This is a rich, flavorful red enchilada sauce. Pour over your favorite enchiladas and you're all set.

1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon minced onion
½ teaspoon dried oregano
2 ½ teaspoons chili powder
½ teaspoon dried basil
⅛ teaspoon ground black pepper
⅛ teaspoon salt
¼ teaspoon ground cumin
1 teaspoon dried parsley
¼ cup salsa
1 (6 ounce) can tomato sauce
1 ½ cups water

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the garlic and saute for 1 to 2 minutes. Add the onion, oregano, chili powder, basil, ground black pepper, salt, cumin, parsley, salsa and tomato sauce.
  • Mix together and then stir in the water. Bring to a boil, reduce heat to low and simmer for 15 to 20 minutes.

4 dried guajillo chiles (rinsed and stems removed)
2 dried ancho chiles (rinsed and stems removed)
1 dried Arbol chiles (rinsed and stems removed)
4 cups hot water
1/2 cup chicken or vegetable broth
1.5 tsp coarse kosher salt
1 clove garlic
1/8 tablet Abuelita Mexican chocolate ((about 12 grams))

Steps:

  • In a large bowl, add dried chiles and hot water. (If you're very sensitive to spicy food, you can also remove the seeds from the dried chiles, if desired.) Cover bowl with a large plate or plastic wrap and let the chiles soak on the counter for 20 minutes.
  • Using a slotted spoon, transfer the softened chiles into a large blender.
  • Add in 1 cup of the chile-soaked water, broth, garlic, salt, and Mexican chocolate. Puree until completely smooth. Add more water if the sauce is too thick for your liking.
  • Cover and store in an airtight container in the refrigerator until ready to use, up to two weeks.

6 dried ancho chiles
1 (6 ounce) can tomato paste
¼ cup corn oil
2 cloves garlic, minced
1 ½ teaspoons salt
1 teaspoon dried oregano
¼ teaspoon ground cumin
3 cups beef broth

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Arrange the ancho chiles on a baking sheet and toast in the preheated oven 3 to 4 minutes; remove the stems, pulp, and seeds from the toasted peppers. Place peppers in a bowl and pour enough hot water into bowl to cover completely; allow to soak for 1 hour.
  • Combine the ancho chiles, tomato paste, corn oil, garlic, salt, oregano, cumin, and about 1 cup of the beef broth in a blender; blend until smooth. Pour the mixture into a saucepan with the remaining beef broth and place over medium heat; simmer until heated through, about 10 minutes.

This recipe was given to me by a co-worker, who received it from his mother-in-law. I was planning on making enchiladas one night, and happened to show this co-worker the recipe that I was planning on using for the sauce. He promptly told me to hold off before using that recipe because he had the ultimate enchilada sauce recipe. He was right, this is excellent, but not for the faint of heart, it turns out pretty spicy, but boy is it flavorful! The original recipe had 1 cup of rice milk where I used heavy cream, and a lot less of it. Make this vegan by substituting with the rice milk, and if you aren't a fan of hot food but still want to use heavy cream just use a little more to cut the heat. This recipe makes about 4 cups, but it's not a bad idea to double the recipe and then freeze what you don't use for next time. Hope you enjoy it as much as we did.

1 head garlic
1/2 of a large yellow onion, peeled
3 tablespoons olive oil
3 cups water
2 large tomatoes
1 (4 ounce) can chipotle chiles in adobo
2 pinches dried thyme
2 -4 tablespoons heavy cream
salt

Steps:

  • Cut the very top of the head of garlic off to just expose the tops of the garlic cloves.
  • Place the head of garlic and the half onion on a large piece of tin foil and drizzle with oil.
  • Seal the top of the foil so that the garlic and onion are a little packet
  • Roast the onion and garlic for 45 minutes at 375 degrees.
  • Cut the tomatoes in half and place in a pot with the water.
  • Squeeze as much of the softened garlic into the pot, and add the onion and thyme to the pot as well.
  • Simmer for 45 minutes partially covered.
  • Let the mixture cool down a bit, and then put everything from the pot in a food processor or blender with the chipotle chilis and the adobo.
  • Process until smooth and return to the pot.
  • Mix the heavy cream or rice milk into the sauce and simmer for 3-4 minutes.
  • Enjoy!

3 tablespoons canola or vegetable oil
2 tablespoons all-purpose flour
2 tablespoons chili powder
1 ½ teaspoons cumin
1 teaspoons paprika (sweet or smoked (see notes below))
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon dried coriander
2 cups low sodium broth (beef, chicken, or vegetable)
15 ounce can tomato sauce
⅛ teaspoon salt (or to taste)
⅛ teaspoon freshly ground black pepper (or to taste)
cayenne pepper (optional and to taste (see notes below))

Steps:

  • Add the oil to a large saucepan and place over medium heat. Whisk in the flour and cook for 1 minute. Reduce heat to LOW, add the spices and cook, whisking occasionally, for 30 seconds. Whisk in the broth a little at a time and then add the tomato sauce and whisk until smooth and thickened.
  • Bring to a simmer and then reduce heat to LOW and simmer for 5 minutes to intensify the flavor. Add salt and pepper, to taste.

1 tablespoon olive oil
1/4 cup onion (white, minced)
1/2 jalapeno (seeded and chopped finely)
2 pinches cinnamon
1/4 teaspoon oregano
1 1/4 teaspoons white sugar
1/8 teaspoon red pepper flakes (optional, to taste)
1 (14 1/2 ounce) can tomato sauce
1/2 teaspoon garlic salt (or 1 med. garlic clove)
1 teaspoon dried onion (or 1/2 tsp onion powder)
1 cup water
1/4 teaspoon lime zest
1 tablespoon fresh basil (chopped, or 1 tsp dried)
1 tablespoon fresh parsley (chopped, or 1 tsp dried)
2 tablespoons cilantro (chopped)
3 tablespoons salsa (homemade is best!)

Steps:

  • Heat Pan, med high, with oil and combine next six ingredients to pan. cook 3 min, stirring often. adding some salt and pepper to taste (if using fresh garlic add this to the pan as well).
  • add remaning ingredients to the pan and bring to a boil.
  • Boil for 2-3 minutes, then reduce heat to low and let simmer for up to an hour (but it only requires simmering for 10 min).
  • Hints = Can be stored in fridge for up to 7 days, or frozen for about a month and a half. Batch is easily double and tripled keeping remaining frozen until ready to use for you next dish!

  • Remove stem and seeds from the dried chiles. Using a skillet over medium-high heat (or the fire from your gas stove) toast the chiles for 1-2 minutes, flipping to toast evenly. Cut the chiles in about 2-inch pieces and place in a microwave-safe bowl with 3 cups of water. Microwave for 5-6 minutes, stopping to stir and check every couple of minutes. The chiles will reconstitute and become soft. Set aside (reserving liquid!).
  • In a large skillet, heat olive oil over medium heat. Add onion, cook for 2 minutes, and add garlic. Stir in kosher salt, chili powder, cumin, oregano, black pepper, and tomato paste. Remove chiles from the liquid (still reserving the liquid) and add them to the skillet. Add 1 1/2 cups of chili liquid and stir to combine.
  • Remove from heat and either cool slightly to add to blender, or use an immersion blender to blend together until smooth. Pour sauce through a fine mesh strainer (you may need to use a spoon to "squeeze" the liquid out. Return the sauce to skillet and simmer for 3-4 minutes to continue to enhance the flavor.
