I combined three of my favorite things to make this dessert...raspberries, chocolate and coffee.-Adrene Schmidt, Waldersee, Manitoba

6 eggs, separated
3/4 cup sugar, divided
1 cup all-purpose flour
FILLING:
1/3 cup sugar
3 eggs
2 egg yolks
1 teaspoon instant coffee granules
2 ounces semisweet chocolate, melted
1 teaspoon vanilla extract
1 cup butter, softened
1/2 cup raspberry jam
Fresh raspberries and mint, optional

Steps:

  • In a large bowl, beat egg yolks and 1/2 cu sugar until thicken and lemon-colored. In a small bowl, beat the egg whites on medium speed until soft peak form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Gently fold into egg yolk mixture along with the flour., Divide batter among three waxed paper-lined ungreased 9-in. round baking pans. Bake at 350° for 15-20 minutes or until golden brown. Cool for 10 minutes before removing from pans to wire racks., In a small saucepan, whisk the sugar, eggs, yolks and coffee granules. Add chocolate. Cook over medium heat, stirring constantly, until mixture reaches 160° and coats the back of a metal spoon. Remove from the heat; stir in vanilla. Cool. In a small bowl, cream butter. Gradually beat in cooled chocolate mixture until smooth., To assemble, place one cake layer on a serving plate; spread with half of the mocha filling. Top with another cake layer; spread with raspberry jam. Place remaining cake on top; spread with the remaining mocha filling. Refrigerate for 3 hours. Garnish with raspberries and mint if desired.

I created this recipe myself. I wanted something that tasted like the brand-name stuff but without the steep cost! I kept the recipe simple only using coffee, milk, and sugar like the brand name does. Concentrate stays good in the refrigerator for a month.

6 cups cold water
½ pound dark roast ground coffee beans
cheesecloth
coffee filters
5 cups 1% milk
½ (14 ounce) can sweetened condensed milk
3 tablespoons white sugar
1 teaspoon white sugar
1 tablespoon unsweetened cocoa powder
½ cup hot tap water

Steps:

  • Mix 6 cups water and coffee in a 1/2-gallon jar (such as Ball®) until grounds are completely saturated. Steep for 24 hours at room temperature, stirring occasionally.
  • Transfer the coffee to the refrigerator and chill for 1 hour.
  • Place a small colander on top of a tall, lidded plastic container. Line colander with a 6-inch square of cheesecloth; fit a coffee filter on top.
  • Pour about 1 cup of the coffee into the colander until filter begins to clog. Lift the corners of the cheesecloth carefully; twist the cloth and filter to extract the liquid. Drain the remaining liquid 1 cup at a time, using a new coffee filter each time. Repeat the process with the grounds, filtering 1 cup at a time; squeeze out as much liquid as you can. Refrigerate the concentrate until ready to use.
  • Combine concentrate, 1% milk, and condensed milk in a 1/2-gallon jar.
  • Dissolve 3 tablespoons plus 1 teaspoon sugar and cocoa powder together in a bowl of hot tap water. Add to the coffee-milk mixture; cover the jar and shake well.

1 teaspoon shortening, divided
1/4 cup seedless raspberry preserves
4 tablespoons finely crushed chocolate-covered espresso beans, divided
1 cup plus 2 tablespoons dark chocolate chips, divided

Steps:

  • Line a 9-in. square pan with foil; set aside. In a microwave, melt white baking chips and 1/2 teaspoon shortening; stir until smooth. Spread into prepared pan. , Microwave preserves in 10- to 20-second intervals until melted; stir until smooth. Drop preserves by teaspoonfuls over top. Cut through layer with a knife to swirl. Sprinkle with 2 tablespoons espresso beans. Refrigerate for 10 minutes or until firm., In a microwave, melt 1 cup dark chocolate chips and remaining shortening; stir until smooth. Spread over white chocolate layer. Finely chop remaining dark chocolate chips. Sprinkle chips and remaining espresso beans over the top. Refrigerate until firm. Break into small pieces. Store in an airtight container.

2 ounces torani sugar-free raspberry flavored syrup
1 1/2 teaspoons instant coffee
1 teaspoon coffee-mate powdered french vanilla fat free non-dairy coffee creamer
1 teaspoon unsweetened cocoa
3 (1 g) packets Splenda sugar substitute
1 1/2 cups crushed ice or 8 -10 ice cubes
2 tablespoons fat free Reddi-Wip topping (a one-serving squirt)

Steps:

  • Place coffee, cocoa, Splenda and Coffee-mate in a glass. Add 1 oz. hot water to glass, and stir to dissolve ingredients. Next add Almond Breeze and Torani syrup and stir briefly. Now place contents of glass in a blender. Add ice and blend on high speed until well blended.
  • Pour into a tall glass, and finish off with whipped cream.
