Slow Cooker Thai Beef Curry image

Serve this Thai red curry with beef over brown rice or brown rice noodles.

1 tablespoon olive oil
2 pounds beef stew meat
½ cup beef broth
¼ cup Thai red curry paste
1 yellow onion, sliced
1 tablespoon light brown sugar
2 teaspoons fish sauce
8 ounces green beans, halved
¾ cup coconut milk, well shaken
1 (9 ounce) package fresh spinach
½ cup chopped fresh cilantro
3 tablespoons lime juice

Steps:

  • Heat a large skillet over medium-high heat. Pour oil carefully into the hot skillet. Add beef in 2 batches and cook until browned, about 3 minutes per side. Place browned beef into the bottom of a slow cooker.
  • Pour beef broth into the skillet, scraping up browned bits. Transfer broth mixture to the slow cooker and add curry paste, onion, brown sugar, and fish sauce. Stir to combine. Cover and cook on Low for 8 hours.
  • Add green beans and coconut milk to the slow cooker. Increase temperature to High and cook for 12 minutes. Turn off heat and stir in spinach, cilantro, and lime juice.

A spicy, authentic Thai green curry for your slow cooker that's ideal for taking the last-minute stress out of entertaining

2-3 tbsp groundnut oil
2kg beef short ribs (bone-in ribs left whole), or brisket, cut into large chunks
large bunch coriander
2 lemongrass stalks, 1 bashed, 1 roughly chopped
3 garlic cloves , chopped
1-2 green chillies , roughly chopped, deseeded if you like
2cm-piece galangal or ginger, peeled and chopped
50ml rice wine vinegar
50ml fish sauce
2 tbsp palm or light brown sugar
400g can coconut milk
2 star anise
6 lime leaves
juice 2 limes , plus wedges to serve

Steps:

  • Heat a little of the oil in a large pan and brown the beef in batches, removing to a plate after, reserving any juices. If your slow cooker has a browning function, use this instead. Meanwhile, in a mini chopper or food processor, whizz half the coriander, the chopped lemongrass, garlic, chillies and galangal with the rest of the oil until you have a rough paste.
  • Turn the slow cooker to High. Heat the paste for a few mins, then add the beef and all the remaining ingredients, apart from the remaining coriander and lime juice. Turn slow cooker to Low and cook for 8 hrs, or until the meat is falling off the bone.
  • If using beef ribs, remove bones from the beef, then shred the meat with 2 forks. If the sauce is too thin, strain it off and boil it to reduce. Stir in the remaining coriander and lime juice, then season with more fish sauce or sugar.

Here is a yummy red Thai curry recipe, it is also good made with lamb. I used Thai Kitchen brand, red curry paste. I do have a recipe for making your own from scratch which is great, and you can store the paste for up to 4 weeks in the fridge. As I didn't have any on hand I used a store bought one to save time and I have to say Thai Kitchen does do a good paste.

2 tablespoons peanut oil
1 brown onion, sliced
3 garlic cloves
2 teaspoons ginger
2 teaspoons lemongrass, sliced thinly
2 tablespoons red curry paste
1/2 teaspoon beef bouillon granules, concentrate (cube, powder, paste etc..)
1/2 cup water
3/4 cup coconut milk
1 teaspoon fish sauce
1 tablespoon lime juice
200 ml coconut cream
1 teaspoon sugar
1/4 cup fresh coriander, Chopped

Steps:

  • Heat half the oil in a large fry pan and cook beef in batches until browned all over, set to one side and wipe pan clean.
  • Heat the remaining oil in the same pan, cook onion and garlic until onion softens, add ginger, lemon grass and paste cook until fragrant. Return beef to pan with water, stock, sugar and coconut milk.
  • Bring to boil, reduce heat and simmer covered for 1 hour. Uncover and cook for a further 45 Minutes or until beef is tender.
  • Finally add the lime juice, fish sauce, coconut cream and coriander, cook stirring until heated through.
  • Serve with Thai fragrant rice such as Jasmine.

½ yellow onion, sliced thin
½ green bell pepper, sliced into 1/4-inch strips
½ red bell pepper, sliced into 1/4-inch strips
1 (14 ounce) can coconut milk
3 tablespoons lime juice
2 tablespoons fish sauce
2 tablespoons red curry paste, or more to taste
1 tablespoon white sugar
1 tablespoon soy sauce

Steps:

  • Heat peanut oil over medium heat in a large wok until it sizzles. Add onion and bell peppers. Stir-fry until tender, 5 to 7 minutes Transfer to a bowl.
  • Pour coconut milk into the wok. Reduce heat to low and simmer 3 to 5 minutes. Add lime juice, fish sauce, curry paste, sugar, soy sauce, peanut sauce, Worcestershire, turmeric, garlic salt, curry powder, garam masala, and chile-garlic sauce. Stir to combine and adjust to taste.
  • Increase heat to medium; stir steak and bell pepper-onion mixture into the wok and cook until mixture has thickened and reduced and steak is firm and hot in the center, about 10 minutes. Remove from heat and top with peanuts.

After having my first and most delicious Thai meal, I was on the hunt for recipes to make at home. I found this recipe in a beautiful book called, appropriately, "Beautiful Thailand". As with all curry dishes you will want to adjust the heat to your tastes. I find 1 tablespoon of curry paste to be more than sufficient to clear a sinus cold so you may want to start with 1/2 tablespoon. Have fun!

90 ml coconut milk
2 tablespoons fish sauce
2 tablespoons sugar
6 kaffir lime leaves
1 tablespoon oil
2 tablespoons panang curry paste (use only 1 Tbsp. or less for less heat)
250 g beef sirloin, sliced thinly
1/8 cup green pepper, sliced
1/8 cup red pepper, sliced
1/4 cup onion, sliced
2 tablespoons roasted peanuts, chopped fine (or cashews)

Steps:

  • Mix together the sauce ingredients and set aside.
  • Heat a large skillet and add the oil and curry paste. Cook for 1 minute on low heat.
  • Return the temperature to high and saute the beef, then add the sauce. Cook until the sauce is thick, about 5 minutes.
  • Add the sliced peppers , onions and ground peanuts. Cook for 2 minutes more.
  • Serve over Jasmine rice. (P.S. Don't eat the lime leaves).

  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.) If your grill has a thermometer, aim to keep the temperature at about 350 degrees F throughout grilling.Set the flank steak on a cutting board. Starting at the thin, narrow end of the steak, slice it in half horizontally to within 2 inches of the opposite wide end. Open it up like a book so you have 1 long piece. Pound the steak with a mallet to an even thickness of about 1/2 inch. Cover the steak with the curry paste and season with 1 teaspoon salt. Sprinkle with the peanuts, leaving a 1-inch border along the edges. Arrange half of the cilantro and scallion greens in a line, followed by half of the tomatoes and then half of the scallion whites. Repeat with the remaining ingredients. Roll up the steak like a jelly roll, starting at the short end. Tie the roll closed around the circumference with butcher's twine at 2-inch intervals. Tie one more piece of twine lengthwise around the meat. Sprinkle the outside of the meat with salt and pepper.Put the steak on direct heat and cook, turning, to brown all 4 sides, about 2 minutes per side. Move the steak to indirect heat, cover and cook, turning occasionally, until the very center reads 115 degrees F on an instant-read thermometer for a steak that is well done on the outside and medium rare in the center, 25 to 30 minutes more. (Test frequently; the time will vary based on the temperature of your grill.) Let the steak rest 5 to 6 minutes.Untie the steak and cut it into thin slices. Serve with the lettuce leaves on the side.
