Great salad, very tasty and a little different. I got this recipe from my mom.

¾ cup vegetable oil
¼ cup vinegar
2 tablespoons white sugar
2 cloves garlic, minced
1 teaspoon celery seed
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon dry mustard
2 pounds napa cabbage, shredded
8 ounces blue cheese, crumbled
1 cup toasted almond slices
½ cup chopped green onions

Steps:

  • Combine oil, vinegar, sugar, garlic, celery seed, salt, pepper, and mustard in a jar. Cover tightly with the lid and shake until all ingredients are well blended. Refrigerate until ready to use.
  • Place cabbage, blue cheese, almonds, and green onions in a large bowl. Pour dressing over the salad just before serving; toss to combine.

A sweet, crunchy cabbage dish with a superhealthy boost of vitamin C

1 red cabbage , finely sliced
25g butter
1 Bramley apple , peeled and grated
1 bay leaf
3 cloves
100ml cider vinegar
25g light muscovado sugar
handful walnuts , toasted and chopped

Steps:

  • Put the cabbage in a wide shallow pan with the butter, apple, bay leaf and cloves. Cook, stirring, until the cabbage starts to wilt. Add the vinegar (stand back and don't breathe in until the steam subsides), then continue to stir and cook until the vinegar has almost all disappeared. Add the sugar and stir until it has completely dissolved - be careful not to let it burn. Sprinkle with walnuts to serve. This will freeze well but let it thaw completely before gently reheating in a pan or microwave.

BLUE CHEESE-ONION EMPANADAS (OR EMPANADITAS)

From Rachael Ray--December 2008.....The recipe listed is for the more substantial and traditional sized empanadas, but I'm making them bite sized (empanaditas) for a cocktail party! Note that prep time does NOT include dough chilling time.

3 1/2 cups flour
3/4 cup vegetable shortening
salt and pepper
2 tablespoons extra virgin olive oil
3 lbs Spanish onions, thinly sliced
1/2 cup dates, coarsely chopped
1 teaspoon balsamic vinegar
1 large egg
2 ounces blue cheese, crumbled

Steps:

  • Using a food processor, pulse the flour, shortening and 1 teaspoon salt until the mixture resembles sand. With the machine on, add 1 cup cold water in a thin stream until the dough forms a ball. Shape into 2 equal rounds. Cover with plastic wrap and refrigerate for 30 minutes.
  • In a large skillet, heat the olive oil with 1/2 cup water over high heat. Add the onions and cook, stirring, until the water evaporates, about 10 minutes. Lower the heat and simmer, stirring, until the onions are golden-brown, about 30 minutes. Remove from the heat; season with salt and pepper and stir in the dates and balsamic vinegar. Let cool.
  • Preheat the oven to 400°F
  • On a floured work surface, cut each dough round into 6 equal pieces. Using a rolling pin, roll each piece into a thin round; trim using a 6-inch plate as a guide.
  • Beat the egg with 1 teaspoon water. Divide the onion mixture among the rounds and top each with 1 teaspoon cheese. Brush the edges with some of the egg wash, fold to enclose the filling and pinch the edges together to seal.
  • Divide the empanadas among 2 parchment-paper-lined baking sheets. Brush with the remaining egg wash. Bake until golden-brown, 20 to 25 minutes. Let cool for 15 minutes.

1 tablespoon olive oil
1 head cabbage, halved, cored and thinly sliced
1 shallot, finely chopped
1 tart apple, chopped
1 tablespoon cider vinegar
1/2 cup walnut pieces
2 teaspoons lemon juice

Steps:

  • In a large sauté pan, heat olive oil over medium heat. Add cabbage. Cook until it starts to soften, stirring occasionally, about 5 minutes.
  • Add chopped shallot and stir to distribute. Let cook about a minute.
  • Add apple pieces and stir again. Cook for 3-5 minutes or until apple starts to soften.
  • Add the cider vinegar and walnuts. Stir and cook until heated through.
  • Squeeze a little lemon juice on top. Enjoy!
