ROASTED POBLANO QUESADILLAS

2 large poblanos
4 teaspoons extra-virgin olive oil
4 large flour tortillas
2 cups shredded Monterey Jack cheese

Steps:

  • Heat the broiler to high.
  • Char the poblanos under the broiler to blacken their skins on all sides, 7 to 8 minutes. Place in a bowl, cover with plastic wrap, and let stand 10 minutes.
  • Peel and seed the peppers, then slice. Heat a skillet over medium-high heat. Add a drizzle of extra-virgin olive oil and add a tortilla, cover the tortilla with 1/2 cup cheese and 1/4 of the peppers. Fold the tortilla in half and cook 2 minutes to crisp and char the tortilla evenly and melt cheese. Remove and cut into wedges; repeat.

This Roasted Poblano Quesadilla recipe is a great example of the rich, otherworldly flavor that Mexican cuisine can generate by using just a few simple ingredients. And it's served with Avocado Salsa Verde!

2 poblano peppers
1/2 onion
3-4 flour tortillas
1 cup refried beans
2 cups shredded Monterey Jack cheese
1/2 cup chopped cilantro (approx 1/2 a bunch)
salt
freshly ground pepper
4-5 tomatillos
1 serrano (or jalapeno)
1/2 onion
1 garlic clove
10-12 sprigs cilantro
1 avocado
salt to taste

Steps:

  • Start by rinsing 2 poblano peppers. Roast the poblanos in the oven for 25-30 minutes at 400F.
  • If you are building the Avocado Salsa Verde, you can also roast 4 tomatillos in the same pan as the poblanos. But remember that the tomatillos will need less time roasting. Take them out when they start to turn army green, approx 10-15 minutes.
  • Add the roasted tomatillos to a blender along with 1/2 onion, 1 garlic clove, 10-12 sprigs cilantro, and 1/2 of a serrano pepper (or 1/2 of a jalapeno pepper). Pulse blend and taste for heat, adding the additional 1/2 of the serrano (or jalapeno) if you want more heat. Add the avocado to the blender and combine well. Salt to taste.
  • Once the poblanos have roasted, let them cool and then pull off any loose bits of skin, but don't worry about getting rid of every last piece.
  • De-stem and de-seed the poblanos, cutting them into thin, bite-sized strips.
  • Saute 1/2 an onion in a dollop of oil over medium heat. When the onion is tender (4-6 minutes) add the poblano strips along with a generous pinch of salt and some freshly ground pepper. Let this mixture saute for a few minutes.
  • Heat up a wide skillet over medium heat. Warm up the tortillas before building the quesadillas (I usually give them 30-60 seconds in the skillet right before building).
  • Each quesadilla gets a layer of refried beans, cheese, poblano-onion mixture, cilantro, and cheese. Fill only half of the tortilla so you can fold it onto itself.
  • Cook the quesadillas for 2-3 minutes per side or until the cheese is melted and they start to turn golden brown.
  • Serve immediately.

2 andouille sausage links, finely diced
1 poblano chile, finely diced
½ red bell pepper, finely diced
½ large red onion, finely diced
½ cup frozen corn kernels
4 flour tortillas

¼ cup sour cream
¼ cup salsa

Steps:

  • Heat 1 tablespoon of canola oil in a large skillet over medium heat. Stir in the diced sausage, poblano pepper, red pepper, red onion, and corn. Cook until soft, about 15 minutes.
  • Spoon 1/4 of the sausage mixture on one half of each tortilla; top each with 1/2 cup cheese. Fold over tortillas to make a half moon shapes. Repeat with remaining ingredients.
  • Heat the remaining 1 tablespoon of canola oil in large skillet over medium heat. Cook quesadillas until the cheese is melted and the tortilla is brown and crispy, about 5 minutes per side. Cut each quesadilla into 4 wedges, and top with sour cream and salsa, if desired.

