4 ounces Italian bread, cut in 3/4-inch cubes (about 4 cups)
3 tablespoons olive oil
Coarse salt and ground pepper
4 chicken cutlets (each 2 to 3 ounces and 1/2 inch thick)
1 package romaine lettuce hearts (18 to 20 ounces)
1/4 cup freshly squeezed lemon juice (from 2 lemons)
1/4 cup reduced-fat mayonnaise
1/4 cup grated Parmesan
2 anchovy fillets, roughly chopped (optional)
1 small garlic clove

Steps:

  • Make croutons: Preheat oven to 375 degrees. Place bread on a rimmed baking sheet. Drizzle with 2 tablespoons of the oil, and season with salt and pepper; toss to coat. Bake, tossing occasionally, until golden, 12 to 15 minutes; remove from oven; and let cool.
  • Make chicken: Heat remaining tablespoon oil in a large skillet over high. Season chicken with salt and pepper. Cook until opaque throughout, 1 to 2 minutes per side; remove from skillet and let cool.
  • Prepare lettuce: Cut romaine crosswise into 1-inch ribbons; wash and dry.
  • Make dressing: In a blender, combine lemon juice, mayonnaise, Parmesan, anchovy fillets (if using), and garlic; blend until smooth. If preparing this recipe in advance, see storage instructions (below).
  • If stored in refrigerator, bring chicken and dressing to room temperature. Slice chicken crosswise into strips; toss with croutons, lettuce, and dressing.

2 to 4 anchovy fillets, chopped
Juice of 1 lemon

1 pound skin-on, boneless chicken breasts
4 (1/2-inch-thick) slices focaccia or whole-wheat Italian bread
4 romaine lettuce hearts, halved lengthwise
3/4 cup freshly grated parmesan cheese, plus more for garnish

Steps:

  • Preheat a grill or grill pan to medium high. Make the dressing: Chop 2 garlic cloves and puree with 1/2 cup olive oil, the anchovies and lemon juice in a blender until smooth; season with salt and pepper. Pound the chicken with a mallet or heavy skillet until about 1/8 inch thick. Season with salt and pepper and toss with 1 tablespoon of the Caesar dressing. 1/2 teaspoon grated lemon zest, plus 2 tablespoons lemon juice
2 small cloves garlic, grated

2 teaspoons dijon mustard
1/2 cup grated parmesan cheese
2 tablespoons chopped fresh chives, plus more for topping
1/4 cup extra-virgin olive oil
3 cups torn crusty bread (about 4 ounces)
4 skinless, boneless chicken breasts (about 6 ounces each)
2 romaine lettuce hearts, quartered lengthwise

Steps:

  • Preheat the oven to 450 degrees F. Line half of a rimmed baking sheet with foil, folding up the edges to make a tray. Whisk the anchovies, lemon zest and juice, 1 grated garlic clove, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl; let sit for a few minutes. Broil until the lettuce is charred in spots and the chicken is cooked through, 2 to 4 minutes. Let the chicken rest 8 to 10 minutes, then slice.

1 head of romaine lettuce
1 large boneless, skinless chicken breast, poached and shredded about 2 cups shredded chicken
1 cup garlic croutons (see below)
1/3 cup freshly grated Parmesan or shaved Parmesan
Chopped fresh herbs, such as parsley, chives, marjoram
1 small garlic clove
Salt
freshly ground pepper
1 anchovy, soaked for five minutes in cold water, then rinsed and drained on a paper towel
1 tablespoon fresh lemon juice
1 tablespoon wine or sherry vinegar
1 teaspoon Dijon mustard
1 coddled egg yolk (optional; see below)
6 tablespoons extra-virgin olive oil

Steps:

  • Remove the tough outer leaves of romaine and discard. Wash and dry the remaining leaves. Tear into medium pieces, and place in a salad bowl with the chicken, croutons and 1/4 cup of the Parmesan.
  • Place the garlic in a mortar and pestle with a little salt, and mash to a paste. Add the anchovy, and mash together with the garlic. Stir in the lemon juice. Add the vinegar, mustard, coddled egg yolk, salt and pepper. Whisk in the olive oil. Shortly before serving, toss with the salad. Sprinkle on the herbs and remaining Parmesan, and serve.

1 1/2-2 lbs romaine lettuce
1 bunch green onion, diced (optional)

1 medium ciabatta loaf (or 4 thick slices crusty white bread)
3 tbsp olive oil
2 skinless, boneless chicken breasts
1 large cos or romaine lettuce, leaves separated
1 garlic clove
2 anchovies from a tin
medium block parmesan or Grano Padano cheese for grating and shaving (you won't use it all)
5 tbsp mayonnaise
1 tbsp white wine vinegar

