PRETZEL-LIKE BREADSTICKS
This quick and easy breadstick recipe ends up tasting a lot like pretzels! My kids love the warm dense bread dough and so do I! Goes very well with soup or spaghetti.

Steps:
- Preheat oven to 350 degrees.
- Whisk yeast into water and combine in a large mixing bowl with flour and honey. Kneed at least 10 minutes. The amount of flour you use will vary - make sure your dough is just not sticking to the bowl and remains pliable.
- Cut dough into 32 pieces. Make ropes of your dough about 5" long and brush them with melted butter or olive oil.
- Sprinkle on parmesan cheese and allow to raise approximately 15 - 20 minutes.
- Bake 15 - 20 minutes or until golden brown.

Steps:
- Preheat the oven to 450 degrees F. Line a baking sheet or cookie sheet with parchment.
- Mix the Parmesan and cayenne together until well combined.
- Wrap each breadstick with a slice of prosciutto, then sprinkle with the Parmesan mixture.
- Place the breadsticks on the prepared baking sheet and transfer to the oven. Bake for 5 minutes. Cool slightly and serve immediately.

Steps:
- In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, combine yeast mixture, sugar, salt and 1 cup flour; beat well. Beat in the remaining flour, 1/2 cup at a time, until a stiff dough is formed. Place dough in a lightly oiled bowl, cover, and let rise until doubled in volume.
- Preheat oven to 450 degrees F (230 degrees C). Lightly grease a cookie sheet.
- Turn dough out onto a lightly floured surface and divide into 12 pieces. Roll pieces out into long sticks and form into pretzel shape. Place pretzels on prepared baking sheet. Brush with beaten egg and sprinkle with kosher salt.
- Bake in preheated oven for 12 to 15 minutes, until golden brown.

MALL PRETZELS
Big chewy pretzels like those sold in the mall! You may substitute garlic salt or cinnamon sugar for the coarse salt if you wish.

Steps:
- In a large mixing bowl, dissolve the yeast, brown sugar and salt in 1 1/2 cups warm water. Stir in flour, and knead dough on a floured surface until smooth and elastic, about 8 minutes. Place in a greased bowl, and turn to coat the surface. Cover, and let rise for one hour.
- Combine 2 cups warm water and baking soda in an 8 inch square pan. Line 6 baking sheets with parchment paper.
- After dough has risen, cut into 12 pieces. Roll each piece into a 3 foot rope, pencil thin or thinner. Twist into a pretzel shape, and dip into the baking soda solution. Place onto parchment covered baking sheets, and let rise 15 to 20 minutes.
- Preheat an oven to 450 degrees F (230 degrees C).
- Bake in the preheated oven for 8 to 10 minutes, or until golden brown. Brush with melted butter, and sprinkle with coarse salt, garlic salt or cinnamon sugar.

Steps:
- Mix self-rising flour and Greek yogurt together in a bowl until well combined. Turn out dough onto a floured surface and knead dough comes together.
- Roll dough into 3/4-inch thick ropes. Cut each rope into three 5-inch pieces and roll each piece into a small ball.
- Preheat an air fryer to 390 degrees F (200 degrees C) for 5 minutes.
- Meanwhile, bring water in a large pot to a boil over medium-high heat. Add baking soda to the boiling water. Carefully drop dough balls into the water and cook until they float to the top.
- Using a slotted spoon remove dough balls once they float to the top and transfer to the air fryer basket in one line. You might need to cook them in batches.
- Cook until pretzel bites are lightly browned, 8 to 10 minutes. Spray pretzel bites with nonstick cooking spray and sprinkle kosher salt on top. Serve and enjoy.

- On an unfloured surface, roll each breadstick into a 20 inch rope, and twist into a pretzel shape, or cut in half for a breadstick.
- Place 2 inches apart on ungreased baking sheets, and brush with egg white, and sprinkle with salt.
- Bake at 375 degrees for 10-13 minutes or until lightly browned, remove to a wire rack.
- For swiss cheese dip, melt butter for 1 minute.

SOFT PRETZEL KNOTS

- In the bowl of a stand mixer, stir together the yeast and warm water. Allow to rest until bubbles begin to form. Add the flour, sugar, and salt. Beat with the hook attachment on low until soft dough begins to form. Turn up the speed to medium and knead the dough for five minutes. Cover the bowl and place in a warm area to rise for one hour. When the dough has doubled in size, preheat the oven to 400 degrees. Turn the dough out on a floured surface and form into a long log shape. Cut even strips from the dough. Cut each strip in half and roll out into a thin strip. Twist the strip into a knot and set aside. When all the knots are formed, bring the four cups of water to a boil. Add the baking soda and stir until dissolved. Remove from heat. Dip each pretzel knot into the baking soda water, then transfer it to a paper towel lined plate. Move all the dipped pretzels to a baking sheet lined with parchment paper and spread melted butter over each knot. Top all the pretzels with coarse salt. Bake in the preheated oven for 15 to 20 minutes, until the pretzels are golden brown.