2 (8 ounce) skinless, boneless chicken breast halves
2 tablespoons minced garlic
1 medium onion, chopped
3 cups water
1 tablespoon chicken bouillon granules
4 fresh poblano chilies
1 (8 ounce) container sour cream
2 tablespoons olive oil
10 (6 inch) corn tortillas
1 cup shredded mozzarella cheese

Steps:

  • Place the chicken breasts, garlic, onion, water, and chicken bouillon into a saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 40 minutes. When finished, remove the chicken to a plate to cool. Measure out 1 cup of the chicken broth and discard the rest.
  • Roast the poblano chiles over an open flame, or underneath a broiler until the skin has blackened on all sides. Place the chiles into a plastic bag, or a bowl covered with plastic wrap, and allow to steam as they cool, about 30 minutes. When cool, peel the blackened skin off of the pepper, and remove the seeds and membrane.
  • Place the reserved chicken broth into a blender along with the roasted poblanos and sour cream. Puree until smooth and set aside.
  • Heat the olive oil in a skillet over medium heat. Fry the tortillas one at a time until softened and beginning to crisp. Place onto a plate and set aside. Pour the pureed poblano mixture into the skillet and simmer for 10 minutes. While the sauce is cooking, slice the cooled chicken breasts into 1/4 inch strips.
  • Using tongs, dip a tortilla into the sauce, coating both sides. Place some of the chicken in the center of the tortilla, roll tightly, then place on a serving dish with the seam side down. Repeat with remaining tortillas. Spoon any remaining sauce over top of the enchiladas, then sprinkle with the shredded mozzarella cheese.

This recipe is for an authentic style quesadilla. Dust off your tortilla press, and put it to use to make these cheesy melted goodness quesadillas that even your Nana will love. (Don't worry, I have included instructions for making them using a rolling pin). Believe it or not, this is from Williams Sonoma Mexican- I'm lovin this book after only making one recipe from it so far.

2 cups masa harina (Mexican corn flour)
1 1/4 cups plus 2 tablespoons warm water
1/4 teaspoon salt
1 tablespoon canola oil
1 white onion, thinly sliced
2 garlic cloves, finely chopped
1/2 teaspoon dried oregano
2 poblano chiles, roasted, peeled, seeded, then cut lengthwise into 12 strips each
1/2 teaspoon sea salt
2 cups monterey jack cheese, shredded (I used 1/2 lb. Mexican Cheese Blend)
canola oil (for deep frying)
guacamole, and salsa for garnishes when serving

Steps:

  • Tortillas: Mix masa harina with warm water. Using your hands squish water and flour together until a cohesive mass is formed. Dough should be smooth and pliable. Cover the bowl with a barely damp kitchen towel. Let sit 5-10 minutes. Add salt; knead gently in bowl for another minute. Divide dough into 12 equal portions. Use your palms to form each portion into a ball. Cover with the damp towel.
  • Filling: In a frying pan over medium heat, warm the oil. Add onion and sauté until golden brown about 5 minutes. Stir in garlic and oregano and cook for 1 more minute Add chiles and sea salt, toss until all is thoroughly heated. Taste and adjust seasoning with salt.
  • Assembly of Quesadillas: Put two sheets of plastic cut from a plastic storage bag (I use a plastic grocery bag) inside a Tortilla press OR use rolling pin on 2 sheets of wax paper with the dough ball between the 2 sheets. Put a dough ball between the sheets and gently press down the top plate of the press OR roll the dough ball using the rolling pin into a circular shape between sheets of wax paper. Remove top piece of plastic or wax paper and place a generous tablespoon of the shredded cheese on half of the tortilla keeping the edges free. Top with a couple of chile strips and a few onion slices. Lift the lower piece of plastic or wax paper to fold the uncovered side of the tortilla over the filling. Press the edges together with your fingers. Remove from the press or the wax paper and set aside covered with the damp towel. Repeat until all Quesadillas are made.
  • Cooking of Quesadillas: Preheat oven to 200 deg F. Pour oil to a depth of 1 inch into a deep heavy frying pan and place over medium high heat until the oil shimmers.
  • Fry the Quesadillas - one at a time until golden 1-2 minutes.
  • Using a slotted spatula, transfer to paper towels. Let drain briefly then transfer to a heat proof platter and keep warm in the oven. Serve as soon as possible.
  • I had an extra amount of onion, cheese, and chiles so I dumped it on a store-bought corn tortilla, place another corn tortilla on top and then heated it on a dry frying pan until the cheese melted.

