CREPES WITH SAUTEED APPLES



Crepes with Sauteed Apples image

These delicious apple crepes could easily be breakfast as well as dessert.

Number Of Ingredients 13

1 1/2 cups milk
1 cup all-purpose flour (spooned and leveled)
2 large eggs
2 teaspoons sugar
1/4 teaspoon salt
1 tablespoon unsalted butter, melted, plus more for pan
1 tablespoon unsalted butter
5 Gala apples, peeled, cored, and cut into 12 wedges
1 tablespoon fresh lemon juice (from 1 lemon)
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup dried cherries or cranberries
Reduced-fat sour cream, for serving (optional)

Steps:

  • In a large bowl, whisk together milk, flour, eggs, sugar, salt, and butter. Cover and refrigerate at least 1 hour. Meanwhile, prepare apples.
  • Heat a large (12-inch) nonstick skillet over medium-high. Dip a folded paper towel into melted butter; wipe bottom of skillet. Pour 1/3 cup batter into skillet; swirl skillet so batter coats bottom with a thin, even layer. Cook until edges are dry, about 1 minute. Using a spatula, gently lift one edge of crepe, and grasping with your fingers, flip crepe over; cook 30 seconds. (Don't worry if the first one or two aren't perfect.)
  • Slide cooked crepe out of skillet onto baking sheet. Repeat with remaining batter, stacking crepes on sheet. (If making ahead, wrap in plastic, and refrigerate up to 1 day.)
  • In a large skillet, melt butter over medium. Add apples, lemon juice, sugar, cinnamon, and 1/2 cup water; cook until apples are soft, about 15 minutes.
  • Add cherries, and cook until they have plumped, 2 minutes. (If making ahead, transfer to a bowl; cover, and refrigerate up to 1 day. Bring to room temperature before serving.)
  • (If made ahead: Preheat oven to 350 degrees. Lay crepes in a single layer, slightly overlapping, on 2 baking sheets. Warm in oven 5 minutes, and remove.) Fold into quarters. Place 2 crepes on each serving plate. Top with apple mixture. Serve with sour cream, if desired.

CINNAMON APPLE CREPES

Apples are one of my favorite fruits and this dessert is a yummy combination sweet crepes filled with a delicious apple cinnamon filling and then topped with sweetened whipped cream. It's great for breakfast or dessert.

Crepes Recipe ((use my recipe for Dessert Crepes))
2 pounds (900 grams) Granny Smith apples (or your favorite baking apple)
2 teaspoons fresh lemon juice
3 tablespoons (42 grams) unsalted butter
1/4 cup (50 grams) light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon fresh ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon kosher salt

Steps:

  • Prepare the crepe batter and cook the crepes according to this Crepe Recipe.
  • If making the crepes the day before, stack them, place them in a freezer bag and store them in the refrigerator. If making them and serving them the same day, stack them on a place and keep at room temperature.
  • Place the ground cinnamon, ground nutmeg, ground allspice and salt in a small bowl and stir to combine.
  • Peel and chop the apples into 1-inch cubes. Place them in a bowl and sprinkle with the lemon juice and toss the apples to coat them.
  • Melt the butter in a 12-inch skillet over medium heat, when it starts to bubble add the brown sugar and stir until the brown sugar-butter mixture until the sugar is thoroughly mixed in with the butter and just starts to bubble.
  • Add the apples in a single layer, turn the heat up to medium-high heat and cook the apples until half the liquid is evaporated. When the apples are cooking at the beginning, they will release a lot of liquid, so the amount of liquid in the pan will increase by a lot. Add the spice mixture and stir to mix in the spices and continue to cook the apples until most of the liquid has evaporated and a thick syrup remains
  • Occasionally stir the apples to make sure they don't burn, but for the most part let them cook undisturbed so they caramelize but are still a little firm by the time the liquid is evaporated and they have start caramelize.
  • Remove the apples from the heat and spoon them into a wide bowl. Scrape the pan to get all the syrup.

2 large eggs
1/2 cup water
1/2 cup milk plus 2 tablespoons
1 cup all-purpose flour
1/8 teaspoon ground cinnamon
Pinch salt
1-ounce unsalted butter
3 apples (Jonagold, Gala, Braeburn or Fuji)
1/2 cup hard apple cider
1/2 cup sugar
1/2 cup water
1 teaspoon lemon juice
2 teaspoons Calvados
Pinch salt
1-ounce unsalted butter
6 tablespoons creme fraiche

Steps:

