top of each roll. Brush the remaining melted butter on the rolls and sprinkle with a generous pinch of sea salt. Bake until golden brown, about 25 minutes. Remove from the oven and let rest for 10 to 15 minutes before slicing.
- To assemble the sandwiches: Slice each roll in half. Spread softened butter on each of the cut sides of the roll, using about 1 tablespoon of butter per roll. Delicately fold and layer ham on the bottom half of each roll. Top with brie and place about a 1/4 cup of arugula on top of the ham. Sandwich with the top buns.
SAUSAGE REUBEN
Reubens are my favorite deli sandwich. This is a variation on the theme using a spicy, smoked sausage in place of the pastrami or corned beef. Any quality cooked/smoked beef or pork link sausage will do the trick.

Steps:
- Cut sausage link down the middle and grill or pan fry until crisp along the edges.
- Spread mustard on one side of both slices of bread.
- Heat sauerkraut in sauce pan, then remove and squeeze off excess juices.
- Assemble sandwich by placing one slice of cheese on first slice of bread (mustard side up), place link on next, then pile on warmed sauerkraut, finally top with second slice of cheese and second slice of bread (mustard side down).
- Wrap in aluminum foil and place in preheated oven.
- Bake for 15 minutes at 350 degrees until cheese is melted.
- Remove, slice diagonally and serve with dill pickle and chips.
- If you're going to make several sandwiches for a group, you can either wrap each individually (preferred) or place them in a shallow baking pan and cover the pan with foil.

REUBEN SALAD SANDWICHES
This version is less expensive to make because you are using canned corned beef rather than fresh deli corned beef but it tastes just like a reuben. The reuben is DH's favorite deli style sandwich and he even asked for a second sandwich then made another a few hours later in the night. I recommend serving these with a side of Michelle S.'s #49062 Mom's German Potato Salad and a sour dill pickle spear. This recipe is courtesy of Southern Living's Easy Weeknight Favorites cookbook.

- Preheat oven to 350 degrees.
- Toast 4 of the slices of the rye bread.
- While bread is toasting, combine corned beef, sauerkraut, dressing, pepper and bacon bits, mixing well.
- Spread the mixture on the 4 toasted pieces of rye and top each with a slice of swiss.
- Bake for 10 minutes or until the cheese is melted.
- While these are baking, toast the other 4 slices of bread.
- Remove slices from oven and top with remaining toasted slices.
GERMAN POTATO SALAD WITH SAUSAGE
Hearty and saucy, this potato salad is an old family recipe that was updated using cream of potato soup to ease preparation. - In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon to drain. Saute onion in drippings for 1 minute. Add sausage; cook until lightly browned. Add potatoes; cook 2 minutes longer. Drain., Transfer sausage mixture to a 3-qt. slow cooker. In a small bowl, combine the soup, sauerkraut, water, vinegar, sugar, salt and pepper. Pour over sausage mixture. Sprinkle with bacon. Cover and cook on low until potatoes are tender, 6-7 hours.

GERMAN POTATO SALAD WITH SAUSAGE

Steps:
- Scrub potatoes and cook in water to cover until potatoes are done, about 17 minutes. If tiny new potatoes are not available, use large ones, scrub and cut into eighths. Cook about 10 minutes.
- Cut sausages into tiny pieces.
- Heat nonstick pan and saute until sausages are cooked, about 7 minutes.
- Mix flour with a little of the vinegar to a smooth paste. Stir in remaining vinegar until smooth; stir in sugar, celery seed and water, and set aside.
- Drain potatoes, and cut into bite-size pieces.
- Chop pimento; trim and thinly slice scallions.
- Stir flour mixture into sausages with potatoes, and stir until mixture thickens. Stir in pimento and scallions.
- Season with salt and pepper.
