Rutabaga and rice baked together in a casserole dish make a tasty side.

1 cup water
½ cup long-grain white rice
1 pound rutabaga, peeled and cut into 1 1/2 inch cubes
½ cup milk
1 tablespoon butter
¼ cup white sugar
1 teaspoon salt
⅛ teaspoon ground black pepper
1 dash ground nutmeg
2 eggs, separated

Steps:

  • Place the water into a saucepan, add the rice, and bring to a boil over medium-high heat. Stir once, cover, reduce heat to low; and simmer until all moisture is absorbed and rice is tender, about 20 minutes.
  • Meanwhile, place the rutabaga into a large pot, and fill with enough water to cover. Bring to a boil over medium-high heat, and cook until the rutabaga are tender and can be pierced with a fork, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
  • Drain the rutabaga, and place into a mixing bowl. Add the milk, butter, sugar, salt, pepper, and ground nutmeg. Beat or mash the rutabaga until smooth. Stir in the cooked rice, and beat in the egg yolks.
  • Beat the egg whites in a separate bowl until stiff peaks form. Fold gently into the rutabaga mixture. Spoon mixture into prepared casserole dish.
  • Bake in preheated oven until top is lightly browned, about 1 hour.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups quick-cooking oats
2 cups crisp rice cereal
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats, cereal and coconut., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 7-9 minutes. Remove from pans to wire racks to cool.

1 egg, beaten
1 banana, mashed
1 cup milk
1 teaspoon vanilla extract
6 tablespoons butter, melted
1/2 cup soft brown sugar
2 tablespoons corn syrup
2/3 cup boiling water
vanilla ice cream or softly whipped cream

Steps:

  • Preheat the oven to 350°F.
  • Sift the flour and baking and powder into a bowl. Add the sugar. Mix together the mashed banana, milk, butter, egg and vanilla extract. Pour into the dry ingredients and mix until well combined. Pour into a greased 9 inch pie dish and place on a baking sheet.
  • To make the topping, place the brown sugar, corn syrup and water in a small pot and bring to a boil. Drizzle the mixture carefully over the pudding, then bake for 30-40 minutes or until it feels slightly firm in the center.

2 ¼ cups flour
½ Tablespoon Baking powder
½ Tablespoon Baking Soda
½ Tablespoon Cinnamon
⅔ teaspoon salt
1 cup butter (softened to room temp)
1 cup brown sugar
1 cup sugar
2 eggs
⅔ Tablespoon vanilla
1 cup butterscotch chips
1 cup milk chocolate chips
2 cups quick oats
1 cup sweetened coconut
¾ cup pecans (chopped)

Steps:

  • Heat oven to 350 degrees. In a bowl combine flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • In a separate large bowl beat butter until smooth, and then add in brown sugar and sugar and mix well into the butter mixture.
  • Then add in eggs and vanilla.
  • Then add in the flour mixture from the other bowl into the creamy mixture and stir just until combined.
  • Fold in the butterscotch and chocolate chips, oats, coconut, and pecans.
  • Line your pan with parchment paper or a baking mat.
  • Roll dough into 1 1/2 inch balls and place on the lined pans.
  • Bake 9 to 11 minutes or until edges are lightly browned.
