BASMATI RICE PILAF WITH PROSCIUTTO, GARBANZO BEANS AND ORZO
Steps:
- Bring the oil to medium-high heat in a medium, heavy-bottomed pot with a tightly fitting lid. Add the prosciutto and crisp until it is lightly golden and the fat renders, about 1 minute. Add the carrots, peppers and onions and cook until softened, about 3 minutes. Stir in the orzo and rice. Toast until the grains are all evenly coated with oil, about 3 minutes.
- Pour the broth and lemon juice into the same pot. Bring to a boil. Add the garbanzos and bay leaf and stir to combine. Cover, reduce the heat to medium-low and simmer until the orzo and rice are tender. Remove from the heat once the liquid is fully absorbed, 12 to 15 minutes.
- Let the pilaf stand, covered, for 5 full minutes. Fluff with two forks, remove the bay leaf and season with salt and pepper. Stir in the scallions and serve garnished with the basil and mint leaves.

- Melt the butter in a lidded skillet over medium-low heat. Cook and stir orzo pasta until golden brown. Stir in onion and cook until onion becomes translucent, then add garlic and cook for 1 minute. Mix in the rice and chicken broth. Increase heat to high and bring to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Remove from heat and let stand for 5 minutes, then fluff with a fork.

MY Mom found this recipe in a local newspaper years ago and it has been one of our favorite side dishes for a long time. The original recipe was a little bland, so I have doctored it up a little. Sometimes I make more than I need for one meal so I can have leftovers.

- In a 3 quart heavy saucepan with a tight lid, heat olive oil over medium heat.
- Cook half of prosciutto in the hot oil, stirring occasionally, until browned and crispy, 1-2 minutes. With tongs or a slotted spoon,m transfer the prosciutto to a paper towel to drain. Repeat with remaining prosciutto.
- Add 2 tablespoons of butter to saucepan and reduce heat to low. When butter has melted, add 2 tablespoons of sage and cook for a few seconds, then add garlic and shallots. Cook, stirring occasionally, until shallots are soft but not browned, about 5 minutes. Add rice and salt and stir well to coat each grain with oil. Toast for a full 5 minutes, stirring regularly to keep grains separated and to prevent them fro sticking to the bottom of the pan (rice may turn opaque but keep going).
- Add wine, stir well, and cook over medium heat until wine is mostly reduced, about 3 minutes. Add chicken broth, stir once, and bring to a boil. Cover, reduce heat to low, and cook for 18 minutes. Remove pan from heat and let sit, still covered, for 5 minutes.
- Once pilaf has rested, remove lid and fluff with fork. Cut remaining 2 tablespoons of butter into several pieces, and using fork, gently fold it into the rice with the remaining 1 tablespoons sage, the Parmigiano,and the cooked prosciutto. Taste for seasoning and adjust as needed.
