Steps:
- In a food processor, pulse flour, chives and suet (or margarine) until fat is incorporated, about 9 times. Continue pulsing and add water slowly, till dough forms clumps and pulls away from side of bowl.
- Knead the dough on a floured board till soft. Make a thick disk about 6 inches in diameter.
- Cut the disk into 6 equal portions, form smaller disks, wrap in plastic and chill for at least 2 hours before using.

BASIC SUET CRUST PASTRY
These quantities will be enough to top a 1 1/2 pint pie dish. for a 2 1/2 pint use 12 oz of self raising flour and 6 oz suet.

- sift the flour into abowl, then sprinkle the suet in, season if desired and just mix it in lightly with your hands to distribute it evenly.
- Now sprinkle in some cold water (you'll find you need more for this pastry than for shortcrust).
- Begin mixing with around bladed knife, and then use your hands at the end to bring it all together to a smooth elastic dough that leaves the bowl clean.
- suet crust should be left for 5 minutes, then rolled out immediately. You should always roll it out more quickly than shorcrust, approximately 1/2 inch thick.

SAVORY AND SWEET SHORT PASTRY
Oh, go on. Give it a go! I know pastry is the nemesis of the average person's baking repertoire, but do try these recipes, even if just the once. This pastry is crumbly, buttery, and completely lovely. The ingredients differ slightly for the savory and sweet versions, so follow the list for the one you need, but the method is virtually the same.

- Put the flour and butter in a food processor and blitz to bread crumbs. If using your hands, rub the butter and flour together until the mixture resembles fine bread crumbs. Add the egg yolks (and if making sweet pastry, the sugar) and a pinch of salt and stir together with a knife. Squidge the mixture together into a ball. If the pastry feels very dry add the water (or if making sweet pastry, the cream or milk), but try and get by without for a more tender pastry.
- Once the pastry is all squidged together, pop it in the refrigerator to rest for 30 minutes.
- After 30 minutes, remove it from the refrigerator and let it warm up a little (if you use it straight from the refrigerator and try to roll it out, the pastry will just be a hopeless crumbly mess). Roll the pastry out on a lightly floured board and use as required.
FLAKY SWEET PASTRY (PATE SUCREE)

- Place 1 cup of the flour, the butter, sugar and salt, into a food processor fitted with the metal blade. Process 10 seconds, until the mixture resembles coarse crumbs. Add the ice water and pulse 10 to 15 times, just until the mixture begins to come together (do not let it form a ball). Empty the dough out of the machine onto a floured work surface and gather together by pressing lightly. If the dough seems too sticky, gently incorporate more flour. Shape into a ball, then flatten into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour before proceeding with recipe.
THE BRITISH BULLDOG! TRADITIONAL LAYERED BEEF STEAK SUET PUDDING
A traditional British steamed savoury pudding - fluffy dumping style suet pastry layered with tender and succulent braised beef steak - pure comfort food. Once you have prepared this, just let it steam quietly away in the background, whilst you get on with other things. Unmould this pudding at the table and serve it immediately with extra gravy, steamed seasonal greens and mounds of fluffy mashed potatoes. There is an urban myth in the UK, that men ask woman who can cook this delicious savoury pudding to marry them........be warned.......be careful! Preparation time includes the cooking of the beef steak before the pudding is made and steamed. (This recipe comes from my family's recipe collection - it was cooked regularly by my grandmother and my mum; the original recipe is written in pencil on a scrap of paper.........it was like finding real treasure!)

- (Cook the meat 2 hours prior to steaming the assembled pudding.).
- Filling: Dip meat in seasoned flour and fry lightly. Add onions and fry until golden. Place in casserole with stock, tomato puree and herbs and cook for 2 hours. Cool.
- Pastry: Put flour, suet and seasoning in a bowl. Add sufficient water to form a firm but soft dough.
- Pudding: Roll out the suet pastry and using assorted sizes of saucers, cut out rounds to fit the pudding bowl diameter, starting off small and getting bigger!
- In a well buttered pudding basin, start with a small round of suet pastry and then add some stewed beef, then a layer of suet pastry and then the beef -- carry on in this way until all the pastry and beef is used up - the last layer should be suet pastry. Cover with buttered greasproof paper and then aluminium foil.
- Steam for 2 hours, making sure there is always plenty of water. (Always top up the steamer with BOILING water - adding cold water will make the pudding heavy.).
- Serve with fresh seasonal greens and vegetables and mashed or steamed potatoes.

FLAKY SWEET PASTRY

- Place one cup of flour, the butter, sugar and salt in the bowl of a food processor fitted with a metal blade. Process just until the mixture resembles coarse crumbs, about 10 seconds. Add the water and pulse just until the pastry begins to hold together, about six to eight times. Do not let it form a ball. Turn the pastry out onto waxed paper and flatten the dough into a circle. If the dough is excessively sticky, sprinkle it with several tablespoons of flour. Wrap in waxed paper and refrigerate for at least one hour.
- On a lightly floured surface, carefully roll out the dough to a 12-inch circle and transfer the dough to a 10 1/2-inch tart pan, preferably black tin, with a removable bottom. With your fingertips, carefully press the pastry into the pan and up the side, trying not to stretch it. Trim the overhang, leaving about a one-inch edge. Tuck this overhang inside the pan, pressing gently against the side to create a sturdy, double-sided shell. If you build the pastry a bit higher than the height of the pan, you have less problem with shrinkage. Prick the bottom of the shell with the tines of a fork and chill for at least 20 minutes (or up to 24 hours, well wrapped).
- Preheat the oven to 375 degrees.
- Line the shell loosely with heavy-duty foil, pressing well into the edges so the pastry does not shrink while baking. Fill with weights of rice or dried beans - making sure you get all the way into the edges - to prevent shrinkage.
- For a partially baked shell, bake just until the pastry begins to brown around the edges and seems firm enough to stand up by itself, about 20 minutes. Remove the foil and weights and continue baking until it is thoroughly, lightly and evenly brown, about 10 more minutes. (For a fully baked shell, bake the pastry for 30 minutes after removing the foil and weights.)
