Red Ribbon Peach Jam Recipe image

Provided by Guest Recipe

Yield 6 half-pints

Number Of Ingredients 4

4 cups fresh peaches, peeled and chopped, and slightly crushed
1/3 cup lemon juice, plus water to equal 1 cup
1 package Mrs. Wagesu00ae Fruit Pectin Home Jellu00ae
4 cups sugar

Steps:

  • 1 Prepare jars and lids according to manufactureru2019s instructions for sterilized jars. Keep jars hot.
  • 2 Measure sugar into dry container and set aside.
  • 3 Combine peaches, lemon juice, and pectin into 6-quart or 8-quart saucepan. When mixture comes to a full boil, quickly stir in premeasured sugar amount. Stirring constantly, return to a full boil (a boil that cannot be stirred down) and boil for 1 minute. Do not overcook pectin as it may break down and prevent gelling.
  • 4 Remove from heat and skim foam from surface.
  • 5 Quickly ladle into hot jars. Leave 1u20444-inch headspace at the top. Use a clean damp cloth to wipe any spilled jam from rims and threads of jars. Cover with hot lids and tighten rings firmly.
  • 6 Set hot jars on rack in canner or large saucepot of boiling water. Water must cover jars by 1 or 2 inches. Cover canner and return to boiling. Process for 15 minutes, (begin timer when water has returned to a boil). At altitudes of 1000 feet or higher, increase processing time 1 minute for each 1000 feet of altitude.
  • 7 Remove canner from heat, remove lid and let jars sit 5 minutes in canner. Remove jars from canner, set on a clean towel or rack to cool 12-24 hours.
  • 8 When cool, check seals. Lids should be down in the center or stay down when pressed. Remove rims, label, date and store in a cool, dark, dry place. Unsealed jars should be refrigerated and used within 3 weeks.

Time 13h11m

Yield 120

Number Of Ingredients 6

7 pounds fresh peaches
10 cups white sugar
5 cups fresh raspberries
⅓ cup lemon juice
1 (6 fluid ounce) container liquid pectin (such as CERTO®)
3 tablespoons powdered pectin

Steps:

  • Immerse ten 12-ounce jars in simmering water until jam is ready. Wash lids and rings in warm soapy water.
  • Bring a large pot of water to a boil. Add peaches, 3 or 4 at a time; cook for 30 seconds. Immerse in ice water for several minutes to stop the cooking process. Drain. Peel off skins, core and dice peaches into small pieces.
  • Combine diced peaches, sugar, raspberries, and lemon juice in a large pot. Cook over medium heat, stirring occasionally, until sugar is dissolved, about 5 minutes. Increase heat to medium-high; cook at a rapid boil for 10 minutes. Stir in liquid and powdered pectin; bring back to a boil. Remove from heat and skim foam off the jam with a slotted spoon.
  • Pack jam into hot jars, filling to within 1/4 inch of the top. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, 12 to 24 hours. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all).

PEACH-CHILE JAM

This jam is reminiscent of red pepper jelly. It's fruity, sweet and slightly spicy with a defined chile flavor. Try it on a cheese plate, with pork or chicken or simply on buttered toast.
