RASPBERRY HABANERO JAM BEWARE HOT STUFF!
Hot Stuff! This recipe was inspired from Chef #64642's Molly53 Recipe #460931. This is good spread over brie wrapped in puff pastry and baked, served with crackers. Try it spread on a wrap with your favorite meats. Or a side for that yummy Recipe #82119 FYI: An easy way to mince the chili's is place in blender with some of the apple juice. Always use gloves to protect yourself from the heat!

Steps:
- Combine raspberries, chili`s, pectin, water, and lemon juice in an 8-quart non-stick pan.
- Bring to a boil over medium-high heat, stirring constantly.
- Add sugar all at once.
- Return mixture to a rolling boil, stirring constantly.
- Boil hard for 1 minute.
- Remove from heat.
- Ladle hot jam into hot jars, leaving a 1/4-inch headspace.
- Place lids and screw on bands fingertip-tight.
- Process in a boiling water bath for 10 minutes, adjusting processing time for elevation as necessary.
- Let rest for 12-24 hours.
- Label.

Sweet, hot BBQ sauce is great on pork and chicken. Amazing on shrimp.

- Combine blackberries, ketchup, blackberry jelly, sugar, raspberry balsamic vinegar, corn syrup, tomato paste, limeade concentrate, cider vinegar, salt, bourbon, garlic powder, liquid smoke, ginger, ground chipotle pepper, red pepper flakes, black pepper, teriyaki sauce, and hot pepper sauce in a large pot and bring to a simmer over medium-high heat.
- Reduce heat to medium-low and simmer blackberry mixture for 10 minutes. Add whole habanero peppers and continue to simmer until sauce is thickened, about 20 minutes more. Remove and discard habanero peppers.
- Pour barbecue sauce into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

RASPBERRY BARBECUE WINGS
I came up with this recipe when I got tired of the same old wings. These are baked with onion and garlic, then broiled and basted with a mixture of raspberry jam, barbecue sauce and jalapeno peppers. The sauce is also excellent on pork and is great for dipping. -Sandra Fisher, Missoula, Montana

- In a small bowl, combine barbecue sauce, jam, chopped onion, peppers, 1 teaspoon garlic, 1 teaspoon liquid smoke if desired and salt; mix well. Cover and refrigerate at least 2 hours., Preheat oven to 350°. Cut chicken wings into three sections; discard wing tip section. Place chicken wings in a greased 15x10x1-in. baking pan. Top with sliced onion and remaining garlic. Combine water and remaining liquid smoke if desired; pour over wings. Cover and bake at 30 minutes or until juices run clear., Transfer wings to a greased broiler pan; brush with sauce. Broil 4-6 in. from heat 20-25 minutes, turning and basting every 5 minutes or until wings are well coated.

- In a large saucepan, combine the jam, vinegar, soy sauce, garlic and pepper. Bring to a boil; boil for 1 minute. , Cut chicken wings into three sections; discard wing tips. Place wings in a large bowl; add half of the raspberry mixture and toss to coat. Cover and refrigerate for 4 hours. Cover and refrigerate remaining raspberry mixture., Line a 15x10x1-in. baking pan with foil and heavily grease the foil. Using a slotted spoon, place wings in pan. Discard marinade. Bake, uncovered, at 375° for 30 minutes, turning once. , Meanwhile, in a small saucepan, bring reserved raspberry mixture to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until thickened. Brush over wings. , Bake 20-25 minutes longer or until chicken juices run clear, turning and basting once.

RASPBERRY JALAPENO CHICKEN WINGS. SWEET & SPICY LIKE ANTONIO BANDERAS RECIPE - (4.4/5)

- Preheat your oven to 400°F. In a small saucepan on medium heat, place the seedless raspberry jam, honey and the small can of diced jalapenos. Stir to combine and let it sit in the saucepan on low to get all sticky, sweet and spicy. Just like Antonio. Take your large pot, and put in the half stick of butter and 1 tablespoon of Worcestershire Sauce and turn your stove up to just below high. Get that butter and Worcestershire all melted and hot. Once the butter is all melted, place just half (10) of your chicken drummies in the butter. I only do 10 at a time, cause you don't want them to get all crowded. With your tongs, get the chicken all coated with the butter. Leave them to saute for just about 5 minutes. You are not totally cooking them, just getting them warm and coating them with the butter mixture. Once they are all warm and coated, about 5 minutes, take the 10 drummies out and place them in a large bowl to hang out. Now take your other 10 drummies and with your tongs, place the last 10 in the pot with the butter and Worcestershire. Toss and do the same with those as you did the first 10. When those are done, place them in the large bowl with their other friends. Now take the raspberry jalapeno mixture off the stove, and pour all of it into the waiting drummies. Mix the drummies all around with the sauce. They are so excited to be sweet and spicy like Mr. Banderas. Now get out your jelly roll pan or 1/4 sheet pan, the one with sides, and spray it with Pam. Take your tongs and place the drummies in the pan. Take a large spoon, and gently pour all the raspberry jalapeno sauce over each of the drummies, coating them all the way. Now pop these sweeties in the oven for about 35 minutes. Keep checking them, cause you are going to flip them with your tongs halfway through. You'll know when they are done. Both sides will look wonderfully golden. The entire cooking process should be about 40 minutes. Could be 30 depending on your oven, so just keep checking. Next thing you know, you won't be calling them "little drummies" anymore. They will be all grown up, sweet and spicy just like their idol, Antonio Banderas (said in the most wonderful sultry Latin American accent of course). HINT: Be sure to let them sit for about 15 minutes before you dive into them. They are way better when left to get all sticky and wonderful for about 15 minutes or more before eating them. Note: I bought the little chicken drummies, but feel free to use both chicken drummies and chicken wings. After all, they ARE called chicken "wings". It's just a personal preference.
RASPBERRY HABANERO JAM
This jam is delicious poured over a block of cream cheese and served with crackers. The heat from the peppers and the sweetness of the sugar and berries complement each other perfectly. A simple and unique appetizer or game day snack. This jam is wonderful on top of vanilla ice cream too!

- Blend vinegar, green bell pepper, and habanero peppers together in a blender until smooth. Stir pepper mixture, sugar, raspberries, and pectin together in a large stockpot; bring to a boil and cook until jam is smooth and sugar is dissolved, about 5 minutes.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

- Combine the chiles, orange zest, and vinegar in a heavy non-reactive pot and bring to a boil.
- Reduce the vinegar to 1/3 cup, strain, and discard the solids.
- Return the vinegar to the saucepan.
- Puree the raspberries in a food processor fitted with a plastic dough blade. (A metal blade will crush the seeds, which will impart a bitter taste to the food.) Then strain.
- Add the raspberry puree to the vinegar and simmer over low heat for 20 minutes.
- Cool to room temperature and add the orange juice.
- This marinade will keep for 1 to 2 weeks, in an airtight jar, in the refrigerator.
