QUICK CHICKEN 1
One of my "working mother" recipes - quick and easy to make, and the kids love it. They still ask for it when they come home for vacations. The recipe is for one whole chicken, cut into eight. I usually double it, and for big dinners even triple it. Try it with different types of honey - each type gives it its own distinctive taste. Serve with plain white rice pilaff, and pour the chicken sauce over the rice. Usually used for the oven, it's also great as a marinade for barbecued chicken, chicken wings or chicken breasts.

Steps:
- Blend honey, soy sauce and ketchup until smooth. Consistency will be between a light paste or thick liquid, depending on your honey.
- Liberally season chicken parts with granulated garlic, on both sides.
- Spoon sauce over chicken parts, on both sides.
- Place chicken parts skin-side up in a baking dish.
- Bake at 350 degrees for 45-50 minutes (don't worry if the chicken skin looks black).

MILLION DOLLAR CHICKEN CASSEROLE
Creamy and incredibly savory, it's a casserole that's hard to stop eating. The cottage cheese is the trick to getting such a creamy, melty texture. Using rotisserie chicken is a must for the recipe and helps keep it quick.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Stir together cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon of the garlic powder in a medium bowl until well blended and smooth. Fold in chicken, chopped onion, and parsley until evenly coated.
- Stir together crackers, melted butter, and remaining 1/2 teaspoon garlic powder in a medium bowl.
- Spoon chicken mixture evenly into an 11x7-inch or 9-inch square baking dish. Sprinkle evenly with mozzarella then cracker mixture.
- Place on a foil-lined baking sheet and bake in the preheated oven until crackers are golden brown and edges are bubbly, about 40 minutes. Cool for 10 minutes before serving; garnish with scallions if desired.
