PRIZE WINNING ALMOND BUNDT CAKE

Prize Winning Almond Bundt Cake image

I entered this bundt cake of mine this past weekend into a baking contest at our local gourmet food store. It took home 2nd place--plus the bakery is going to start making it along side of their other "gourmet" cakes!! I am so excited--thought I would share it with everyone!

THE BEST BANANA BUNDT CAKE (DORIE GREENSPAN)

The Best Banana Bundt Cake (Dorie Greenspan) image

This is an incredibly moist and delicious banana bundt cake/banana bread; the best one I've ever tasted. It also makes great muffins. It is so good, I don't feel it needs the optional glaze but I've included the instructions below if you want to make it. You can also simply dust with powdered sugar. The recipe is from Dorie Greenspan's fabulous cookbook, "Baking: From My Home to Yours". You can reduce the amount of butter by up to a 1/2.

Provided by blucoat

Categories     Quick Breads

Time 1h24m

Yield 16 serving(s)

Number Of Ingredients 9

3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
8 ounces unsalted butter, at room temperature (1 cup or 2 sticks)
2 cups sugar
2 teaspoons pure vanilla extract
2 large eggs, preferably at room temperature
about 4 very ripe banana, mashed (1 1/2 - 1 3/4 cups)
1 cup plain yogurt (or a combination of the two) or 1 cup sour cream (or a combination of the two)

Steps:

  • Center a rack in the oven and preheat to 350°F Generously butter a 9- to 10-inch (12 cup) Bundt pan. (If you use a silicone pan there's no need to butter it.) Don't place the pan on a baking sheet - you want the oven's heat to circulate through the Bundt's inner tube.
  • Whisk the flour, baking soda and salt together.
  • Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter until creamy. Add the sugar and beat at medium speed until pale and fluffy. Beat in the vanilla, then add the eggs one at a time, beating for about 1 minute after each egg goes inches Reduce the mixer speed to low and mix in the bananas. Finally, mix in half the dry ingredients (don't be disturbed when the batter curdles), all the sour cream and then the rest of the flour mixture. Scrape the batter into the pan, rap the pan on the counter to debubble the batter and smooth the top.
  • Bake for 65-75 minutes, or until a thin knife inserted deep into the center of the cake comes out clean. Check the cake after about 30 minutes - if it is browning too quickly, cover it loosely with a foil tent. Transfer the cake to a rack and cool for 10 minutes before unmolding onto the rack to cool to room temperature. If you have time, wrap the cooled cake in plastic and allow it to sit overnight before serving - it's even better the next day.
  • OPTIONAL LEMONY WHITE ICING: Sift 3/4 cup confectioners' sugar into a bowl and squeeze in enough fresh lemon juice (start with 2 teaspoons and add more by drops) to make an icing thin enough to drizzle down the Bundt's curves.
  • MUFFIN OPTION: Halve the recipe. You can add nuts or chocolate chips. Bake 28-32 minutes. Yields 12 muffins.

LEMON POUND CAKE

Lemon Pound Cake image

This lemon pound cake is the ultimate dessert for lemon lovers.

Provided by Jennifer Segal

Categories     Desserts

Time 1h25m

Yield Two {8½ x 4½-inch|21x11-cm} loaves, about 16 servings

Number Of Ingredients 14

3 cups all-purpose flour, spooned into measuring cup and leveled-off with a knife
½ teaspoon baking soda
½ teaspoon salt
1 cup buttermilk (low fat is fine) (see note)
2 tablespoons (packed) grated lemon zest (see note)
2 tablespoons fresh lemon juice
2 sticks (1 cup) unsalted butter, softened
2¼ cups granulated sugar
3 large eggs
2 tablespoons water
2 tablespoons granulated sugar
2 teaspoons fresh lemon juice
1 cup confectioners' sugar
2 tablespoons fresh lemon juice

