GRILLED RASPBERRY CHICKEN
Steps:
- Rinse and pat dry chicken breasts with paper towels. Place in large zip-top bag. Add raspberries, vinaigrette, vodka, if using, and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.
- Preheat grill to medium-high and oil the grates.
- Place the chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries.

Steps:
- Spread 1 side of each bread slice with butter. Place 1 slice, buttered side down, in small skillet. On same bread slice, carefully spread Brie (it helps to slice it a bit). Sprinkle with blue cheese. Spread raspberry preserves on unbuttered side of second bread slice. Place slice, buttered side up, on cheese-topped slice.
- Cook over medium heat about 5 minutes or until bottom is golden brown. Carefully turn; press down lightly. Cook 2 to 3 minutes longer or until cheese is melted and bottom is golden brown.

- Spread half the butter over one side of bread slices. In a large skillet, toast bread, buttered side down, over medium-low heat until golden brown, 2-3 minutes., In a small bowl, combine cheddar, Monterey Jack and Gruyere cheeses. - First thinly slice enough brie to cover each slice of bread. You want to sandwich the raspberries between cheese to hold everything in place. Arrange the brie on one of the slices of bread.
- Then lightly chop the raspberries and spread them out over the cheese. Top the raspberries with another layer of brie and add the second slice of bread.
- Heat a skillet over medium low heat and add 1 teaspoon of butter. Once the butter melts, add the sandwich and cover the skillet. The brioche is so thick that you need to cover the skillet in order for the cheese to melt.
- After about 3 minutes the first side of the grilled cheese should be golden brown. At this point add the remaining butter to the skillet and flip the sandwich. Toast the second side of the bread, slice in half and eat immediately.
