OLD FASHIONED ONION RINGS



Old Fashioned Onion Rings image

This is an actual recipe from a former employee of a popular drive-in restaurant. Crispy coated onion rings like the pro's make!

1 large onion, cut into 1/4-inch slices
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
¾ cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

2 large sweet onions
1 cup flour
1/2 teaspoon seasoned salt
1/4 teaspoon ground black pepper
1 cup whole milk
2 eggs
2 cups panko breadcrumbs
vegetable oil for frying

Steps:

  • Preheat vegetable oil to 350 degrees. Add enough oil to fill the cooking container to 3 inches deep.
  • Peel onions, and cut into ½ to ¾ inch rings. Separate onions into rings. Take the center rings and save for another recipe. You can chop those small rings for chopped onions in another recipe.
  • Set up a breading station by placing three small bowls or dishes into a row. In the first shallow container add flour, seasoned salt, and black pepper, stir to combine. In the second dish combine the eggs with 1 cup of milk. Whisk the eggs and the milk together until they are well-combined. Finally, in the third container, add the panko breadcrumbs.

1/2 cup all-purpose flour
1/2 cup water
1 large egg, lightly beaten
1 teaspoon seasoned salt
1/2 teaspoon baking powder
1 large onion, very thinly sliced
Oil for deep-fat frying

Steps:

  • In a shallow bowl, whisk the first 5 ingredients. Separate onion slices into rings. Dip rings into batter. In a deep-fat fryer, heat 1 in. of oil to 375°. In batches, fry onion rings until golden brown, 1 to 1-1/2 minutes on each side. Drain on paper towels. Serve immediately.

1 quart oil for frying, or as needed
2 cups all-purpose flour
2 teaspoons salt, divided
2 teaspoons ground black pepper, divided
3 egg whites
1 cup milk
1 tablespoon white vinegar
3 large sweet onions, peeled and sliced into thick rings

Steps:

  • Heat the oil in a large heavy skillet over medium-high heat, or deep-fryer to 375 degrees F (190 degrees C).
  • Place the flour in a shallow baking pan, and stir in 1 teaspoon of salt and 1 teaspoon of pepper. In a medium bowl, whisk together the egg whites, milk, vinegar, and remaining salt and pepper until frothy.
  • Dip the onion rings in the wet ingredients then into the flour mixture until coated. Then dip in the egg white mixture again, and then into the flour again.
  • Fry onion rings in the hot oil a few at a time so they are not crowded, until golden brown. Drain on paper towels, and serve immediately.

1 large red onion, cut into 1/2-inch-thick rounds, separated into rings
2 cups buttermilk
1 1/2 teaspoons ground cumin
Vegetable oil (for deep frying)
3/4 cup all purpose flour
1/4 cup cornmeal
1 teaspoon salt
1 teaspoon ground pepper

Steps:

  • Combine onion rings, buttermilk and 1 teaspoon ground cumin in large bowl. Let soak 1 hour, stirring occasionally.
  • Pour oil into large saucepan to depth of 1 1/2 inches; heat to 375°F. Mix flour, cornmeal, salt, pepper and remaining 1/2 teaspoon cumin in cake pan. Drain onion rings. Working in batches, add a few onion rings to flour mixture and turn to coat. Add to oil and fry until golden brown, about 45 seconds. Drain on paper towels. Sprinkle with salt and pepper and serve.

1 yellow onion - ends trimmed off, peeled, and cut crosswise into 1/2-inch slices
2 egg whites
2 tablespoons milk
1 pinch cayenne pepper, or to taste
3 cups panko bread crumbs, or more if needed
½ cup all-purpose flour
salt and ground black pepper to taste
cooking spray

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Separate onion slices into individual rings.
  • Whisk egg whites with milk in a bowl until thoroughly combined; season egg mixture with a pinch of cayenne pepper. Place panko crumbs into a separate bowl.
  • Place onion rings into a large resealable plastic bag. Add flour, salt, and black pepper; seal bag and shake until rings are well coated with flour.
  • Drop flour-coated onion rings into egg white-milk mixture, a few at a time, and toss lightly with tongs until coated. Place rings into panko crumbs and gently shake the bowl to toss the crumbs with the onion rings until rings are coated with crumbs.
  • Transfer coated onion rings to a large baking sheet; spray rings lightly with cooking spray.
  • Bake in the preheated oven until onion rings are tender and crumbs are lightly golden brown, 12 to 15 minutes.
