QUICK POSOLE WITH PORK



Quick Posole with Pork image

This quick posole is an easy one-pot meal made with pork shoulder, hominy, onion, stock, spices, and all your fave toppings, that can be made in the pressure cooker or slow cooker.

1 1/4 pounds boneless pork shoulder (excess fat trimmed and meat cut into 4-inch (10-cm) chunks)
Coarse sea salt
2 tablespoons mild olive oil or vegetable oil
Freshly ground black pepper
1 medium white onion (chopped (about 1 1/2 cups))
4 garlic cloves (minced)
2 tablespoons chili powder* ((see * below))
4 cups homemade pork stock, homemade chicken stock, or canned chicken broth
2 cups cold water or homemade chicken stock
One (29-ounce) can hominy (drained and rinsed)
Chopped avocado (for serving)
Cilantro leaves (for serving)
Lime wedges (for serving)
Sliced radishes (for serving (optional))
Crumbled tortilla chips (for serving (optional))

Steps:

  • Pat the pork dry and then season it on all sides with salt.
  • If making the pork in a 6-quart pressure cooker, add the oil to the pressure cooker and heat over medium-high heat. Add the pork and cook until browned on all sides, about 8 minutes. Transfer the pork to a plate. Add the onion, garlic, and chili powder to the pressure cooker and sauté until softened, about 4 minutes. Add the stock and the water and cook, stirring and scraping up any browned bits with a wooden spoon, until the mixture comes to a simmer. Return the pork to the pressure cooker. Secure the lid. Bring to high pressure over medium-high heat. Reduce heat to maintain pressure and cook until meat is tender, about 45 minutes. Remove from heat, vent pressure, then remove lid. If making the pork in a slow cooker, season the pork on all sides with salt. In a large skillet, heat the oil over medium-high heat. Add the pork and cook until browned on all sides, about 8 minutes. Transfer the pork to the slow cooker. Add the onion, garlic, and chili powder to the skillet and sauté until softened, about 4 minutes. Add the stock and the water and cook, stirring and scraping up any browned bits with a wooden spoon, until the mixture comes to a simmer. Pour everything from the skillet over the pork in the slow cooker. Cook on low until the meat is tender, about 8 hours.
  • Skim any fat from the surface of the cooking liquid. Remove the pork and either chop it into bite-size chunks or shred it using 2 forks.
  • Return the pork to the liquid in the cooker along with the hominy and heat for just a few minutes, until the hominy is warmed through. Season with salt and pepper. Serve the posole with the avocado, cilantro, and lime, plus radishes and chips, if desired.

1 lb ground pork
1 onion, chopped
2 cloves garlic, chopped
1 1/3 tablespoons cumin

1/2 cup basil or 1/2 cup parsley, to taste

Steps:

  • heat oil in a deep large skillet.
  • add pork, onions, garlic and cumin, stir, cook until browned.
  • add flour, cook 2 minutes, stirring.
  • add broth, and hominy, stirring until well blended, lower to simmer, cook 20 minutes uncovered, until thickened.
  • stir in cilantro and jalapeno, simmer for a few more minutes.
  • season to taste with salt& pepper.

Steps:

  • Finely dice the onion, then add it to a large soup pot along with the cooking oil. Sauté the onion in the oil over medium heat for 3-5 minutes, or until it is tender and transparent. Add the flour and chili powder and continue to sauté for two minutes more. The mixture will be fairly dry, so stir continuously to prevent burning.
  • Add 2 cups water, tomato paste, cumin, garlic powder, cayenne pepper, and salt to the pot. Whisk the ingredients together until the tomato paste is dissolved. Allow the mixture to come to a simmer, at which point it will thicken.
  • Finally, add the chicken broth, shredded meat, diced chiles, and hominy (drained). Stir to combine and then heat through (about 10 minutes).
  • Cut the lime into wedges and roughly chop the cilantro. Top each bowl with chopped cilantro and a wedge of lime to squeeze over top.

1 teaspoon kosher salt

1 ½ cups chopped yellow onions (from 1 onion)
4 cups unsalted chicken stock

1 cup salsa verde

Steps:

  • Sprinkle the pork evenly with the cumin, salt, and black pepper. Heat the oil in a large skillet over medium-high. Add half of the pork to the skillet; cook, stirring occasionally, until golden brown, about 4 minutes. Transfer to a 5- to 6-quart slow cooker. Repeat the procedure with the remaining pork.
  • Add the poblano chiles and onions to the skillet. Cook, stirring often, until the vegetables are almost tender and lightly caramelized, about 5 minutes. Add 1/2 cup of the stock to the skillet. Cook 1 minute, stirring and scraping to loosen the browned bits from the bottom of the skillet; transfer to the slow cooker. Stir in the hominy, pinto beans, salsa verde, and remaining 3 1/2 cups stock. Cover and cook on LOW until the pork is tender, 7 to 8 hours. Skim the fat from the surface of the soup. 4 dried ancho chilies
4 dried guajillo or pasilla chilies
2 tablespoons canola oil, divided
1-1/2 cups boiling water
2 pounds boneless pork, cut into 1-inch cubes
1/2 cup chopped onion
4 garlic cloves, minced
3 cups chicken broth
2 cans (29 ounces each) hominy, rinsed and drained
1-1/2 teaspoons dried Mexican oregano
1 teaspoon salt
Optional toppings: lime wedges, sliced radishes, diced avocado and chopped onion

Steps:

  • In a Dutch oven, saute chilies in 1 tablespoon oil for 1-2 minutes or until heated through, pressing with a spatula (do not brown). Using a slotted spoon, transfer chilies tn a bowl; add boiling water. Soak for 20 minutes or until softened; remove stems and seeds, reserving water., In the Dutch oven, brown pork in remaining oil in batches, sauteing onion and garlic with the last batch of pork. Return pork to pan and add broth. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until meat is tender., Transfer chilies and soaking liquid to a blender; cover and process until smooth. Strain through a fine strainer, reserving pulp and discarding skins. Add pulp to pork mixture. Stir in the hominy, oregano and salt. Cover and simmer for 20 minutes. Serve with toppings of your choice.

4 -5 lemons, quartered
10 -12 tostadas
1 teaspoon dried oregano, crushed

Steps:

  • In large stock pot add enough water to cover chicken.
  • Let it come to a boil and simmer for approximately 30-40 minutes, making sure it doesn't dry out, adding water as needed, keeping it in a soup consistency.