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Tear 1 medium ciabatta into big, ragged croutons or, if you prefer, cut with a bread knife. Spread over a large baking sheet or tray and sprinkle over 2 tbsp olive oil.
  • Rub the oil into the bread and season with a little salt if you like (sea salt crystals are best for this). Bake for 8-10 mins, turning the croutons a few times during cooking so they brown evenly.
  • Rub 2 skinless, boneless chicken breasts with 1 tbsp olive oil, season. Place pan over a medium heat for 1 min, until hot, but not smoking. Lay the chicken on the pan (it will sizzle if it's hot enough) and leave for 4 mins.
  • Turn the chicken, then cook for 4 mins more. Check if it's cooked by poking the tip of a sharp knife into the thickest part; there should be no sign of pink and juices will run clear.
  • Bash 1 garlic clove with the flat of a knife and peel off the skin. Crush with a garlic crusher. Mash 2 anchovies with a fork against the side of a small bowl.
  • Grate a handful of parmesan cheese and mix with the garlic, anchovies, 5 tbsp mayonnaise and 1 tbsp white wine vinegar. Season to taste. It should be the consistency of yogurt - if yours is thicker, stir in a few tsps water to thin it.
  • Shave the cheese with a peeler. Tear 1 large cos or romaine lettuce into large pieces and put in a large bowl. Pull chicken into bite-size strips and scatter half over the leaves, along with half the croutons.
  • Add most of the dressing and toss with your fingers. Scatter the rest of the chicken and croutons, then drizzle with the remaining dressing. Sprinkle the parmesan on top and serve straight away.

I love Caesar salad but, of course, my sister has to ruin it by adding chicken to cover up the taste of the lettuce. I mean really, how can you not like lettuce? This dressing is also really good on pasta salad, and at least Jill doesn't feel the need to add meat to that.

4 slices bread
1/3 cup melted butter
1/2 teaspoon garlic powder
2 tablespoons grated Parmesan
2 small cloves garlic
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
1 1/2 teaspoons fresh lemon juice
1 1/2 teaspoons red wine vinegar
1/4 cup olive oil
Salt and pepper
1 head romaine leaves, washed and dried
1/2 cup shredded Parmesan
2 chicken breasts
Freshly ground black pepper

Steps:

  • To prepare the croutons: Preheat the oven to 350°F.
  • Cut the bread into 1/2-inch cubes and place them on a baking sheet. Combine the butter and garlic powder in a small bowl and pour over the bread cubes. Sprinkle with the Parmesan and toss the bread cubes until they are evenly coated. Bake them for 10 minutes, or until they are golden brown.
  • To prepare the dressing: Smash the garlic cloves by placing them on a cutting board, laying the blade of a large knife flat on top of the garlic, and pressing the knife with the heel of your hand. Remove the papery skin and finely chop the garlic.
  • Place the garlic in a bowl with the Dijon mustard, Worcestershire sauce, hot sauce, lemon juice, and red wine vinegar. Slowly whisk in the olive oil until completely incorporated. Season to taste with salt and pepper.
  • To prepare the salad: Preheat the grill or broiler to high heat.
  • Tear the romaine into bite-size pieces, place in a large serving bowl, and add the shredded Parmesan and croutons.
  • Grill or broil the chicken for 4 to 5 minutes on each side, or until it is thoroughly cooked. Remove the chicken from the grill and let it rest for 5 minutes.
  • Pour the dressing over the salad and toss until the lettuce is completely coated. Place some of the salad on each plate. Cut the chicken breasts into 1/4-inch-thick slices and arrange the slices over the salad. Grind pepper over each salad.
  • The difference between grilling and broiling is that grilling heats from underneath and broiling heats from above. We prefer grilling over broiling because it adds flavor, but we have a gas grill that starts by turning a knob and pressing a button. If we had to actually light coals and wait for them to heat, we would be broiling.

Steps:

  • Make the classic caesar dressing: On a cutting board, chop the garlic and anchovies together to combine. Sprinkle with the salt. Use the side of a knife to chop and mash the mixture into a smooth, homogeneous paste. Transfer the paste to a medium bowl.
  • Add the egg yolks and mustard to the bowl with the garlic anchovy paste. Whisk until the egg yolks lighten in color and become airy, about 2 minutes. While whisking continuously, drizzle in the vegetable and olive oils until the dressing is thick and emulsified. Whisk in the lemon juice; the dressing should loosen a bit but will still be thick enough to liberally coat the back of a spoon and should fall in ribbons when drizzled.   • Assemble the salad: On a serving platter or in a large bowl, arrange half of the little gem leaves and season with a pinch of salt.   • Heat the oven to 200°C/180°C fan/gas 6. Heat a frying pan over a high heat, add a drizzle of oil and, when really hot, season the chicken breasts and put them in the pan, skin-side down. Fry for 3-4 minutes until golden underneath, then flip them over and fry for a minute. Remove and set aside.
  • Toss the bread with another drizzle of olive oil in a large roasting tin, then spread out in a single layer. Sit the chicken breasts among the bread pieces, season, then lay the bacon slices over the bread. Transfer to the oven and roast for 20 minutes or until the chicken breasts are cooked through. Remove the chicken breasts, toss the croutons and bacon slices around a little, then cook for 10-15 minutes more until the croutons are deep golden and the bacon is crisp. Remove and set aside to cool slightly.
  • Meanwhile, make the dressing. Put the anchovies, garlic, egg yolks, lemon and mustard in a pestle and mortar or small food processor. Pound or whizz to a coarse, thick paste. If it starts to look greasy at any point, add a splash of water. Once you’ve added all the oil, stir through the grated parmesan, taste and season – it may need a bit more lemon juice.
