I can throw this chicken lo mein together on a weeknight when my kids are doing their homework. It uses frozen veggies, which I always have on hand, so I don't need to run to the grocery store for ingredients. -Natasha Kennedy, Orlando, Florida

8 ounces uncoooked linguine
8 garlic cloves, minced
3 teaspoons canola oil, divided
2/3 cup chicken stock
1/4 cup reduced-sodium soy sauce
2 teaspoons sugar
2 teaspoons oyster sauce
2 teaspoons lime juice
2 teaspoons chili sauce
2 teaspoons cornstarch
2 teaspoons water
1 cup frozen mixed vegetables
2 cups cubed rotisserie chicken
Chopped green onions, optional

Steps:

  • Cook linguine according to package directions for al dente. Meanwhile, in a small saucepan, cook garlic in 1 teaspoon oil for 1 minute. Whisk in stock, soy sauce, sugar, oyster sauce, lime juice and chili sauce; bring to a boil. Reduce heat; simmer for 1 minute., In a small bowl, combine cornstarch and water until smooth. Stir into pan. Bring to a boil; cook and stir 1-2 minutes or until thickened. Remove from heat., In a large skillet or wok, stir-fry vegetables in remaining oil for 4-6 minutes or until crisp-tender. Stir in chicken and sauce; heat through. Drain linguine; toss with chicken mixture. Top with green onions, if desired.

1 TBSP olive oil
1 lb boneless (skinless chicken breasts, chopped into ½ inch pieces)
½ large onion of your choice (diced)
1 bottle (11.8 oz Sweet Chili Sauce)
10 oz bag matchstick carrots
12 oz box of thin spaghetti noodles
2 green onion (diced)

Steps:

  • Step OneBoil water and cook the thin spaghetti noodles according to the package directions.
  • Once done cooking, drain, and set the noodles aside.
  • Step TwoWhile the pasta is cooking, heat the olive oil over high heat in a large skillet and sauté the chicken and onion for about 5 minutes. The chicken should be seared on all sides and the onions should be softened by this point.
  • Step ThreeNext, add the matchstick carrots.
  • Pour the Sweet Chili Sauce over the chicken and veggie mixture and stir to coat.
  • Let everything simmer over medium heat for another 7-10 minutes, until the chicken is completely cooked.
  • Step FourStir the cooked noodles into the chicken mixture.
  • Divide the Spicy Chicken Lo Mein amongst 4 bowls and top with the diced green onions.

This dish is easy to make, and full of flavor. The chicken is incredibly tender, and the ginger, garlic and soy sauce combine to give it its authentic taste. Garnish with chopped fresh cilantro.

4 skinless, boneless chicken breast halves - cut into thin strips
5 teaspoons white sugar, divided
3 tablespoons rice wine vinegar
½ cup soy sauce, divided
1 ¼ cups chicken broth
1 cup water
1 tablespoon sesame oil
½ teaspoon ground black pepper
2 tablespoons cornstarch
1 (12 ounce) package uncooked linguine pasta
2 tablespoons vegetable oil, divided
2 tablespoons minced fresh ginger root
1 tablespoon minced garlic
½ pound fresh shiitake mushrooms, stemmed and sliced
6 green onions, sliced diagonally into 1/2 inch pieces

Steps:

  • In a medium, non-reactive bowl, combine the chicken with 2 1/2 teaspoons of white sugar, 1 1/2 tablespoons vinegar and 1/4 cup soy sauce. Mix this together and coat the chicken well. Cover and let marinate in the refrigerator for at least 1 hour.
  • In another medium bowl, combine the chicken broth, water, sesame oil and ground black pepper with the remaining sugar, vinegar and soy sauce. In a separate small bowl, dissolve the cornstarch with some of this mixture and slowly add to the bulk of the mixture, stirring well. Set aside.
  • Cook the linguine according to package directions, drain and set aside. Heat 1 tablespoon of the vegetable oil in a wok or large saucepan over high heat until it starts to smoke. Add the chicken and stir-fry for 4 to 5 minutes, or until browned. Transfer this and all juices to a warm plate.
  • Heat the remaining vegetable oil in the wok or pan over high heat. Add the ginger, garlic, mushrooms and green onions, and stir-fry for 30 seconds. Add the reserved sauce mixture and then the chicken. Simmer until the sauce begins to thicken, about 2 minutes. Add the reserved noodles and toss gently, coating everything well with the sauce.