  • Crepes:
  • Put the eggs, water, and 1/2 cup milk in a large bowl. Whisk until combined. Add the flour, cinnamon and salt and again whisk until combined. Whisk in the melted butter.
  • Refrigerate the batter for at least 1/2 hour.
  • Heat a 6-inch non-stick pan over medium heat. Pour 2 tablespoons crepe batter into the pan and quickly rotate the pan so the batter forms a thin layer over the bottom of the pan. (Return excess batter to the remaining batter.) Cook the crepe for 1 to 2 minutes until it is golden brown. Loosen the edge of the crepe with a knife and using your fingers, invert the crepe and cook the other side for about 10 seconds.
  • Continue cooking crepes until you have at least 12.
  • Make sure the crepes are cool and then cover them with plastic wrap. Refrigerate until you are ready to serve them.
  • Apple Balls:
  • Peel the apples. Using a melon baller, scoop out the apple balls making sure you do not scoop into the core. Make 42 balls total.
  • Combine the cider, sugar, and water in a medium-sized saucepan. Bring the mixture to a boil and boil for about 30 seconds until the sugar dissolves.
  • Reduce the cider mixture to a gentle boil. Place the apple balls in the cider syrup and cover them with parchment paper or a cloth towel. Poach the apple balls for about 5 minutes until the are soft. Be careful not to over-poach them as you want them to retain their shape. Poaching timing will depend on the variety of apple being used.
  • Remove the apples from the cider syrup, reserving the syrup. The apples can be poached ahead of time.
  • Plating:
  • Place the cider syrup in a large saute pan over medium heat. Place the crepes 1 at a time in the liquid, folding them into quarters once they have been coated with the syrup. Heat the crepes until they are warmed through.
  • Place 2 crepes on each plate. Increase the heat to high and add the lemon juice, Calvados, salt and butter. Cook until the sauce thickens slightly. While the sauce is cooking place a pile of apple balls on top of the crepes in the middle of each plate. Pour the sauce over the crepes. Top with a tablespoon of creme fraiche. Serve immediately.

4 apples
1 (2.25 ounce) package cinnamon red hot candies, divided
¼ cup brown sugar, divided
4 teaspoons butter, divided
4 12x12-inch squares aluminum foil

Steps:

  • Cut cores out of apples, leaving bottoms of apples intact. Cut off and save tops of cores. Use a spoon or sharp knife to clean flesh from the cored area of the apple, leaving hollows.
  • Place 1 teaspoon cinnamon candies, 1 teaspoon butter, and 1 tablespoon brown sugar into the hollow of each apple. Place retained top of core into hollow of each apple. Wrap apples in aluminum foil.
  • Place wrapped apples into the coals of a campfire and cook until apples are soft and filling has melted, about 15 minutes.

This recipe is for the filling only - use your own favorite recipe for a double crust or use a pre-made frozen one from the grocery store. I use whatever apples are in season or on sale - sometimes crab apples (I have to use about a dozen).

  • Boil red hots, water and sugar until red hots are dissolved. Add apples to juice and cook until tender. Add lemon juice and flour, which has been mixed with the melted butter. Bake with a double crust about 40 minutes at 350*F.

5 cups all-purpose flour
2 tablespoons sugar
2 teaspoons salt
2 cups cold butter, cubed
1 to 1-1/4 cups ice water
FILLING:
2/3 cup sugar
2/3 cup all-purpose flour
1/2 teaspoon salt
6 cups thinly sliced peeled Granny Smith apples (about 6 medium)
6 cups thinly sliced peeled Gala or Jonathan apples (about 6 medium)
1 cup Red Hots candies
1/4 cup cold butter
Vanilla ice cream, optional

Steps:

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough into 2 portions so that 1 portion is slightly larger than the other. Shape each into a rectangle; cover and refrigerate 1 hour or overnight., Preheat oven to 375°. For filling, in a large bowl, mix sugar, flour and salt. Add apples and Red Hots; toss to coat., On a lightly floured surface, roll out larger portion of dough into an 18x13-in. rectangle. Transfer to an ungreased 15x10x1-in. baking pan. Press onto the bottom and up the sides of pan. Add filling; dot with butter., Roll out remaining dough; place over filling. Fold bottom crust over edge of top crust; seal and flute or press with a fork to seal. Prick top with a fork., Bake 50-55 minutes or until golden brown and filling is bubbly. Cool on a wire rack. Serve warm. If desired, top with ice cream.

1/2 cup sugar
2 cups water
1/2 cup red hot cinnamon candies
4 large apples, peeled, cored and sliced thin
2 (3-ounce) packages cream cheese, softened
1/4 cup finely chopped walnuts
1/4 cup milk
12 prepared crêpes
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • In saucepan, bring sugar and water to boil. Add candies and stir until completely melted. Add apples. Cover and simmer for 5 -10 minutes or until tender. Let apples stand in syrup until deep pink, turning if necessary until uniform in color. Meanwhile, mix cream cheese, walnuts, and milk until blended. Spread on crêpes. With slotted spoon, remove apples from syrup and lay apples over cream cheese mixture and roll up. Stir blended cornstarch and water into remaining syrup. Cook and stir until thickened and translucent. Return any leftover apple slices to syrup and spoon over crêpes. Serve warm or cold.
