I changed a recipe I found and ended up with this rich, fresh-tasting dessert. Decorated to resemble a flag, it's perfect for the Fourth of July or any other patriotic occasion. -Sue Gronholz, Beaver Dam, Wisconsin

2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups heavy whipping cream, whipped
2 quarts strawberries, halved, divided
2 quarts blueberries, divided

Steps:

  • In a large bowl, beat cream cheese, sugar and extracts until fluffy. Fold in whipped cream. Place a third of the mixture in a 4-qt. bowl. Reserve 20 strawberry halves and 1/2 cup blueberries for garnish., Layer half of the remaining strawberries and blueberries over cream mixture. Top with another third of the cream mixture and the remaining berries. Spread the remaining cream mixture on top. Use the reserved strawberries and blueberries to make a "flag" on top.

1 (15 ounce) can great northern beans, drained (reserve liquid)
¼ cup chopped fresh thyme
2 ounces crumbled Gorgonzola cheese
4 sun-dried tomatoes, drained and minced
½ teaspoon ground black pepper
1 clove garlic, minced
1 multigrain baguette, cut into 3/4-inch thick slices on the bias
1 clove garlic, halved
1 (4 ounce) log goat cheese, softened
12 leaves fresh basil, or as needed

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Heat great northern beans with about 1/4 cup of liquid in a saucepan over low heat; stir in thyme, Gorgonzola cheese, sun-dried tomatoes, black pepper, and 1 clove minced garlic. Heat gently to melt Gorgonzola; keep bean mixture warm.
  • Arrange slices of baguette on a baking sheet and toast under the broiler, about 1 minute; watch carefully. Remove bread slices and rub each slice with a garlic clove half. Spread each slice with goat cheese and top with a basil leaf. Spoon bean mixture onto the appetizer and serve warm.

15 ounces cannellini beans (white kidney)
4 ounces pimientos
1/4 cup dried blueberries
2 garlic cloves, minced
2 tablespoons olive oil
1 dash salt
1 dash crushed red pepper flakes
1 loaf French bread, sliced into 1/2-inch pieces

Steps:

  • Preheat oven to 375°F.
  • Drain and rinse beans.
  • Chop pimiento, save liquid.
  • Mince garlic.
  • Mix beans, pimientos, oil from pimiento jar, 1 tbsp olive oil and garlic in sauce pan.
  • Heat bean mixture on low.
  • Add dash of salt.
  • Place bread slices onto cookie sheet and toast in oven at 375°F for 3-5 minutes.
  • Add dried blueberries to bean mixture and stir.
  • Arrange toast on a platter and spoon bean mixture onto each slice.
  • Drizzle remaining olive oil over toast and beans while on platter.
  • Sprinkle crushed red pepper flakes on top.
