- Deliciously simple, this Easy Coconut Rice made with Jasmine rice, coconut milk, and green onion can be enjoyed as a side dish or as part of the main entree made simply in your rice cooker. Step 1
- Wash the rice to remove excess starch. Step 2
- Add all the ingredients (except for the garnishes) into your rice cooker and push start! It's really that easy. Every rice cooker is a bit different, so be sure to follow your machine's specific instructions. Step 3
- Serve and garnish.
COCONUT RICE
Basmati rice is simmered in coconut milk, instead of water, giving it a rich flavor.

RICE COOKER COCONUT RICE
It's as easy as adding (rinsed) rice, coconut milk, water and salt into a rice cooker and pressing start. Prep is minimal and you get to set it and forget it for just under a half hour. This coconut rice is fluffy, fragrant and delicious! Serves 12 (1/3 cup) portions.

- Measure rice into a fine mesh strainer and rinse under cool water for a few minutes, until the water runs clear.
- Place rice into the rice cooker along with coconut milk and salt. Fill the pot with water up to the 4 cup waterline.
- Close the lid, and depending on your brand of rice cooker, press the start or "white rice" button.
- Once rice is fully cooked, keep it on the warm setting while you quickly toast coconut in a dry skillet.
- Serve coconut rice in a large bowl and top with the toasted coconut.

- Combine coconut milk and rice in a saucepan, and bring to a boil over medium heat, stirring occasionally. Add some salt, reduce heat to low, and cover. Cook for 10 minutes, stirring occasionally to make sure the rice does not stick or burn.
- Uncover, and continue to cook, stirring, over low heat until rice is tender and mixture is creamy. If liquid evaporates before rice is done, stir in water, about 1/2 cup at a time, and cook until done.

Cobbarannam--spells coconut rice in Telugu (a language of India). My Mom and Nanis (grandmothers) made this for special days like birthdays, anniversaries and even Christmas :) They served it with chicken curry!! Yum!! Whole spices may be used for making the dish but are removed before eating.

BASMATI COCONUT RICE WITH MUSHROOMS AND ZUCCHINI
Boiled rice is fine but often improves when other ingredients are added. The mushrooms and zucchini add texture and flavour to this dish. It is also a lot more colourful, serve with chicken dishes and curries.

Steps:
- Melt 1 oz of butter in a medium sized pan and fry the rice and cumin seeds till the rice is translucent.
- To the rice add the coconut, stock cube and lemon rind, and water. Bring to the boil, stir rice ONCE, reduce heat cover the pan and cook for 12 minutes turn heat off and leave to stand.
- While the rice is cooking :-.
- Melt the other oz butter in a frying pan and fry the mushrooms and zucchini till just soft. Add to the rice and serve.