2 boneless, skinless chicken thighs
3/4 teaspoon ground cumin
Kosher salt
1/2 cup sour cream
Finely grated zest and juice of 1 lime, plus lime wedges, for serving
1/2 firm, ripe avocado, pitted and peeled
1 small poblano chile, halved lengthwise, stemmed and seeded
4 scallions, thinly sliced
2 cups shredded Mexican cheese blend (8 ounces)
1 small clove garlic, finely grated
8 small corn tortillas
4 tablespoons vegetable oil
Salsa, for serving

Steps:

  • Prick the chicken all over with a fork and put in a medium bowl. Rub the cumin and 3/4 teaspoon salt into the chicken. Add 1/4 cup of the sour cream and half the lime zest and juice and mix until the chicken is coated. Let sit at room temperature for 15 minutes.
  • Blend the avocado, remaining 1/4 cup sour cream, remaining lime zest and juice, 3 tablespoons water and 1/2 teaspoon salt in a blender until very smooth; refrigerate until ready to use.
  • Meanwhile, preheat the broiler. Line a rimmed baking sheet with foil.
  • Put the poblanos skin-side up on the prepared baking sheet and broil until the skin is wrinkled and charred in spots, 2 to 3 minutes. Transfer the poblanos to a medium bowl, cover with plastic wrap and let steam for 5 minutes. Run the poblanos under cold water and remove and discard the skin. Cut the poblanos into small bite-size pieces and return them to the bowl.
  • Transfer the chicken to the baking sheet and broil, turning once, until browned in spots and cooked through, 4 to 5 minutes per side. Let cool for a few minutes. Cut it into small bite-size pieces. Add the chicken and half of the scallions to the bowl with the poblanos and toss to combine. Combine the cheese and garlic in a small bowl.
  • Top 4 tortillas with 1/4 cup of the cheese mixture, one-quarter of the chicken-poblano mixture then 1/4 cup more cheese mixture. Top each with 1 of the remaining 4 tortillas and press lightly.
  • Heat 1 tablespoon of the oil in a large nonstick skillet over medium heat. Add 1 quesadilla to the skillet and cook, turning once, until it is golden and the cheese is melted, 2 to 3 minutes per side. Transfer to a baking sheet or large plate and repeat with the remaining oil and quesadillas. Cut each quesadilla into quarters and sprinkle with the remaining scallions. Serve with a dollop of the avocado cream, lime wedges and salsa on the side.

POBLANO AND ROSEMARY VEGGIE QUESADILLAS

4 tablespoons feta cheese, drained and crumbled
4 tablespoons grated part skim milk mozzarella
1/2 teaspoon olive oil
1 onion, diced
2 cloves fresh garlic, minced
1 potato, peeled, diced, and cooked until tender
1 poblano pepper, seeded and toasted
1 scallion, sliced
1/2 zucchini, cubed
1 teaspoon chopped fresh oregano leaves
2 tablespoons coarsely chopped fresh cilantro leaves, plus extra for garnish
1 tablespoon chopped fresh rosemary leaves
6 (10-inch) flour tortillas, heated
1 cup Ancho Chile Salsa, recipe follows
6 ancho chiles, washed and seeded
1 chile de arbol, toasted
1 onion, chopped
4 tomatoes, chopped
1 tablespoon chopped fresh oregano leaves
2 cups water
2 cloves garlic, chopped
2 tablespoons chopped fresh cilantro leaves

Steps:

  • In a medium size bowl mix the cheeses together and set aside, covered, in the refrigerator until ready to use. In a hot saute pan over medium heat 1/2 teaspoon of the olive oil. When the oil is hot, add the onion, garlic, potato, pepper, scallion, and zucchini and saute for 3 minutes, stirring. Fold in the herbs. Set aside. Place the tortillas in a hot dry saute pan over medium heat or on a hot grill and spoon 2 tablespoons of the veggie saute 2 tablespoons of the mixed cheeses on to each tortilla. Fold the tortillas in half and toast each side for 1 to 2 minutes until the cheese starts to melt. Cut each tortilla in thirds and arrange on a serving plate garnished with Ancho Chile Salsa and cilantro. Serve warm.
  • Begin by rinsing and seeding the chiles. Add the chiles, onion, tomatoes and oregano in a saucepan with the water. Bring to a boil reduce heat to a simmer. Simmer 20 minutes or until the tomatoes are soft. Strain cooked ingredients from the cooking liquid. Toss liquids and place the cooked ingredients plus the garlic into a blender and puree until smooth. Add cilantro if desired, season with salt, to taste, and set aside until ready to use. Serve hot or cold.

