3 pints fresh strawberries
½ cup white sugar
2 ¼ cups all-purpose flour
4 teaspoons baking powder
2 tablespoons white sugar
¼ teaspoon salt
⅓ cup shortening
1 egg
⅔ cup milk
2 cups whipped heavy cream

Steps:

  • Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside.
  • Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan.
  • In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined.
  • Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack.
  • Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream.

2 cups all-purpose flour (see Cook's Note)
3 tablespoons sugar, plus more for sprinkling
1 tablespoon baking powder
Fine salt
4 tablespoons cold unsalted butter, cut into small pieces
1 1/3 cups heavy cream, plus more for brushing
1 large egg
1/4 cup honey
One 16-ounce container strawberries, trimmed and chopped (about 3 cups)
1/3 cup mint leaves, torn, plus more for garnish

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  • Whisk together the flour, 2 tablespoons of the sugar, the baking powder and 1/2 teaspoon salt in a medium bowl. Add the butter and work it into the flour, using your fingers or a pastry cutter, until the butter pieces are the size of small peas.
  • Whisk together 1/3 cup of the cream with the egg and 1/3 cup water in a small bowl. Add to the dry mixture and stir with a wooden spoon until a stiff batter forms. Drop 6 mounds onto the prepared baking sheet, leaving about 2 inches between each biscuit. Brush with a bit of cream and sprinkle with sugar. Bake until golden brown, about 25 minutes. Cool on the baking sheet.
  • While the biscuits bake and cool, combine the honey with 1/3 cup water and a pinch of salt in a small saucepot. Gently simmer, stirring, over medium heat until the honey is dissolved and the mixture is slightly thickened, about 5 minutes. Cool, and then toss in a medium bowl with the strawberries and mint. If time allows, set aside for at least 30 minutes to allow the strawberries to release their juices.
  • To assemble, whip the remaining 1 cup cream with the remaining 1 tablespoon sugar to soft peaks in a medium bowl. Split each biscuit and place the bottom half on a plate. Top evenly with the berries and accumulated juices and then the whipped cream. Place the top of the biscuit on the shortcake and garnish with fresh mint.

1/2 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, cut into 1-inch cubes and frozen
1 pound strawberries, hulled and sliced
1/4 cup packed light brown sugar
1 cup heavy cream
2 tablespoons sour cream
1 teaspoon pure vanilla extract

Steps:

  • For the shortcakes: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Whisk the heavy cream, sour cream and vanilla in a small bowl; refrigerate until ready to use. Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. Add the butter; pulse until the mixture looks like fine meal. Pour in the chilled heavy cream mixture and pulse until just combined.

Easy & Elegant Strawberry Shortcake image

I love strawberry shortcake but sometimes you don't want to bake homemade sweet biscuits or have all the fat of whipping cream!! I created this quick strawberry shortcake with a yummy store-bought pound cake and I sweetened and flavored some Greek yogurt for the topping! Easy and good!

1 lb fresh strawberries, sliced
3 teaspoons sugar
2 teaspoons Grand Marnier
1 lb store-bought butter creme cake (or pound cake)
1 cup Greek yogurt
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
2 teaspoons sugar
1 teaspoon Grand Marnier
1/2 teaspoon limoncello (optional)
1/2 teaspoon crystallized candied ginger (optional)

Steps:

  • Mix the sliced strawberries with the sugar and Grand Marnier then set aside in the fridge for a few hours to let the flavors meld and a sweet juice to form.
  • Mix together the yogurt with the nutmeg, cinnamon, sugar, Grand Marnier, and Limoncello. Set aside in the fridge until ready to serve your dessert.
  • Serve the cake with the strawberries and juice poured over and top with a dollop of the yogurt cream and a sprinkle of candied ginger.

This is so simple to throw together for a quick summer dessert. Tastes like a combination of strawberry shortcake and cheesecake, while being very light tasting at the same time. I have also made this with fat free cream cheese and "lite" cool whip with great results.

1 package Pillsbury sugar cookie dough (tube)
8 ounces cream cheese
8 ounces Cool Whip
1 cup powdered sugar
2 packages strawberry glaze
2 lbs fresh strawberries, sliced

Steps:

  • Slice sugar cookie dough.
  • Place them on a cookie sheet, edge to edge.
  • Bake as directed on the package.
  • This will bake together to form a solid cookie crust.
  • Mix cream cheese, cool whip and powdered sugar until smooth.
  • Spread over the cooled cookie crust.
  • Mix glaze and berries together and spread over cream cheese layer.
