Keep a batch of these in the fridge for a quick & easy weekday breakfast solution!

1 15 oz box Raisin Bran
5 cups flour
2 1/2 cups sugar
5 teaspoons baking soda
2 teaspoons salt
4 cups buttermilk
1 cup vegetable oil
4 eggs
1 1/2 cups Craisins or raisins (optional)
fresh or frozen blueberries (optional)

Steps:

  • Combine first five dry ingredients in a large bowl; mix well.
  • Combine wet ingredients in a second bowl & whisk well.
  • Pour wet mixture into cereal mixture; stir just until blended. Fold in Craisins.
  • Place in tightly covered container in refrigerator overnight. Batter will keep up to 3 weeks. DO NOT STIR!!!
  • To bake, preheat oven to 400 degrees. Grease muffin tins (or use muffin liners). Spoon desired amount of batter into pan. If desired, press fresh or frozen blueberries into muffins just before baking. Bake 18 minutes or until toothpick comes out clean. Cool 10 minutes. Serve warm.

1 (15 ounce) box Raisin Bran cereal (Flakes , about 9 cups)
3 cups sugar
5 cups flour
5 teaspoons baking soda
2 teaspoons salt
4 eggs, beaten
1 cup vegetable oil
1 quart buttermilk
1 1/2 teaspoons cinnamon (optional)
12 teaspoons butter
12 tablespoons brown sugar

Steps:

  • Mix cereal with raisins, sugar, flour, soda and salt in a very large bowl. Add oil, eggs and milk. Allow to rest before use.
  • Store in a covered container and use as needed.
  • Fill muffin tins 2/3 full and bake at 400 degrees for 18-20 minutes.

6 cups natural wheat bran
2 cups boiling water
1 cup butter, softened
1 1/3 cups brown sugar
4 eggs
4 cups buttermilk
1 cup Crosby's Fancy Molasses
5 cups flour, spooned in
2 Tbsp baking soda
1 Tbsp baking powder
1/2 tsp salt

Steps:

  • Preheat oven to 425 F and prepare muffin pans.
  • Measure the wheat bran into a large bowl and cover with boiling water. Stir and let sit.
  • In another bowl, whisk together flour, baking soda, baking powder and salt. Set aside.
  • In a large bowl, cream butter and sugar. Add eggs, one at a time, mixing well after each addition. Whisk in the molasses and buttermilk.
  • Add flour mixture and stir gently until almost combined. Stir in wheat bran mixture and mix gently just until incorporated.
  • Scoop into prepared muffin cups and bake at 425 F for 5 minutes. Reduce oven temperature to 375 F and bake for another 18-20 minutes, until muffin tops spring back lightly when touched.
  • Cool in pan for 10 minutes then remove to a cooling rack.

1 pkg (10 ounces) raisin bran cereal
5 c flour
5 tsp baking soda
2 tsp salt
3 c sugar
1 qt buttermilk (i keep powdered buttermilk on hand and mix up what i need for baking rather than buy buttermilk for every recipe)
1 c vegetable oil
4 eggs, beaten

Steps:

  • 1. Mix all ingredients together until moistened. Store in a covered container in the refrigerator until ready to bake. Batter keeps well for up to 2 weeks.
  • 2. When ready to bake fill paper lined muffin pan cups 3/4 full of batter and bake at 350 degrees for 15-20 minutes. Return un-used batter to refrigerator. Serve hot with butter.
  • 3. Note: You can have fresh muffins for 2 or 3 days in a row with this batter. Or keep the unused batter for up to 2 weeks before using.

This is my co-worker's recipe from her mom. The pineapple and extra raisins make them a bit different than the other recipes on this site. I think they are the best raisin bran muffins ever, and the batter keeps in the fridge for up to 3 months. I make two every morning in my toaster oven and take them with me to work. Yum!

1 (18 -20 ounce) box Raisin Bran cereal
3 cups sugar
5 cups flour (I use part whole wheat)
5 teaspoons baking soda
4 eggs
1 cup oil
1 quart buttermilk
1 (20 ounce) can crushed pineapple, drained
1 1/2 cups raisins

Steps:

  • Mix the dry ingredients together in a large bowl.
  • Add the eggs, oil, buttermilk, and pineapple and stir until mixed.
  • Mix in the additional raisins.
  • Pour into greased muffin tins (don't use liners.).
  • Bake at 400 for 18-20 minutes or until golden brown.
  • The batter may be stored in a sealed container in the refrigerator for up to three months. I think this recipe improves with age as the raisin bran flakes have time to soak up the liquids more.
