Steps:
- Preheat oven to 375° Farenheit.
- Lightly spray a 10" oven-safe skillet or baking dish with cooking spray.
- Add salsa and beans and spinach to the skillet, stirring together.
- Sprinkle evenly with the cheese.
- Make four depressions, evenly spaced, with the back of a spoon, then add an egg to each depression.
- Wrap tortillas in foil and put them in the oven.
- Bake eggs 15-20 minutes, until egg whites are cooked but yolks are still jiggly.
- Serve immediately on hot tortillas with cilantro, avocado, lime wedges and hot sauce.

- Preheat the oven broiler. For the quick hot sauce: Combine all ingredients, and simmer for 10 minutes adding water if needed for desired consistency. Keep warm while preparing the eggs. For the eggs: Place a small amount of oil (just enough to coat the bottom) in a large skillet over medium heat. Add the tortillas one at a time and cook on both sides until just browned but not crisp. Remove from the pan and place on paper towels. Add more oil if needed to the skillet. Crack the eggs into the skillet and fry until cooked as desired. While the eggs are cooking place the tortillas on a baking sheet. When the eggs are ready, top each tortilla with a fried egg. Add cheese, chopped onion, and green chiles. Spoon the warm hot sauce over the top as desired. Place the baking sheet under the broiler and cook just until the cheese and sauce are bubbly. Serve immediately. cook's notes If you want to make this easier, use canned enchilada sauce instead of the homemade hot sauce. Just heat it and use as directed in the recipe.

- Heat oven to 450°F. Generously grease bottom and sides of 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In small bowl, stir Bisquick mix, taco seasoning mix and 1/3 cup milk until soft dough forms. Pat dough in bottom of baking dish. Bake 8 minutes. Cool 30 minutes.
- Heat oven to 350°F. In medium bowl, beat eggs, 3 cups milk, the roasted peppers and chiles with wire whisk or fork until blended. Pour over cooled crust.
- Cover with foil; bake 30 minutes. Uncover; bake 40 to 50 minutes longer or until knife inserted in center comes out clean. Sprinkle with cheese. Let stand 10 minutes before cutting.

BAKED EGGS WITH CANADIAN BACON, SPINACH, AND AGED CHEDDAR
Steps:
- Heat oven to 350 degrees F and arrange rack in middle. Butter 4 (6-ounce) ramekins and set aside.
- Melt 1 tablespoon butter in a large frying pan over medium heat. When it foams, add onion, season well with salt and freshly ground black pepper, and cook until softened, about 1 minute. Add spinach and cook until spinach is well wilted, about 2 minutes.
- Place ham on bottom of ramekins and top with spinach. Crack eggs into ramekins, place 1 tablespoon cream over each egg, and divide half of cheese evenly among ramekins.
- Put ramekins on a baking sheet and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, about 15 to 18 minutes.
- Meanwhile, spread remaining 2 tablespoons butter on 4 slices sourdough bread. Top with grated cheese and toast until golden brown. Serve eggs with toast.

- Preheat the oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.

- In a large skillet over medium heat, saute for 2 minutes shallots and baby carrots, stirring often. Add chicken breast, Hidden Valley Ranch Original Seasoning Mix, soy sauce, ginger, garlic, white wine, corn starch and sugar. Stirring often cook this mixture for about 7 to 8 minutes. Remove from heat and stir in green onions and spinach. Set aside to cool completely. This could be made the day or morning before.
- Preheat oven to 400 degrees.
- On the Egg Roll Wrapper package there is a diagram and instructions on how to assemble. If that isn't handy, here is my best description:.
- 1) Take one wrapper and place it on a work surface in front of you with one corner facing you.
- 2) In the middle put 1/4 cup of the cooled filling. Pull up the bottom corner and cover filling completely.
- 3) Bring both sides in to the middle. Wet the remaining end with water, using your finger and roll the roll forward towards the wet end and seal.
- 4) Place seam side down on a non stick sprayed baking sheet. Continue until all filling is used.
- Spray all the tops with non stick spray. Bake for 15-20 minutes until nicely browned.
- Mix sauce ingredients in a small bowl and dip, eat, dip, eat.
- Delicious!

- In large saucepan, combine all filling ingredients; mix well. Cook over medium heat until mixture is bubbly and thoroughly heated, stirring occasionally. Spoon into ungreased 13x9-inch (3 quart) baking dish.
- In medium saucepan, bring water to a boil. Remove from heat. Add milk. Stir in plain mashed potato mix and ranch dip; mix with fork until moistened. Let stand 1 minute. Add egg; blend well. Cool 5 minutes. Spoon or pipe potato mixture around edge of hot chicken mixture.
- Bake 25 to 30 minutes or until potatoes are set and light golden brown.
