PRICKLY PEAR MARGARITA
Steps:
- Combine the tequila, Cointreau, lime juice and pear syrup in a cocktail shaker. Shake vigorously to incorporate. Wet the rim of a margarita glass and dip into salt and sugar mixture. Pour margarita into glass over ice. Garnish with a kumquat and a curled piece of lime peel.

Steps:
- Pour salt into a small plate. Wet the rim of a margarita glass and dip rim into salt.
- Fill a cocktail shaker with ice; pour tequila, sweet and sour mix, triple sec, lime juice, and pear syrup over ice. Cover shaker and shake drink; strain into prepared margarita glass.

PRICKLY PEAR SYRUP
I got this from The Prickly Pear Cookbook by Carolyn Niethammer. I can't wait to try it with this year's crop of prickly pears!

Steps:
- Put prickly pears in a bowl or dishpan full of water. Holding each one with tongs, scrub with a vegetable brush to remove dust and some of the stickers (the rest will come out later when you strain the juice).
- Transfer 5 at a time to a blender jar and process until liquid. Line a mesh strainer with cheesecloth and strain juice into a medium saucepan. You should have about 1 cup.
- Add lemon juice and sugar, and slowly bring to a simmer. Cook until syrup begins to thicken. If you want a thicker syrup, stir in 1 teaspoon of cornstarch dissolved in a little cold water and cook to thicken.
- Stir with wire whisk if necessary to smooth consistency.
- For diabetics: Use an amount of your favorite non-nutritive sweetener equivalent to 1 1/2 cups of sugar. Since sugar causes thickening, you'll have to compensate by using a little more cornstarch, or use another thickener such as guar gum or xanthan gum.

- If you are picking fresh prickly pears from a nopal cactus, be sure to use thick rubber gloves or tongs to avoid pricking yourself with the glochids.
- Before handling the prickly pears, brush them under cool running water to remove as many of the glochids as possible from the skin. (Store-bought prickly pears may already have most of their glochids removed).
- To peel the prickly pears you still may want to wears gloves or use tongs in case of any remaining glochids. Cut off both ends of the prickly pears. Make a skin-deep incision along the length of the fruit. Now you can easily pull the skin away from the inner flesh.

- Put the fruits in a pot and add enough water to almost cover them. Cover and bring to a boil. Turn off the heat and let steep for 30 minutes.
- Strain the pulpy juice through a fine-meshed strainer, then again through the same strainer that has either cheesecloth or a plain paper towel set inside. You need to do this to be sure of removing every last glochid.
- Measure the strained juice, and pour it into a pot. Add an equal amount (by volume) of sugar and bring to a simmer over medium heat. Let it simmer for 5 minutes. Turn off the heat and let it cool for 15 minutes. Add the lemon juice or citric acid. Add a little at a time and taste it. Stop adding when it is tart enough for you.
