PUFF PASTRY PIZZA

- For the crust: Slice the 2 pastry sheets in half down the middle. Place the halves on 2 baking sheets lined with parchment or baking mats.
- Preheat the oven to 415 degrees F, then start on the pizza toppings.
- For the toppings: In a large skillet over medium-high heat, melt the butter and saute the mushrooms and garlic for 2 minutes. Pour in the wine and season with salt and pepper. Continue cooking until the mushrooms are cooked down and the liquid is mostly gone, 5 to 7 minutes. Remove from the heat and set aside.
- To build the pizzas: brush a thin layer of olive oil in the center of each puff pastry half, leaving a 1/2-inch border. On each piece of pastry, sprinkle on 1/4 cup of the mozzarella, again so that it covers all but a 1/2-inch border around the pastry. Sprinkle the cooked mushrooms on one piece of pastry. On the second, sprinkle on the halved tomatoes and black olives. On the third, lay the pepperoni slices and sliced pepperoncini. Press the toppings lightly into the cheese. Leave the fourth piece of pastry plain (just cheese).
- Bake for 15 minutes; the pastry could go crazy and puff up in areas here and there, but don't worry! It'll be fine.
- Remove from the oven and sprinkle the goat cheese crumbles and half the basil over the mushroom pizza. Sprinkle the remaining basil over the tomato pizza. Top the pepperoni pizza with the fresh oregano. Top the plain pizza with the prosciutto, arugula and Parmesan shards
- Slice each into smaller pieces and serve!
PIZZA SCROLLS
A great afternoon snack! If you don't have a favoured pizza sauce use tomato paste and add some dried Italian herbs. Can be served hot or cold...great for the lunch box.

- Preheat oven to 200c.
- Combine the chopped capsicum, ham and cheese in bowl.
- Spread the sauce onto each sheet of pastry, leaving a 2cm border along one side, and sprinkle the capsicum mixture over the top.
- Roll up the pastry to enclose the filling (like a swiss roll), leaving the plain edge until last.
- Brush the edge lightly with water and fold to seal.
- Cut each roll into 1cm rounds (use serrated bread knife) and place on lined oven trays.
- Bake for 20 min or until golden.

- Preheat oven to 200°C. Cover baking tray with baking paper OR grease with a little oil.
- Spread each puff pastry sheet with 2 Tbsp. each of pizza sauce, leaving a 2cm border on one side. Sprinkle the half the ham over the top of each sheet along with any other toppings.
- Top with the cheese, dividing between both pastry sheets.
- Roll up the pastry leaving the plain edge until last. Brush the edge with a little water and fold to seal.
- Cut each roll into 8 or cut into 1cm rounds and place on the prepared tray, cut side up.
- Bake for 20 minutes or until golden.

- Prepare an oven tray by lining it with baking paper. Also, preheat an oven to 200°C (400°F).
- Spread the tomato paste using the back of a spoon onto a piece of puff pastry. Leave a 1cm (0.4 in) gap along one edge.
- Next, scatter the baby spinach and ham on top of the tomato paste. Finally, sprinkle the shredded cheese on top.
- Using a pastry brush, spread a little bit of the beaten egg on the gap.
- Begin rolling from the end without the gap and roll towards the gap. Try to roll it reasonably tight without making the toppings squeeze out of the sides.
- Once rolled, cut into about six to eight even pieces.
- Place each slice cut side down onto the prepared tray.
- Bake in the preheated oven for 30 minutes or until golden brown.
- Serve & Enjoy.

- Preheat the oven to 180C / 350F and line a baking tray with a silicone mat or baking paper.
- Place Greek yoghurt in a mixing bowl and give it a stir. Add in 1 cup of flour and stir to combine. Gradually add in more flour until the dough starts to form into a ball.
- Tip the dough onto a well-floured surface and knead with your hands for a minute or two. If the dough is still too sticky, add some more flour and continue to knead. The dough is ready when it is able to hold it's shape and is not sticking to your hands or the surface.
- Roll the dough into a rectangle shape, spread tomato paste on top then sprinkle over the rest of the ingredients.
- Roll the dough up tight, then cut into 8 equal pieces. Spread the pieces out onto a baking tray, keeping a bit of space between each one to allow some room for rising. Sprinkle a little cheese on top of each scroll, then place in the oven for 12-15 minutes or until the cheese is melted and the dough is golden and cooked through.
- Place scrolls on a wire rack to cool.

PUFF PASTRY PIZZAS

- Heat the oven to 200C/180C fan/gas 6. Unroll the pastry, cut into six squares and arrange over two baking trays lined with baking parchment. Use a cutlery knife to score a 1cm border around the edge of each pastry square. Bake for 15 mins, until puffed up but not cooked through.
- While the pastry cooks, make the sauce and prepare your toppings. Mix the tomato purée, tomato ketchup, oregano and 1 tbsp water. Grate the cheese and chop any veg or herbs you want to put on top into small pieces. Set aside.
- Remove the pastry from the oven and squash down the middles with the back of a spoon. Divide the sauce between the pastry squares and spread it out to the puffed-up edges. Sprinkle with the cheese, then add your toppings. Bake for another 5-8 mins and serve.

- Preheat your oven to 210 degrees celsius (fan-forced) and line an oven tray with baking paper.
- Sift flour and salt together in a large bowl and rub in the butter until the mixture is the consistency of bread crumbs.

- Before we get started, preheat an oven to 220°C (425°F).
- Spread the Nutella across the puff pastry, leave roughly a 1 cm (0.4 inch) gap at one end of the pastry.
- Sprinkle the hazelnuts across the Nutella.
- Now using a pastry brush, brush some egg across the gap that we left on the pastry.
- Roll the pastry up, starting from the end opposite to the egg. Try and get it as tight as possible without forcing the filling out of the sides.
- Now slice the roll into about ten pieces.
