Simple Strawberry Cobbler image

Not only simple to prepare, but delicious as well. Serve with whipped cream or vanilla ice cream, if desired.

4 cups strawberries, cleaned and sliced
1 cup all-purpose flour
1/2 teaspoon baking powder
1 cup sugar
1 egg, beaten
1/4 cup butter, in cubes

Steps:

  • Pre-heat oven to 375°F.
  • Spread the sliced strawberries evenly in an 8 or 9 inch square baking dish.
  • In a medium sized bowl, mix together the flour, baking powder and sugar.
  • Add the egg, and mix (a fork works best) till crumbly and the dry ingredients are completely incorporated.
  • Spread this over the berries.
  • Dot with the butter cubes.
  • Bake for 45-50 minutes, until the top is golden and the berries are bubbling.
  • Cool slightly before serving.

  • Pour pie filling into a greased 13x9-in. baking dish. Bake at 350° for 5-7 minutes or until heated through. , Meanwhile, in a small bowl, cream butter and cream cheese until light and fluffy. 1/3 cup strawberry jam
1/4 cup cornstarch
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
2 pounds strawberries, hulled and quartered
1 3/4 cups all-purpose flour (see Cook's Note)
1/4 cup plus 2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
6 tablespoons cold unsalted butter, diced
3/4 cup plus 2 tablespoons cold heavy cream
1 teaspoon vanilla extract
Vanilla ice cream for serving

Steps:

  • For the filling: Position a rack in the center of the oven and preheat to 375 degrees F. Whisk together the jam, cornstarch, sugar, lemon juice and 2 tablespoons water in a large bowl until well combined. Add the strawberries and toss gently to coat evenly. Transfer the mixture to a 2-quart baking or gratin dish, using a spatula or the back of a large spoon to gently pack the fruit into an even layer. Set aside.
  • For the topping: Pulse together the flour, 1/4 cup of the sugar, baking powder, and salt in a food processor. Add the butter and pulse until the mixture resembles coarse meal. Add 3/4 cup of the cream and the vanilla and pulse until the dough just starts to come together. Do not over mix.
  • Spread the dough evenly over the strawberries, drizzle with the remaining 2 tablespoons cream and sprinkle with the remaining 2 tablespoons sugar.
  • Place the cobbler on a baking sheet and bake until the topping is lightly browned and the fruit is bubbling, about 1 hour. Let the cobbler cool completely before serving, 2 to 3 hours. Serve with vanilla ice cream.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray the bottom of a 9x13-inch cake pan with nonstick spray.

1 cup water
3 cups strawberries, hulled
2 tablespoons butter, diced
1 cup all-purpose flour

½ cup heavy whipping cream

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Butter a 2-quart baking dish.
  • Combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thick and hot. Stir in strawberries, and remove from heat. Pour mixture into the baking dish, and dot with 2 tablespoons butter.

Fresh strawberries make this easy cobbler wonderful. It's a light and refreshing summer dessert. The crust is sweet and crunchy. When combined with the macerated strawberries, it's a wonderful bite. Add a scoop of vanilla ice cream for a simple strawberry dessert.

PREPARING THE BERRIES
1 pound(s) fresh strawberries, hulled and quartered
1/2 cup(s) granulated white sugar
1/2 cup(s) water
COBBLER CRUST
1/4 cup(s) butter (half of a stick/softened)
1 cup(s) granulated sugar
1 cup(s) all-purpose flour
2 teaspoon(s) baking powder
1/8 teaspoon(s) salt
1/2 cup(s) whole milk (reduced fat/skimmed milks just aren't as tasty)
1 teaspoon(s) good quality vanilla
1/4 cup(s) reserved strawberry juice

Steps:

  • Preparing the berries: clean/hull/quarter the strawberries.
  • Add sugar and water. Allow berries to soften and release juice for 20 minutes or until soft & yummy. Reserve 1/4 cup of released juice (you'll need it in a bit).
  • Cream together softened butter and sugar.
  • Sift together flour/baking powder/salt.
  • Mix milk and vanilla together in a separate measuring cup.
  • Alternating between wet and dry (I usually do it in halves), add to creamed butter/sugar mixture. Blend until all is incorporated and forms a thick batter.
  • Spray the inside of a 9x9 baking pan with a non-stick spray of your choice. Spread the batter into the pan (it doesn't have to even, just make sure it goes corner to corner and edge to edge).
  • Pour strawberries on top of the batter and spread them out a bit (don't mush them in, just layer them). Add the reserved strawberry juice.
  • Bake in a 375 degree oven for 45 minutes until the crust is golden brown and delicious. Don't worry if the browning isn't even... this is a cobbler, not cake.
  • Remove and allow to cool a bit. This is the yummiest served warm with whipped cream or vanilla ice cream.
