Blueberry Poke Cake image

A delicious, fresh blueberry sauce adds a beautiful color to this white sheet cake. Top each serving with sweetened whipped cream and garnish with fresh blueberries, if desired.

1 (15.25 ounce) package white cake mix (such as Pillsbury®)
3 ounces white cake mix extender
1 ¼ cups water
4 egg whites
⅓ cup vegetable oil
1 cup white sugar
2 tablespoons cornstarch
1 ½ cups fresh blueberries
1 cup water
1 teaspoon lemon juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and lightly flour a 9x13-inch baking pan.
  • Blend cake mix plus extender, 1 1/4 cups water, egg whites, and oil together in a bowl using an electric mixer until just moistened. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 32 to 26 minutes.
  • While cake is baking, stir sugar and cornstarch together in a small saucepan over medium heat. Add 1 cup water and bring to a boil, stirring constantly. Add blueberries and lemon juice; cook and stir until blueberries burst and sauce turns a deep purple color, about 10 minutes. Gently mash any berries that did not burst. Remove from heat and let cool until cake is ready.
  • Transfer cake to a cooling rack and let cool to room temperature, at least 25 minutes.
  • Poke holes into the cake about 1 inch apart using the handle of a wooden spoon. Slowly pour the warm blueberry sauce over cake. Refrigerate until cool before slicing.

1-1/4 cups water
2 large eggs, room temperature
1/4 cup canola oil
STRAWBERRY GELATIN:
1 cup fresh strawberries
2/3 cup sugar
1/4 cup water
2-1/4 teaspoons strawberry gelatin
BLUEBERRY GELATIN:
3/4 cup fresh blueberries
1/2 cup water
4-1/2 teaspoons sugar
4-1/2 teaspoons berry blue gelatin
FROSTING AND FILLING:
2-1/2 cups heavy whipping cream
1/3 cup confectioners' sugar

Steps:

  • Preheat oven to 350°. Line bottoms of two 9-in. round baking pans with parchment or waxed paper; coat paper with cooking spray. In a large bowl, combine cake mix, water, eggs and oil; beat on low speed 30 seconds. Beat on medium 2 minutes., Transfer to prepared pans. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool completely in pans on wire racks., For strawberry gelatin, in a small saucepan, combine strawberries, sugar and water; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until berries are soft. Strain into a small bowl, pressing berries lightly; discard pulp. Add gelatin to syrup, stirring to dissolve completely. Cool to room temperature. Repeat steps to make blueberry gelatin., Using a wooden skewer, pierce tops of cakes to within 1 inch of edge; twist skewer gently to make slightly larger holes. Gradually pour cooled strawberry mixture over 1 cake, being careful to fill each hole. Repeat with blueberry mixture and remaining cake. Refrigerate, covered, overnight., In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until soft peaks form., Run a knife around sides of pans to loosen cakes. Remove strawberry cake from pan; remove paper. Place cake on a serving plate. Spread with 1 cup whipped cream., Remove blueberry cake from pan; remove paper. Place cake over whipped cream layer. Frost top and sides with remaining cream. Refrigerate at least 1 hour before serving.

1 (3 ounce) package cherry gelatin
1 (3 ounce) package blue raspberry gelatin
1 1/2 cups boiling water, divided
1 cup ice water, divided
2 cups heavy cream
1 tablespoon sour cream
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
1/4 cup red white and blue candy sprinkles

Steps:

  • Prepare the white cake as per the package instructions in a 9x13 pan. Allow to cool for 10 minutes and then poke all over with a chopstick. Set aside.
  • Combine each package of gelatin in a separate bowl with ¾ cup of boiling water. Stir until completely dissolved and then add ½ cup ice water. Use a measuring cup to carefully pour each mixture into alternating straight lines across the cake. Pour the lines slowly, allowing the cake to absorb the mixture completely. Chill for at least 4 hours.
  • In a cold bowl, using a hand mixer on medium speed, beat the heavy cream, sour cream, confectioners sugar and vanilla extract until medium peaks. Spread the whipped cream evenly over the cake. Top with sprinkles. Cut and serve immediately.
  • TIP: The sour cream stabilizes the whipped cream to stay whipped for longer.

1 box Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and whole eggs called for on cake mix box
1 box (3 oz) Jell-O™ strawberry-flavored gelatin
1 cup boiling water
1/2 cup cold water
1 box (3.3 oz) Jell-O™ white chocolate-flavor instant pudding & pie filling mix
1/2 cup cold milk
1 container (8 oz) Cool Whip frozen whipped topping, thawed
1 cup sliced fresh strawberries
1/2 cup fresh blueberries

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake mix as directed on box for 13x9-inch pan. Cool on cooling rack 20 minutes.
  • With tines of fork, poke holes almost to bottom of warm cake about every 1/2 inch. In medium bowl, stir gelatin and boiling water until dissolved. Stir in cold water. Carefully pour mixture evenly over top of cake. Refrigerate, loosely covered, at least 3 hours but no longer than 12 hours until serving time.
  • In large bowl, beat pudding mix and milk with whisk until blended and smooth. Gently stir in whipped topping. Drop by spoonfuls over top of cake; carefully spread until even. Arrange strawberries and blueberries on top of cake to look like flag. Store loosely covered in refrigerator.

Beat butter with a stand mixer fitted with a paddle attachment on medium speed until creamy, about 1 minute. Gradually add sugar, beating until light and fluffy, about 2 minutes. Add eggs 1 at a time, beating until just blended after each addition.
  • Whisk together flour, baking powder, and salt in a bowl. Add flour mixture to butter mixture alternately with milk, beginning and ending with flour mixture, beating on low speed until just blended after each addition. Stir in vanilla. Pour batter into prepared baking pan.
  • Bake in preheated oven until a wooden pick inserted in center of Cake comes out clean, 30 to 40 minutes. Transfer Cake in baking pan to a wire rack; let cool 10 minutes. Invert Cake onto wire rack; let cool completely, about 1 hour.
  • Prepare the Fillings: Stir together 1/2 teaspoon each of the cornstarch and water in a small bowl; set aside. Stir together blueberries, 1/3 cup of the sugar, 1 1/2 tablespoons of the orange juice, 1 1/2 tablespoons of the lemon juice, and 1/8 teaspoon of the salt in a medium saucepan. Bring mixture to a simmer over medium, stirring constantly. Continue simmering, stirring occasionally, until sugar dissolves, about 5 minutes. Stir in cornstarch-water mixture; simmer, stirring constantly, until mixture thickens slightly, 30 seconds to 1 minute. Remove from heat; let cool 15 minutes. Process mixture using an immersion blender until smooth, about 30 seconds. (Alternatively, transfer mixture to a blender, and blend until smooth.) Pour mixture into a bowl; cover and chill until cold, about 1 hour. Meanwhile, repeat procedure with remaining cornstarch, water, sugar, orange juice, lemon juice, and salt, using chopped strawberries in place of the blueberries.
