HEALTHY MASHED POTATOES

These Healthy Mashed Potatoes are lighter than traditional mashed potatoes, yet still packed with flavor!

Number Of Ingredients 10

5-6 medium Russet or Yukon gold potatoes (about 3 lb)
1/3 cup plain Greek yogurt (or light sour cream)
1/2-2/3 cup skim milk (or as needed to reach your desired consistency)
1/2 tsp seasoning kosher salt (or to taste)
1/4 tsp ground pepper
1/2 tsp dried parsley
1/2 tsp dried chives
1/8 tsp garlic powder
1/8 tsp onion powder
To garnish: fresh chives (fresh thyme)

Steps:

  • Peel and chop the potatoes into big chunks. Place them into a large soup pot and cover with water.
  • Place the pot over high heat and bring to a boil. Once boiling, reduce the heat to a simmer and cook until the potatoes are for tender, about 15 minutes.
  • Carefully drain the potatoes, keeping them in the same pot. Add in the remaining ingredients.
  • Using a potato masher, mash until smooth. Taste and adjust the seasonings.
  • Peel and chop the potatoes into big chunks. Place them into your instantpot and add in 2 cups of water.
  • Place the lid on and set the timer for 10 minutes on HIGH. Once the time is up, quick release the steam.
  • Drain the liquid, keeping the potatoes into the same pot. Add in the remaining ingredients.
  • Using a potato masher, mash until smooth. Taste and adjust the seasonings.

6 sweet potatoes
½ cup butter
2 cloves garlic, minced
1 teaspoon dried basil
½ teaspoon dried thyme

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.
  • Transfer potatoes to a large bowl; mash butter, garlic, basil, and thyme into the potatoes with a potato masher until smooth.

1 1/4 lbs russet potatoes
1/2 cup nonfat plain yogurt
1/2 cup nonfat milk
1 1/2 tablespoons butter (healthy butter spread)
1/4 teaspoon sea salt (or 1/2 tsp garlic salt or seasoned salt)
fresh ground pepper

Steps:

  • Place whole potatoes (do not poke) into microwave-safe dish. Cover dish. (If covering dish with plastic wrap, poke small hole in plastic).
  • Microwave on HIGH for 10-12 minutes depending on strength of microwave. Use oven mitts to remove dish from microwave; carefully remove cover and mash well.
  • Stir in yogurt, milk, butter spread and seasonings.
  • Cook for a minute or 2 more to heat if necessary.

  • Put 2 pounds whole unpeeled russet or Yukon gold potatoes in a large saucepan and cover with cold water; add 2 tablespoons kosher salt. Bring to a simmer (do not boil) and cook until the potatoes are tender, about 45 minutes.
  • Drain the potatoes, then peel and return to the pan; add 1 cup hot milk and 1/2 to 1 stick room-temperature unsalted butter. Mash with a potato masher or fork. Season with salt and pepper.