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Spray two 8½ x 4½-inch loaf pans with nonstick cooking spray. Line the long sides of the pans with parchment paper "slings" and spray lightly with nonstick cooking spray again.
  • In a medium bowl, whisk together the flour, baking soda and salt. Set aside.
  • In another bowl, whisk together the buttermilk, lemon zest and lemon juice. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment (or beaters), cream the butter and sugar on medium speed until light and fluffy, 3 to 4 minutes. Scrape down the sides of the bowl, then beat in the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl again.
  • With the mixer on low speed, beat in one-quarter of the flour mixture, then one-third of the buttermilk mixture. Beat in another quarter of the flour, then another third of the buttermilk mixture. Repeat with another quarter of the flour and the remaining buttermilk mixture. Finally, beat in the remaining flour mixture. Scrape down the sides of the bowl, and give a quick mix to make sure all of the ingredients are well-incorporated.
  • Divide the thick batter into the prepared pans and smooth with a rubber spatula. Bake for 55 to 65 minutes, or until the top is golden and a tester comes out clean.
  • Set the cakes on a cooling rack, and cool in the pans for 10 minutes. Carefully run a knife along the unlined sides of the pans to loosen the cake from the pan. Using the parchment slings, lift the cakes out of the pans and place onto the rack, leaving the parchment paper in place under the cakes. Let cool for about 1 hour.
  • When the cakes are almost cool, make the syrup. Combine the water and sugar in a saucepan and bring to a boil. Remove from the heat and stir in the lemon juice.
  • When the cakes are cool, carefully transfer them to serving platters.
  • Gradually brush the warm syrup all over the cakes, including the sides, letting it soak in as you go.
  • To make the glaze: in a medium bowl, whisk together the confectioners' sugar and lemon juice. Add more confectioners' sugar or lemon juice as necessary to make a thick but pourable glaze (it should be a little thicker than you'd think, about the consistency of molasses or honey). Spoon the glaze over the top of the cake, letting it drip down the sides. Let the cakes sit for about one hour to allow the glaze to set before serving.
  • Note: If you'd like to make your own buttermilk, check out the easy method here.
  • Note: You'll need 4 to 5 large lemons for the entire recipe.
  • Make-Ahead/Freezer-Friendly Instructions: The cakes can be made up to 1 day ahead of time and stored in a cake dome or airtight container at room temperature. They can also be frozen (without the final glaze) for up to 3 months. After they are completely cooled, double-wrap securely with aluminum foil or plastic freezer wrap, or place them in a heavy-duty freezer bag. Thaw overnight on the countertop before serving. (Add the syrup before the cake is frozen and add the glaze after the cake is thawed.)

29 AWARD WINNING CAKE RECIPES TO WIN THE BLUE RIBBON AT ...

From morningchores.com
Estimated Reading Time 8 mins
  • Lemon Cake. My mind has been on a lemon cake for a while now. The idea of a light and airy cake, giving you both sweet and natural flavors sounds delicious.
  • Shirley Temple Cake. Still having the natural flavors on my mind, I think this recipe looks delicious. I like the cherries and the fact that there is no actual icing, instead, they have a sugarcoating overtop the cake.
  • Triple Chocolate Poke Cake. Venturing away from the natural and on to the sweet, decadent flavor of chocolate. I think this cake sounds delicious and I like the idea of the moistness you know it’s going to have since it is a poke cake.
  • Healthy Vanilla Maple Greek Yogurt Cake. Going back to something quite a bit lighter, I think this would win simply because it is flavorful but still light.
  • Texas Sheet Cake. Texas sheet cake cookies were one of the winners this year at our fair. I understand why, as Texas sheet cake is very delicious and it has the name of Texas in it.
  • Strawberry Lemon Cheesecake. A lemon cheesecake might be a winner in the first place; However, adding a strawberry crust to it will surely put it over-the-top and make it the blue ribbon prize winner.
  • The Best New York Crumb Cake. The first time I ever had crumb cake I felt like I had died and gone to heaven. Found in the gas station across the street from my house, I stopped there on a regular basis to pick this up before I learned how to make it.
  • Vintage Cake. What I love about this cake is that you think you’re getting a delicious vanilla cake and then towards the end, you realize there’s a hint of decadent chocolate waiting for you at the bottom.
  • Hazelnut Latte Cake. This one comes from the heart as I absolutely love anything coffee and who doesn’t love a Nutella type flavor with the hazelnut? Combining the two sure sounds like a winner to me.
  • Tres Leche Cakes. I had a student who wanted to make this for the fair this year. Unfortunately, she did not get her paperwork done in time but I do feel like this would win as it is very moist and tender and still brings a reminder of our heritage to the Texans who are passionate about that.
