QUICK AND EASY GARLIC SAUCE



Quick and Easy Garlic Sauce image

Instead of buying a bottle that will sit in the fridge for ages and takes up space. I find it easier to make my own garlic sauce for when I eat falafel. It is a lot cheaper as well. Also you can adapt it to your own taste. it is very easy to make and takes up no time.

1 garlic clove, crushed
1 tablespoon mayonnaise (low fat)
1 tablespoon natural yogurt (low fat)
1 teaspoon dried parsley or 1 teaspoon dill
freshly ground black pepper

Steps:

  • Mix all the ingredients together in a small bowl and it is ready to serve.
  • The more garlic you use the sharper the sauce gets.
  • If you make a larger quantity I would advise you to use fresh parsley (this also helps against the inevitable garlic breath).

2 small onions, chopped
1/2 cup butter, cubed
3 garlic cloves, minced
6 tablespoons all-purpose flour
6 cups chicken broth
1/4 to 1/2 teaspoon cayenne pepper

Steps:

  • In a large saucepan, saute onions in butter until tender, about 2-3 minutes. Add garlic; cook 1 minute longer. Stir in flour until blended. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; simmer, uncovered, for 15 minutes. Stir in cayenne.

1 clove garlic, minced (and I mean LARGE)
2 teaspoons extra virgin olive oil
3 ounces tomatoes, diced (about 1/2 medium tomato)
1 (14 1/2 ounce) can chicken broth
1 egg
2 tablespoons parmesan cheese, grated
salt and pepper, to taste
hot sauce, to taste (I use Tobasco Chipotle)

Steps:

  • In a small saucepan over medium-low heat, saute the garlic until aromatic.
  • Add the tomatoes, and saute for another minute or so, then add the broth.
  • Scramble the egg, parmesean cheese, hot sauce, salt and pepper in a serving bowl.
  • (I just use the bowl I'm going to eat out of; less clean up.) When the broth comes to a boil, add the egg mixture while stirring.
  • Remove from heat, place in a bowl, top with fresh ground pepper, and enjoy.

  • Cook your pasta in the usual way.
  • The amount depends on how hungry you are.
  • In a small heavy pan (or very carefully in a light one) heat the oil with the garlic the black pepper and the salt.
  • "fry"the garlic until it has gone very slightly golden.
  • Turn off the heat and let it stand until the pasta is cooked.
  • Mix the pasta with the oil and garlic and enjoy.
