RICE KRISPIE SQUARES
Everyone's favorite. My version is stickier and gooier than the original. Make it seasonal by using the Holiday coloured cereal. Naturally gluten-free too.
Number Of Ingredients 4
Steps:
- Spray large glass bowl with cooking spray to grease well. Also grease a 13 x 9 inch pan and set aside.
- In large glass bowl, microwave margarine for 30 seconds or so to melt. Stir in marshmallows and microwave another 1 to 1 1/2 minutes, in 30 second bursts, stirring after each burst. Stir till marshmallows are all melted and blended. Stir in vanilla.
- While marshmallows are melting, measure out cereal in a separate large bowl or measuring cup. As soon as marshmallow mixture is completely melted and smooth, stir in cereal, working as quickly as you can.
- Turn out into greased 13" x 9" pan. Smooth and press down with back of spoon or greased hand. Cool before cutting.

Steps:
- Place the water in a small pot, sprinkle in the gelatin and let soak for 5 minutes.
- Lightly butter a 9 x 9 baking pan.
- After the gelatin has completely soaked, mix in the sugar and heat the mixture over medium low until the gelatin and sugar are completely dissolved into the water.
- Place the gelatin mixture in a bowl of your stand mixer and add the corn syrup, salt and vanilla.
- Using the wire whip attachment, whip the mixture until it is white and marshmallow like and very stiff peaks form, about 5 - 6 minutes.
- Fold the Rice Krispies into the marshmallow mixture and mix. Spread and pack into the buttered baking dish.
- Cover and chill in the fridge until set. Cut and serve.

- Thoroughly grease a 9- by 13-inch pan with softened butter.
- In a large pot, melt the butter. Stir in the regular marshmallows until they're totally melted. Stir in the salt. Remove from the heat and set aside.
- Pour in the cereal, folding gently the whole time until all combined. Then pour in the mini marshmallows and gently fold in. Turn into the buttered pan and press flat. Immediately top with rainbow sprinkles.
- Let cool completely, and then cut into squares.

- In a microwave or in a large saucepan over low heat, melt 1 package of marshmallows in oil; stir until smooth. Remove from heat; stir in cereal, graham crackers, 1 cups almonds and 1 cup chocolate chunks. Press mixture into a lightly-greased 13x9-in. baking pan using wax paper or a lightly-greased spatula. Cool to room temperature. Melt 1 package chocolate chunks in microwave; spread over top. Sprinkle with remaining remaining package marshmallows, almonds and chocolate chunks. - Coat a 9 x 13 inch pan with spray oil or margarine.
- In a large saucepan, melt the butter or margarine over low heat. Add the vanilla. Melt the marshmallows into the margarine, stirring. Add the cereal when the marshmallows have melted; stir until cereal is coated. Quickly pour into the prepared pan. Use a sheet of waxed paper to press the mixture down flat and evenly into the pan.
- Let set for 2 to 3 hours. Cut into squares.

- Grease an 8x8x2-inch pan with cooking spray.
- Melt butter in a large pot over medium heat. Add sweetened condensed milk. Stir with a rubber spatula until butter and milk are uniformly combined and small bubbles are forming in the center of the mixture, about 2 minutes. (When you first begin stirring they will look separated.) Add the bag of marshmallows and stir until melted and smooth. Add vanilla extract and salt and stir again. Remove from heat.
- Stir rice cereal and remaining cup of marshmallows into the pot to combine. Transfer to the prepared pan and press down lightly with a sheet of plastic wrap; don't pack them down too hard or they will lose their inherently soft and gooey texture. Sprinkle with flaky sea salt.

- Add 1/2 cup of the water to the bowl of a stand mixer. Sprinkle the gelatin over the top and allow it to sit until the gelatin has absorbed the water, at least 5 minutes.
- Meanwhile, add the remaining 1/2 cup water, sugar and corn syrup to a medium saucepan. Cover and heat over medium heat for 4 minutes. Remove lid and attach a candy thermometer to the saucepan. Increase heat to medium high and continue to heat without stirring until the mixture reaches 240°F (the mixture will come to a rapid boil). Immediately remove from heat.
- Turn the stand mixer on low speed, and slowly pour the hot sugar mixture over the dissolved gelatin. Once all the sugar has been added, slowly increase the mixer to high speed, and continue to mix until it becomes thick, and shiny white, and is cooled, about 5-7 minutes. Reduce mixer speed to low and add the vanilla and salt. Turn back to high speed and mix for another minute. Turn mixer back to low speed and add melted butter. Increase mixer to medium speed, and mix until butter is incorporated, about 30-60 seconds (marshmallow may deflate slightly).
