1 tablespoon unsalted butter
1/2 cup whole milk
1 1/4 cups heavy cream
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon, plus additional for dusting
4 large egg yolks
1 large egg
1/4 cup sugar

Steps:

  • Preheat oven to 300 degrees. Fill a kettle with water and bring to a boil over high heat. Butter 6 1/2 -cup heatproof custard or pudding cups.
  • In a small saucepan, combine the milk, cream, nutmeg and cinnamon. Set over low heat until steaming, then remove from heat and set aside.
  • In a medium bowl, whisk together the egg yolks, egg and sugar. Continue to whisk while slowly adding the warm milk mixture. When the mixture is smooth, pour into the custard cups. Cover each cup with aluminum foil.
  • Arrange the cups in a deep baking dish large enough to hold them snugly. Carefully add boiling water to come almost all the way up the sides of the cups. Bake until the centers of the puddings reach 190 degrees on an instant-read thermometer, 45 to 55 minutes. Let cool for a few minutes. Run a thin flexible knife along the upper inside edge of each pudding to loosen it. Hold a small plate firmly over a custard cup, invert the cup and plate, then remove the cup. Repeat with the remaining cups. Serve warm, paired with something slightly acidic, like apple slices in simple syrup with lemon juice.

⅓ cup white sugar
3 tablespoons cornstarch
¼ teaspoon salt
2 ½ cups milk
1 ½ teaspoons vanilla extract

Steps:

  • In a saucepan, combine the sugar, corn starch and salt. Add milk and cook over medium heat, stirring constantly until mixture thickens. Add vanilla and continue to cook for 2 to 3 minutes.
  • Pour into individual molds rinsed with cold water; chill until firm and unmold.

The aptly named Queen of Puddings dates to the seventeenth century,but food historians speculate that its moniker came hundreds of years later, in honor of Queen Victoria. It's a pudding deluxe, consisting of a custardy bread base topped with jam (ours is black currant) and a billowy layer of golden-tan meringue.

4 tablespoons unsalted butter, softened, plus more for baking dishes
4 cups whole milk
1 cup sugar
1 1/2 teaspoons finely grated lemon zest
3/4 teaspoon salt
1 loaf white sandwich bread (about 1 pound), crusts removed, cut into 1/4-inch cubes
4 large eggs, separated, plus 1 egg white
1/2 cup black-currant jam

Steps:

  • Preheat oven to 350 degrees. Butter six 1 1/2- to 1 3/4-cup oval gratin dishes; set aside.
  • Bring milk, butter, 1/2 cup sugar, the zest, and salt to a simmer in a medium saucepan. Add bread; remove from heat. Let stand, stirring often, 30 minutes.
  • Stir in yolks. Divide evenly among prepared dishes. Bake until just set, about 15 minutes. Let cool on a wire rack 30 minutes. Reduce temperature to 325 degrees.
  • Heat jam in a small saucepan until thin. Spread over tops of puddings.
  • Put egg whites and remaining 1/2 cup sugar into the heatproof bowl of an electric mixer set over a pan of simmering water. Whisk until sugar has dissolved and whites are warm, about 2 minutes. Attach bowl to mixer fitted with whisk attachment. Beat on high speed until medium peaks form. Mound meringue over puddings, leaving a 1/2-inch border.
  • Bake until meringue is golden all over and puddings are heated through, about 10 minutes. Serve immediately.

2/3 cup soft white bread crumbs
1 tablespoon vanilla sugar (see note)
Grated rind 1 large lemon
1 1/2 cups milk
1 tablespoon unsalted butter
4 large eggs
1 tablespoon good-quality raspberry or blackberry jelly or jam
3 tablespoons sugar

Steps:

  • Put the bread crumbs, vanilla sugar and lemon rind into a pudding basin. Bring milk to boil and stir it into the crumbs. Leave for 10 minutes.
  • Preheat oven to 325 degrees.
  • Butter a shallow baking dish that will hold about two-and-a-half pints.
  • Separate the eggs, putting the whites in a large bowl. Beat the yolks into the milk-and-bread-crumb mixture. Bake for 20 to 30 minutes or until just firm. Remove from the oven and cool slightly. Turn the oven down to 250 degrees.
  • Meanwhile, spread the jam or jelly over the custard.
  • Whisk the eggwhites until they stand up in stiff peaks and fold in one tablespoon of sugar. Whisk again until satiny and fold in one more tablespoon of the sugar. Spoon the mixture over the custard and sprinkle with the rest of the sugar. Bake for 15 to 20 minutes, until the meringue is firm and lightly brown. Serve hot or cold, with heavy cream.

HIND'S HEAD QUAKING PUDDING

This is a revisited recipe of a medieval dessert served at the Hind's Head Restaurant by the great chef Heston Blumenthal ( love the guy). Its a cross between a custard tart without pastry and a bread pudding. I read on another recipe that I found that you can add 35g brioche crumbs.

4 egg yolks
1 whole egg
65 g sugar
100 ml whole milk
400 ml whipping cream
1 g ground cinnamon (a good pinch)
1 g ground nutmeg (a good pinch)
butter, for greasing
flour, for dusting

Steps:

  • Whiskegg yolks, egg and sugar together in a bowl.
  • Put the milk and cream in a saucepan and bring to the boil. Whisk the milk into the whisked eggs, add the spices.
  • grease 4 150ml/ 1/4 pint moulds and dust with flour. Heat oven to its lowest setting.
  • place the moulds into a deep baking dish and surround with hot water, enough to go half the way up the moulds. This is called bain marie.
  • Cook until the inside temperature reaches 90C.This will take about an hour. Use a thermometer. the puddings are ready when they have a slight wobble in the centre -- they will firm up as they stand.
  • allow to cool for 10 minutes then serve.
