½ cup canned pumpkin
½ cup vanilla ice cream
½ cup milk
2 tablespoons white sugar
1 ½ teaspoons vanilla extract
1 ½ teaspoons ground cinnamon
¾ teaspoon ground cloves
¾ teaspoon ground nutmeg
½ cup ice
2 graham crackers, crushed
2 tablespoons whipped cream

Steps:

  • Combine pumpkin, ice cream, milk, sugar, vanilla extract, cinnamon, cloves, and nutmeg in a blender; blend until smooth. Add ice; blend until smooth.
  • Place 1/3 of the graham cracker crumbs in the bottom of 2 small glasses. Fill glasses halfway with blended pumpkin mixture. Top with another 1/3 of the graham cracker crumbs. Pour in remaining pumpkin mixture. Top each glass with 1 tablespoon whipped cream and remaining graham cracker crumbs.

3 cups canned pumpkin
3/4 teaspoon pumpkin pie spice
2 cartons (1-1/2 quarts each) vanilla ice cream, softened if necessary
COOKIES:
1/2 cup butter, softened
1/2 cup shortening
1-1/2 cups sugar
3 large egg yolks
3 tablespoons pumpkin or apple butter
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/8 teaspoon salt

Steps:

  • In a large bowl, mix pumpkin and pie spice until blended; stir in ice cream. Freeze, covered, until firm enough to scoop., In a large bowl, cream butter, shortening and sugar until light and fluffy. Beat in egg yolks, pumpkin butter and vanilla. In another bowl, whisk flour, cream of tartar, baking soda, pie spice and salt; gradually beat into creamed mixture (dough will be soft). Refrigerate, covered, 30 minutes or until firm enough to shape., Preheat oven to 325°. Shape dough into 24 (1-in.) balls; place 4 in. apart on ungreased baking sheets. Flatten to 1/4-in. thickness with bottom of a glass dipped in sugar., Bake 6-8 minutes or until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., To assemble, spread a scoop of ice cream on bottom of a cookie. Top with a second cookie, pressing gently to attach. Place on a baking sheet; freeze until firm., Repeat with remaining ingredients. Wrap individually for longer storage.

1 tablespoon pumpkin spice
1/2 lemon, juiced
1 dash vanilla extract, plus 2 dashes
1 1/2 cups crushed ice
1 naval orange
1 cup low-fat whipping cream, plus garnish
5 teaspoons powdered sugar
Cinnamon sticks, for garnish

Steps:

  • In a blender, combine pumpkin, soy milk, yogurt, pumpkin spice, juice of half a lemon, and 1 dash of vanilla extract. Blend together until smooth, and begin adding the ice while continuing to blend. When mixture is thick and creamy, stop and hold in refrigerator at least 30 minutes. Cut off the top 1/3 of the orange. Remove the inside of the orange and reserve the rind. In a medium mixing bowl, combine cream, powdered sugar, and the remaining vanilla extract; then whip on high until a stiff peak forms. Transfer the smoothie into the orange rind, and garnish with whipped cream and cinnamon sticks.
