FRENCH FRUIT TART
A vibrant topping of berries and currants contrasts with the vanilla and sour-cream custard filling in this gorgeous French tart. There's a secret ingredient: White chocolate, it's melted and brushed onto the baked crust before the tart is filled with custard.

Steps:
- Crust: Pulse flour, sugar, and salt in a food processor to combine. Add butter; pulse until pea-size lumps remain. Stir together yolks and 2 tablespoons ice-cold water; drizzle over flour mixture, pulsing just until dough holds together when pressed between your fingers. (If still too dry and crumbly, add more water, 1 teaspoon at a time.) Form into a disk and wrap tightly in plastic; chill until firm, at least 1 hour and up to 1 day, or freeze up to 1 month.
- Preheat oven to 350 degrees. On a lightly floured surface, roll out dough to an approximately 12-inch round. Transfer to a 9-inch round fluted tart pan, gently pressing dough into edges. Run a rolling pin over top of pan to remove excess dough (patch any tears with dough scraps, if necessary). Line dough with parchment and fill with pie weights, dried beans, or uncooked rice.
- Bake until crust is dry, 40 to 45 minutes. Remove weights and parchment; return to oven and bake until golden and crisp, about 15 minutes more. Transfer to a wire rack; let cool completely. Brush bottom and sides evenly with chocolate; refrigerate until set, about 10 minutes.
- Custard: Meanwhile, whisk together sugar, cornstarch, and salt in a saucepan. Add milk and egg yolks; whisk until smooth. Add butter; cook over medium heat, whisking occasionally, until mixture comes to a boil. Continue to cook, whisking, until mixture has the texture of thick pudding, 1 to 2 minutes. Remove from heat; whisk in vanilla. Strain mixture through a fine-mesh sieve into a bowl; cover surface with plastic wrap. Let cool completely. Whisk in sour cream until combined; transfer to crust and refrigerate until custard is set, at least 1 hour or, loosely covered, up to 1 day.
- Topping: In a small saucepan or a microwave, warm apricot jam with 2 teaspoons water just until melted (if jam is chunky, strain through a sieve). Drizzle over berries; gently stir to evenly coat. Spoon mixture over custard; serve.
MIXED BERRY FRENCH TOAST RECIPE BY TASTY

Steps:
- Whisk eggs, cinnamon, vanilla and milk together in medium-large bowl to create egg wash.
- Dunk bread in egg wash.
- Melt butter in a skillet on medium-low heat and cook bread for 2-3 minutes.
- Mix berries, sugar, and lemon juice in medium pan over low heat crushing and stirring berries until they form a thick sauce.
- Lay out slices and spread compote in between each slice then on top. Garnish with confectioners sugar (optional).

- Place banana slices on two slices of toast. Sprinkle each with 1/2 teaspoon confectioners' sugar. Top with strawberries and remaining toast. In a shallow bowl, whisk the egg, milk, vanilla and cinnamon. Dip toast in egg mixture, coating both sides., In a large skillet, melt butter over medium heat; cook toast for 2-4 minutes on each side or until golden brown. Sprinkle with remaining confectioners' sugar. Serve with maple syrup.

BAKED FRENCH TOAST WITH FRUIT
Recipe from Penzey's Spices catalog. Yummy! --Overnight soaking of the bread is what causes the dish to puff up and be very creamy when baked. If you don't have overnight, at least let it soak a few hours.

- Lightly grease 9x13 pan.
- Cut the bread in 3/4-inch slices.
- Layer in the pan, fitting snugly. In a bowl, lightly beat the eggs, sugar and vanilla.
- Stir in the milk.
- Pour over bread; turn bread slices over.
- Cover and refrigerate overnight.
- In the morning, pre-heat the oven to 375 degrees.
- In a bowl, combine the flour, brown sugar and cinnamon.
- Cut the butter in bits, add to the mix and rub together to make a crumb topping.
- Remove the pan from the fridge, carefully turn the bread pieces over and scatter mixed berries evenly over the bread.
- Sprinkle with crumb topping.
- Bake at 375 degrees for 35-40 minutes, until puffy and golden.

- Preheat an oven to 250 degrees F (120 degrees C).
- Combine the thawed strawberries with their juice and the blueberries in a bowl; set aside. Beat together the softened cream cheese and confectioner's sugar until smooth; set aside. Whisk the milk, eggs, vanilla, and cinnamon in a shallow bowl.
- Melt butter over medium heat in a large skillet or griddle. Dip bread into egg mixture, coating thoroughly. Cook until well-browned on both sides, about 5 minutes. Place cooked slices on baking sheet and place in oven to keep warm until ready to serve.

FRUIT STUFFED FRENCH TOAST
This delicious, easy to make recipe is an adaptation to an original recipe found in "MOOSEWOOD RESTAURANT COOKS AT HOME" I bake it off to crisp up the outside and heat up the filling. BE CAREFUL NOT TO OVERBAKE!

Steps:
- Pre-heat oven to 350 degrees F.
- Cut a pocket in each slice of bread by using a serrated knife to cut to about a half inch of the sides& bottom of each slice.
- Mix together the fruit spread& cheese& fill pockets with a tbsp of the fruit/cheese mixture each.
- Mix the eggs, milk, vanilla, cinnamon& nutmeg together in a bowl or baking pan large enough to hold all the slices in a single layer.
- Soak the slices on one side for a few minutes, repeat once with the other side.
- Heat a large fry pan on med/low heat and add 1 tsp each of the butter& oil.
- Cook the bread two at a time for approx. 5-7 minutes; turn the slices a number of times until both sides are evenly browned.
- Place on baking sheet in oven for 2-3 minutes to finish. DON'T OVERBAKE!
- Meanwhile, repeat steps 5, 6 & 7 with the remaining slices.
- Serve warm& top with pure maple syrup. These are also delicious plain.
FRUIT-FILLED FRENCH TOAST WRAPS
Steps:
- In a small bowl, combine yogurt and banana. In a shallow bowl, whisk egg, milk, cinnamon and nutmeg. Dip both sides of each tortilla in egg mixture. In a skillet, heat butter over medium-high heat. Add tortilla; cook until golden brown, 1-2 minutes on each side., Spoon yogurt mixture down center of tortillas; top with strawberries, blueberries and granola. Roll up each tortilla. If desired, top with additional yogurt, berries and granola.