2 pounds diced boneless chicken breasts
6 tablespoons cornstarch
6 teaspoons chili garlic sauce
3 teaspoons minced ground ginger
3/4 pounds spagetti noodles, or lo mein noodles (as desired)
1 cup chicken stock
1 tablespoon oyster sauce
3/4 cup water
2 tablespoon canola oil
1 small onion, diced
1/4 cup - 1/2 cup corn niblets, shredded carrots, shredded peppers, etc (or whatever type of vegetables desired)
1 teaspoon flour

Steps:

  • In a bowl, mix chicken, cornstarch, chili garlic sauce, and ginger. Cover and refrigerate for at least 1 hour. Mix oyster sauce and water. Remove chicken from refrigerator and discard marinade. Cook noodles according to package, drain and hold in a bowl of cold water. In wok, over high heat, add oil and drop 1/3 of chicken into wok and stir fry so that all sides of chicken are crisp. Remove and place in bowl. Continue to add 1/3 of chicken until all chicken has been cooked. Put all chicken in the side bowl. In wok, remove excess oil leaving enough to saute vegetables. Once the vegetables are done to your liking, remove them and hold in a separate bowl. In wok, combine chicken stock, and oyster sauce mixture. Add 1 teaspoon of flour to sauce to thicken, and whisk vigorously. Continue to add 1 teaspoon of flour until desired consistency. Cook sauce over medium high heat until liquid has thickened (about 5-10 minutes). Add chicken and vegetables to sauce and toss to combine. Add noodles, stirring to coat with sauce until completely combined and heated. Transfer to serving platter.

I made this one night when I wanted something quick and easy. I was just going to make Chow Mein from the can but I find that stuff kind of tasteless so I had to fix it up a bit. This is what I ended up with and it was pretty good. I served it with a side of ginger pears.

1 (12 ounce) package lo mein noodles (or other noodles)
2 tablespoons sesame oil
1 tablespoon garlic, minced
1/2 teaspoon red pepper flakes
1 tablespoon lemon juice
2 tablespoons low sodium soy sauce
1 (28 ounce) package canned chow mein (chicken or beef)
1 (10 ounce) can chicken, drained (or shrimp)

Steps:

  • open the veggie part of the chow mein and set to drain.
  • Put water for noodles on and prepare according to package directions.
  • While water for noodles is coming to a boil, in small skillet saute garlic and red pepper flakes in oil. Be careful not to burn the oil. When garlic is tender add lemon juice and soy sauce. Heat through.
  • While noodles are cooking, combine the drained chinese veggies with the can of chicken and the gravy/chicken part of the chow mein. Heat through.
  • Drain noodles, rinse with hot water, put noodles back in noodle pan and toss with garlic oil mixture.
  • Serve the veggie/chicken mixture over the noodles.

1 (15 ounce) package oriental-flavor instant ramen noodles
1 tablespoon sesame oil
1 1/2 teaspoons fresh garlic, finely chopped
1 lb chicken breast, chop into 1/2-inch cubes
4 cups coleslaw mix
2 tablespoons green onions, chopped
light soy sauce

Steps:

  • Break noodles in half; cook according to package directions.
  • Rinse with hot water; drain well.
  • Meanwhile, in large skillet or wok, heat oil over MED-HIGH; sauté garlic to fragrant, stirring constantly.
  • Add seasoning packet from mix and the chicken. Continue cooking; stirring until chicken is no longer pink, about 5 minutes,.
  • Stir in coleslaw mix. Continue cooking, stirring constantly, until cabbage is slightly soft but crisp, about 1 minutes.
  • Stir in cooked noodles and green onions. Cook,stirring constantly until heated through, about 1 1/2 minutes. Season to taste with lite soy sauce.
  • Note: Add some red pepper flakes for heat, if desired.

  • The first step is to get your water boiling. Then velveting your chicken by adding your sliced chicken to a bowl with all of the velveting marinade ingredients. Set aside while you are prepping your veggies and mixing your chinese brown sauce ingredients in a seperate bowl while waiting for your water to boil.
  • Once your water starts to boil, add the Lo mein noodles which only take 4 minutes to cook. Then heat up your wok. Once heated add your sesame oil, 1 tbs of garlic and your chicken. Remember this will all cook very fast. Cook your chicken until it starts to brown about 2-3 minutes. Then add your veggies.
  • Your veggies will only take 2-3 minutes to cook. While they are cooking in the wok, drain your lo mein noodles.
  • Finally, add your lo mein noodles and pour over your chinese brown sauce. Give a good mix and your dish is ready to serve.
