SALMON PASTA SALAD WITH LEMON & CAPERS



Salmon pasta salad with lemon & capers image

Use frozen, skinless wild salmon fillets for a cheap and filling lunch on the go. This low-calorie, healthy dish couldn't be easier to whip up

85g wholewheat penne
1 tbsp rapeseed oil
1 large red pepper , roughly chopped
2 frozen, skinless wild salmon fillets (about 120g each)
1 lemon , zested and juiced
2 garlic cloves , finely grated
1 shallot , very finely chopped
2 tbsp capers
6 pitted Kalamata olives , sliced
1 tsp extra virgin olive oil
2 handfuls rocket

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the rapeseed oil in a frying pan, add the pepper, cover and leave for about 5 mins until it softens and starts to char a little. Stir, then push the pepper to one side and add the salmon. Cover and fry for 8-10 mins until just cooked.
  • Meanwhile, mix the lemon zest and juice in a large bowl with the garlic, shallot, capers and olives.
  • Add the cooked pepper and salmon to the bowl. Drain the pasta and add it too, with black pepper and the olive oil. Toss everything together, flaking the salmon as you do so. If eating now, toss through the rocket; if packing a lunch, leave to cool, then put in a container with the rocket on top and mix through just before eating.

4 (4 ounce) fillets salmon
2 tablespoons lemon juice
½ cup roasted red bell peppers
⅓ cup grated Parmesan cheese
1 tablespoon cornstarch
2 teaspoons minced jalapeno peppers
1 clove garlic, minced
¼ cup chopped fresh cilantro
1 cup chicken broth
1 (8 ounce) package angel hair pasta

Steps:

  • In an 8 inch baking dish, arrange filets in a single layer. Sprinkle with lemon juice. Tightly cover dish with foil. Bake at 450 degrees F (230 degrees C). Cook until fish is opaque, but still moist looking in thickest part, 12 to 14 minutes.
  • Meanwhile, in a blender, smoothly puree red peppers, parmesan, cornstarch, chili, and garlic. Add cilantro and chicken broth; whirl to blend.
  • Pour pepper mixture into a 10 inch frying pan. Stir over high heat until boiling. Reduce heat to keep warm.
  • Cook pasta in 3 quarts boiling water until tender to bite, about 7 minutes. Drain, and return to pan.
  • Stir juices from the baked salmon into red pepper sauce. Mix 1 1/2 cups sauce with pasta. Spoon pasta onto plates. Top with fish, and drizzle with remaining sauce. Serve.

1 package (8 ounces) spiral pasta, cooked and drained
2 cups fully cooked salmon chunks or 1 can (14-3/4 ounces) pink salmon, drained, bones and skin removed
1-1/2 cups quartered cherry tomatoes
1 medium cucumber, quartered and sliced
1 small red onion, sliced
1/2 cup canola oil
1/3 cup fresh lemon or lime juice
1-1/2 teaspoons dill weed
1 garlic clove, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 head lettuce, torn

Steps:

  • In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

1 (8 ounce) package farfalle pasta
2 heads broccoli, separated into florets
2 carrots, peeled and chopped
1 cup olive oil
2 teaspoons soy sauce
3 tablespoons red wine vinegar
2 cloves garlic, pressed
3 tablespoons fresh lemon juice
salt and pepper to taste
10 ounces canned salmon, drained

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain.
  • Bring a separate large pot of water to a boil. Add the broccoli and carrots, and cook in the boiling water until tender, 2 to 3 minutes; drain.
  • Combine the olive oil, soy sauce, red wine vinegar, garlic, lemon juice, salt, and pepper in a sealable container; seal. Shake vigorously to make the dressing.
  • Toss together the drained pasta, drained vegetables, salmon, and dressing in a large bowl. Store in refrigerator up to 4 days.

  • Toss a tasty salmon salad. Drain and flake a 213g can of salmon and mix in a bowl with 100g pack watercress, 150g/5oz halved boiled new potatoes and 125g/4oz blanched green beans.
  • Make tinned salmon pasta. Cook and drain 200g/7oz spaghetti according to instructions on packet. Trim and chop a handful of asparagus into 4cm/1½in lengths and blanch for 3-4 mins in boiling water, then toss with the hot pasta, a 213g drained can of salmon and 4-5 tbsp hollandaise sauce.
  • Serve up a salsa. Drain a 180g can of salmon and mix with 1 halved, stoned and chopped avocado, juice of 1 lime, 1tbsp chopped red onion and 1 deseeded and chopped green chilli.
  • Bake a fast fish pie. Peel, boil and mash 900g/2lb potatoes with 50ml/2fl oz milk and a knob of butter. Melt 25g/1oz butter in a pan over a medium heat, then stir in 25g/1oz plain flour and cook for 1 min.
  • Cook up salmon kedgeree. Perfect for brunch or dinner – this is a purse-friendly take on kedgeree. Boil and drain 175g/6oz rice as directed on pack. Heat a knob of butter and 1tbsp oil in a frying pan and cook 1 finely chopped onion for 5 mins, or till soft.

  • Make tinned salmon dip. In a processor, mix together a 180g drained can salmon and 200ml/7fl oz crème fraîche. Stir through 1tbsp chopped capers and 2 finely chopped cornichons.
  • Use tinned salmon in a stir fry. Cook 200g/7oz noodles, drain and toss with 1tbsp sesame oil. Add 1tbsp oil to a frying pan and, over a high heat, quickly stir-fry 1 deseeded chopped red chilli, 2 chopped cloves garlic, ½tbsp grated fresh ginger, 4 sliced spring onions and a 213g drained can of salmon.
  • Fry up salmon fish cakes. Boil 1 large peeled potato, then mash with a 213g drained and flaked can of salmon, 1 small handful chopped fresh chives, 2tbsp plain flour, salt and pepper.
  • Use to top jacket potatoes. In a small bowl, mix together a 180g drained can of salmon, 4tbsp soft cheese, 3 chopped spring onions and 1tbsp horseradish cream.
