A scrumptious date nut cake that is truly fit for a queen. It is crowned with a broiled coconut topping.

1 cup boiling water
1 cup dates, pitted and chopped
¼ cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup chopped walnuts
1 cup flaked coconut
⅔ cup packed brown sugar
6 tablespoons butter
¼ cup cream

Steps:

  • Pour boiling water over dates in a small bowl, and let stand until cool.
  • Measure flour, baking powder, soda, salt, and nuts into a small bowl. Stir to mix.
  • Cream 1/4 cup butter or margarine and white sugar together in a mixing bowl; beat in egg and vanilla. Add flour mixture to creamed mixture in three parts alternately with date mixture in two parts, beginning and ending with dry mixture. Spread batter into a greased 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until an inserted wooden pick comes out clean.
  • To Make Topping: Mix coconut, brown sugar, 6 tablespoons butter and cream in a small saucepan over medium heat. Boil for three minutes. Spread over warm cake, and brown under broiler.

I searched long and hard and finally found a recipe on the internet that comes very close to the one I first tasted, this one is very delicious as well. I hope anyone that tries it enjoys it as much as I do. ***NOTE***...

1 (18 1/4 ounce) box swiss chocolate or devil's food cake mix
1 (3 1/2 ounce) box instant vanilla pudding
1 c vegetable oil
3 eggs
1 1/4 c milk
THE FROSTING
1 (8 ounce) package cream cheese, softened
1 c powdered sugar
1 c granulated sugar
1 c finely chopped nuts (i use pecans or walnuts) nuts can also be optional
5 plain milk chocolate candy bars, shaved (or a 7 ounce bar) i prefer hershey's chocolate
1 (12 ounce) container whipped topping

Steps:

  • 1. Sift cake and pudding mixes together.
  • 2. In another bowl beat oil, eggs and milk.
  • 3. Add to dry mixture and beat well.
  • 4. Pour into 3 greased 9-inch cake pans.
  • 5. Bake @ 325 degrees for 15-25 minutes.
  • 6. Now for the frosting:
  • 7. Beat together cream cheese and sugars until very creamy.
  • 8. Fold nuts and chocolate bar pieces into cream cheese mixture.
  • 9. Fold in whipped topping.
  • 10. Frost layers, top and sides of cake.
  • 11. NOW ENJOY!!!

1 (18 1/4 ounce) box devil's food cake mix, any brand
4 eggs
1 cup canola oil
1 (3 1/2 ounce) box vanilla instant pudding mix
1 cup milk
four 8 ounce Hershey Bars, with (work best if they're frozen first) or four 8 ounce bars without almonds, broken and ground in food processor until finely chopped (work best if they're frozen first)
8 ounces cream cheese
1 cup granulated sugar
1 cup powdered sugar
1 (18 ounce) container Cool Whip

Steps:

  • For cake, blend all ingredients with a mixer and pour into three 9-inch cake pans that have been well greased and floured. Cook at 350 degrees for 25-30 minutes.
  • For filling, pour the Hershey bars from the food processor into a small bowl and set aside. In a large bowl, beat the cream cheese and sugars. Blend until it's not quite so grainy, for about 2-3 minutes. Fold the Cool Whip into the cream cheese mixture.
  • Blend chopped Hershey bars into the cream cheese mixture. Frost the cake and decorate as desired.

This cake is very good! My whole family gets together for dinner at our parent's house every Sunday and I always bring a dessert. This is my sister and brother-in-law's favorite! I got the recipe out of a cookbook I bought on QVC. "Best of the Best from QVC Cookbook". This recipe was submitted by Vivian C. Ferguson. The recipe calls for the chocolate to be shaved , but that's too much work for me. I just grind up the chocolate in my food processor.

  • Place Queen Anne's Lace and optional seed heads into a half gallon jar. Cover with eight cups of water just off the boil. Cool until just slightly warmer than room temperature. Add the rest of the ingredients to the jar. Place a lid tightly on the jar and shake vigorously. Slightly loosen jar lid.
  • Over the next 24-48 hours (sooner if using a yeast like this), you should see bubbling in the jar, signaling fermentation. Allow to ferment for 24-48 hours, tasting occasionally.
  • When the desired level of fermentation is complete, pour wildcrafted soda through a fine mesh sieve lined with muslin into a bowl or eight cup measuring cup or pitcher. Pour into sterilized bottles like these. Cap tightly and allow to continue to ferment at room temperature for 8-16 hours. Test for desired “fizziness” (opening the bottle carefully by applying pressure to the lid while releasing the bracket on a swing top bottle) and refrigerate when you are happy with the soda. Please note that the contents of the bottle may be under pressure -- please be careful.
  • Wildcrafted soda is not intended for aging. Drink this goodness within two weeks and enjoy the last days of summer!
