Steps:
- Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add butter. When butter is hot, add rice. Cook and stir rice until lightly browned, 3-5 minutes. Press cancel. Add mushrooms, green onions and garlic. In a small bowl, whisk water and beef base; pour over rice mixture., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 4 minutes. Let pressure release naturally. If desired, serve with additional chopped green onions.

Steps:
- Heat pressure cooker with oil and butter, sauté onion until transparent.
- Add rice and mix well. Add chicken stock and peas, and bring to boil, close the lid, reduce the heat and cook for 6 minutes. Let pressure cooker to cool down slowly for about 6 minutes.
- (the chicken stock can be replaced by water and 3 tsp of chicken powder).
WILD RICE PILAF WITH NUTS AND LEMON
Steps:
- Heat the olive oil in a small saucepan over medium heat. Add the pine nuts, garlic, zest, and thyme, swirl the pan until the nuts and garlic are beginning to brown, about 2 minutes. Add the wild rice and cook, stirring with a wooden spoon, until lightly toasted, about 1 minute tops. Stir in the chicken broth and salt. Bring to a boil. Reduce heat to a rapid simmer and cook, stirring occasionally, for 45 minutes to 1 hour. Check the texture of the rice and, if needed, continue simmering until tender. Add more liquid as needed, another 10 to 15 minutes. (Note: The rice should only just begin to crack when done. If it begins to curl it is overcooked. There are numerous varieties of varying qualities, which affect cooking times greatly.)
- Remove from the heat, scatter the scallions over the surface, fluff with a fork, and remove the herb sprigs and lemon zest before serving. Season with salt and black pepper, to taste.
WILD RICE - PRE-SOAKED - 2-QT. PRESSURE COOKER
Plain cooked wild rice from Kuhn Rikon's instruction manual (15 psi cooker), when you have taken the time to pre-soak the wild rice. Kuhn Rikon strongly recommends cooking at LOW pressure (8 psi) as if steamed. If increasing the amount, be mindful that when cooking grains, the contents should not exceed the 1/2 mark. Note: soak in unsalted water. I have created a separate recipe for unsoaked rice as the rice:water and cooking times differ.

- In pressure cooker, pour in water and bring it to a rolling boil.
- Pour in well-drained wild rice, stir well.
- Secure lid and bring to LOW pressure (8 psi, 1 bar). Once pot has reached low pressure, adjust heat to stabilize at low pressure. (My stove runs hot for a simmer, so sometimes I stack an extra burner grate or I press the steam valve of my Kuhn Rikon p.c. lid with a wooden spoon to keep the pressure at 1 bar. Once low pressure has been reached, begin timing for 15 minutes and cook for 12 minutes.
- Remove from heat. Let pressure reduce naturally (this will absorb some of the excess water, if any).
- Remove lid. If rice has cooked completely, but water remains, drain off excess water.
- Serve.

SPICY SPROUTS PILAF (PRESSURE COOKER)
This spicy rice delicacy is a perfect main dish for when you have lots of other last minute preparations, since rice cooks perfectly in a pressure cooker. Sprouts are easier to digest and abound in protein, calcium, iron as well as vitamin C. Serve with a chilled 'raita' or plain yogurt. This recipe is from www.tarladalal.com.

- Clean, wash and soak the rice for 10 minutes.
- Drain and keep aside.
- Heat the oil in a pressure cooker and add the bay leaf, clove, cinnamon and cumin seeds.
- When the seeds crackle, add the onion and ginger-green chilli paste and sauté till the onion turns translucent.
- Add the rice and sprouts and sauté for 2 minutes.
- Add the turmeric powder, chilli powder, ground coriander seeds and salt with 2 1/2 cups of hot water.
- Pressure cook for 2 whistles (15 minutes).
- Serve hot, garnished with the coriander.

- Select saute setting on a 6-qt. electric pressure cooker. Adjust for low heat; add 2 tablespoons butter. When butter is melted, add walnuts and 2 tablespoons brown sugar. Cook and stir until nuts are coated, 5-7 minutes. Press cancel. Transfer nuts to a bowl; set aside. Wipe inner pot clean., In the same inner pot, add squash, in batches, cut side down. Select saute setting; adjust for medium heat. Cook for 2 minutes. Press cancel. Return all squash to cooker. Add 1 cup water and cranberries. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 7 minutes. Allow pressure to release naturally for 10 minutes; quick-release any remaining pressure. Remove squash. Drain cranberries; discard cooking liquid. Place cranberries in a large bowl., When cool enough to handle, remove flesh from squash; discard skins. Place squash in a blender; cover and process until smooth. Wipe inner pot clean. Add rice and remaining 1-1/4 cups water. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 4 minutes. Allow pressure to release naturally for 10 minutes; quick-release any remaining pressure. Stir rice into cranberries., In the same inner pot, whisk milk, cornstarch and remaining 1 tablespoon butter. Select saute setting; adjust for low heat. Simmer until thickened, about 5 minutes. Stir in 1 cup pureed squash (save remaining for another use), apple and remaining 3/4 cup brown sugar. Stir in rice mixture, vanilla and cinnamon. Cook and stir until thickened, 5-7 minutes. Press cancel. Pudding will continue to thicken upon standing. Serve warm with candied walnuts and if desired, whipped cream and additional ground cinnamon. Refrigerate leftovers.

QUICK PARBOILED RICE - 2-QT. PRESSURE COOKER
Works better than my Aroma rice cooker (no burnt rice), and done in 10 minutes. Following recommended time from Kuhn Rikon, this worked perfectly for me. It will keep my dog happy, as she thinks plain rice with "chicken broth gravy" makes her dry dog food gourmet. It will also serve us anytime we need "cooked rice."

VEGETABLE RICE PILAF IN THE RICE COOKER
This works with any veggies that are about to go bad and you need to get rid of. The ingredients are basic and the recipe is easy to make since you can do it in the rice cooker. My husband and I were very impressed with how good this turned out, especially since I hardly did any work at all!

Steps:
- Dissolve 3 teaspoons chicken bouillon in 3 1/2 cups water in a rice cooker.
- Stir rice, baby bok choy, green onions, carrot, and mushrooms into the bouillon and water mixture.
- Start rice cooker and cook until liquid is absorbed and rice is tender, about 50 minutes.
- Dissolve 1 teaspoon chicken bouillon and 1/4 cup water in a small bowl; transfer mixture to a blender.
- Scoop about 1 cup of the rice mixture into the blender with the bouillon mixture; process until mixture becomes a thin paste, adding more water as needed.
- Mix the rice paste with the remaining cooked vegetables and rice until thoroughly combined.
- Season with black pepper.

- Place the butter in the cooking pot. Select Sauté when the butter is melted and sizzling, add the chopped onions, celery, and carrot. Cook, stirring occasionally, until vegetables are tender, about 3 to 5 minutes.