POBLANO ASPARAGUS QUESADILLAS

I put this together when we had excess asparagus, and my wife and I loved it, we are sure you will too! Anaheim chiles, onions, and white asparagus come together with chicken broth to make a tasty filling for quesadillas.

8 flour tortillas
1 lb asparagus, peeled, and chopped into 2 inch chunks
2 poblano chiles, charred, peeled, deseeded, and chopped (use Anaheims or hot wax peppers if you wish)
1 onion, thinly sliced
1 cup monterey jack cheese, shredded (or to taste)
1/2 cup chicken broth
1 teaspoon cumin
1/2 lime, juice of

Steps:

  • Preheat oven to 325°F.
  • Add the onions into a skillet over medium high heat with a bit of oil for two minutes, then add the white asparagus(I haven't tried green).
  • Cook for five more minutes, stirring often, and then add the chiles, cook for 3 minutes or until the chiles are just soft and giving off their aroma. Squeeze the lime juice over the pan and scrape the bottom of the skillet, to get all the brown bits up(if any).
  • Add the chicken broth, and cumin.
  • Stir, reduce heat and simmer for 5 minutes, or until the asparagus is cooked through.
  • Fill the tortillas with equal parts filling, and cheese, and bake in the oven, flipping once, until browned on both sides, about 5 minutes per side.
  • Serve with pico de gallo, sour cream, and guacamole, with shredded iceberg salad.
  • You can also do it in a pan, but for a family, I find the oven the fastest way to do it.

1 tablespoon olive oil
1/2 lb shrimp
1/4 teaspoon salt
3 garlic cloves, minced

1/8 teaspoon cayenne pepper
1/4 cup half-and-half
3/8 cup milk, 1
3/8 cup asadero cheese, chunks
1/4 yellow pepper, chopped
1/4 cup cilantro leaf
1 tablespoon lime juice
2 flour tortillas, 8 inch

Steps:

  • Remove seeds from the roasted peppers.
  • Heat oil in a large skillet over med. high heat. Add shrimp and salt.
  • Cook shrimp for 1 minute, turn over for 30 sec. and remove from the pan.
  • Add the garlic to the skillet and cook for 30 sec. add yellow pepper and cook 30 sec.
  • Add flour and cayenne, cook 1 minute.
  • Whisk in half and half, then milk and cook 2 minutes.
  • Remove from heat add half of the cheese and stir to melt.
  • Divide into half.
  • Remove half to a med. bowl and add shrimp (except reserve 3-4 for each tortilla), cilantro and lime juice. Toss together.
  • Heat a flat griddle.
  • On a cutting board or plate, put the other quarter of the cheese mixture from the pan divided, onto half of the two tortillas.
  • Place a layer of roasted pablanos over the cheese mixture.
  • Put half of the shrimp mixture on each of the tortillas and add the remaining cheese.
  • Fold over the blank half of the tortilla over the stuffing.
  • Place onto heated, oiled griddle for 3-4 minutes until crisp.
  • Turn over and another 3-4 minutes on the other side.
  • Serve on a plate with a little of the remaining cheese sauce and 3-4 whole shrimp on the top.

1/2 cup pumpkin seeds or 1/2 cup pine nuts, toasted
1/2 cup cilantro, with stems coarsely chopped (or use parsley if you prefer)
1 -2 serrano peppers or 1 -2 jalapeno chile, optionally blackened
1 tablespoon olive oil
2 teaspoons lime juice
1/2 teaspoon salt
4 (10 inch) flour tortillas
2 cups cooked chicken, diced (about 2 large breasts)
1 cup monterey jack cheese, grated
1/4 cup parmesan cheese, grated
2 tablespoons unsalted butter

Steps:

  • Put poblanos, pumpkin seeds,cilantro and serranos in a food processor and pulse until puréed.
  • Add the oil in a steady stream with the machine running.
  • Add the lime juice and salt, mixing well.
  • Taste and adjust seasoning if necessary.

1 jalapeno pepper, stem removed
1 cup tightly packed fresh basil leaf
3 tablespoons extra virgin olive oil
2 tablespoons tequila
