HOLIDAY STANDING RIB ROAST

Steps:
- Remove roast from the refrigerator 30 minutes before you want to start cooking.
- Preheat the oven to 200 degrees F (95 degrees C).
- Mix pepper, salt, brown sugar, oregano, and paprika together in a small bowl until well combined. Rub seasoning mix all over the roast to completely cover it. Transfer to a roasting pan.
- Roast in the preheated oven for 3 hours (45 minutes per pound), until the internal temperature reads exactly 125 degrees F (52 degrees C). Remove from the oven and cover with aluminum foil. Let rest for 15 minutes.
- Increase the oven temperature to 550 degrees F (288 degrees C).
- Remove foil and put the roast back in the oven until the crust gets crispy, 6 to 8 minutes. Cut and serve immediately.

There is nothing better for the Holiday Dinner, Then the Perfect Prime Rib Roast. 1st time I tried this recipe I amazed myself. It was so good. NOTE: COOKING TIME Below is for Med. Rare. Be sure you use a CHOICE PRIME RIB/ Sirloin Tip Roast, they make the Best Prime Ribs. Ask Your Butcher for this Perfect Cut of meat. REMEMBER: Never open the Door during the cooking period at all. This is the secret. I got this from a friend that got it from her Elks Club. TIP: Do not use a roast smaller than 5lbs.. . .

- Follow the 4 Steps above. NOTE: DO NOT COVER THIS PRIME RIB DURING COOKING AT ALL.
- Place a rack in your baking or roasting pan (13X9 pan I use)Place your Prime Rib Roast on this Rack. DO NOT COVER! DO NOT PEEK! DO NOT OPEN OVEN DOOR AT ALL!
- COOK in the oven 1 HR @ 425 degrees. At the end of this 1 Hr. , Turn off your oven, let the Prime rib remain in the oven with the door closed at ALL TIMES for the Next 2 to 2 1/2 Hrs. REMEMBER; DO NOT OPEN THIS DOOR, AND DO NOT PEEK FOR ANY REASON, BY OPENING THIS DOOR.
- Next Step, Turn Oven back on, Heat Oven to 300 degrees. REMINDER: DO NOT OPEN OVEN DOOR AT ALL. (Heat Prime For about 30 min. only for Med RARE) This roast will be a perfect Medium, to Med. Rare. Your roast will be so tender cooked following these directions. ALLOW PRIME RIB to Rest 10-15 Minutes @ room temp before slicing. ENJOY for New Years or your Wonderful Holiday Dinner.
- NOTE: For Less RARE, "More Meduim Roast", increase your reheating time by another 30 minutes, same for "Well done", But tenderness is not guaranteed for well done Prime Rib Roast.
