SUNNY'S QUICK BOLOGNESE WITH PAPPARDELLE

Steps:
- Bring a large pot of salted water to a boil.
- Using your hands or a knife, break or cut the beef patties into pea-size pieces.
- In a large straight-sided skillet, combine the pizza sauce, chicken stock, heavy cream, nutmeg and beef over medium-high heat. Season with just a bit of salt and a few grinds of black pepper. Bring to a simmer and cook until heated through, 2 to 3 minutes.
- Meanwhile, cook the pasta in the boiling water according to the package directions. Drain, add to the sauce and grate some Parmesan over the top. Stir together until the cheese melts, then serve.
SIMPLE BOLOGNESE

- In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish bolognese with Pecorino Romano.

- Combine bulgur, 1 1/2 cups water, salt, and a drizzle of oil in a saucepan. Bring to a simmer, then cover and cook over low heat until tender, about 12 minutes. Remove from heat; let stand, covered, 10 minutes. Fluff with a fork. Use immediately, or spread on a rimmed baking sheet to let cool.
BOLOGNESE ON A BUDGET
This delicious bolognese is extremely quick and easy to make. Serve over pasta, rice, couscous, or any other carbohydrate food you fancy. This sauce gets better the longer it simmers. If you do allow it to simmer for a longer time, check regularly and add water as needed. This sauce also lends itself beautifully to adding vegetables such as zucchini, eggplant, carrots, and mushrooms.

- Rinse lentils under cold running water and drain. Place the water and lentils in a saucepan over medium heat and bring to a boil. Cover, reduce heat to medium-low, and simmer until lentils just begin to soften, about 20 minutes. Stir the tomatoes and onions into the lentils; bring to a gentle simmer. Crumble the bouillon cube into the lentil mixture and stir until it's dissolved. Simmer for about 5 minutes more, stirring frequently. Season with salt and pepper to taste.

Steps:
- Add bulgur wheat to a pan with 1 1/2 C boiling water.
- Reboil, cover and take off the heat to absorb the liquid.
- In your favourite pan, saute onions and garlic in the oil until softened.
- Add capsicum and cook for a further 5 minutes, or until soft.
- Add zucchini, tomatoes, puree, herbs,salt,sugar and pepper.
- Cook over very low heat whilst you are boiling up pasta of your choice.
- Add bulgar, cook for 2-3 minutes and check seasoning.
- I serve this over spaghetti, with parmesan on the side for those who like it.
