I have had this many times at the Rainforest Cafe and finally have decided to try and copycat it. Well, I finally think that I have. It is alot of ice cream, brownie, and sauces, but it is ohhhh sooooo goooodddd.....

Ingredients

4 already made chocolate brownies, cut into 8 inch pieces
12 scoops vanilla ice cream (or more)
1 can whipped cream
3 tablespoons caramel sauce
3 tablespoons hot fudge, warmed and kept warmed

Steps:

On a chilled large round plate or platter arrange the scoops of ice cream so that they make a pile in the center of the plate.
You may use more ice cream or less, up to you.
Next, arrange the brownies along the sides of the ice cream so that it looks like a volcano shape.
Next, drizzle the top and down the sides with the 2 sauces.
Finally, add the whipped cream directly down the center of the volcano and then all over the sides.
Drizzle with more sauce and stick a sparkler or streamer in the middle.
Make sure you yell VOLCANO when you serve it.

I am a sucker for lemonade, but the Rainforest Cafe Strawberry Lemonade took my breath away. It was so sweet and delicious, and the perfect amount of tartness. You will love this simple and delicious recipe.

Ingredients

1 pound strawberries (washed & diced)
6 lemons (juiced and set aside)
¾ cup sugar
6 cups water

Steps:

In a small sauce pan put in your strawberries, sugar, 1 cup of water and a rind of 1 of the lemons.
Stirring constantly, cook on medium high heat until it boils. Remove from stove once it starts boiling.
Pour the strawberry mixture in a pitcher.
Mix in 5 more cups of water and add your lemon juice. Stir until well combined.
Taste and add any more sugar, water or lemon juice if needed.
Put in the refrigerator and serve cold.

When chicken breast is ready to be prepared, rinse lightly and drain. Place coconut, cornstarch, and flour in a bowl and mix well. In separate bowl place beaten eggs and add water, blend well. Have oil hot and ready to fry chicken breast.
Dip chicken breast in egg wash and then place chicken breast in coconut mixture, coating well. Carefully place chicken in hot oil and cook until lightly golden. Remove and place on a paper towel. When frying chicken does not crowd and keeps a check on the oil so it does not burn.
The coconut chicken was served with the honey mustard on top of the chicken pieces, we have elected to serve the sauce on the side. For presentation and tasty side compliment.
