Wild and Brown Rice image

A perfect side dish for game birds. May be prepared ahead of time and microwaved just prior to serving.

1 ½ cups uncooked wild rice
3 cups boiling water
1 cup uncooked brown rice
1 cup diced onion
1 cup diced carrots
¾ cup diced celery
3 (14.5 ounce) cans chicken broth
½ teaspoon ground thyme
¼ teaspoon dried marjoram
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • In heavy saucepan, soak wild rice in boiling water for 30 minutes. Drain; rinse thoroughly.
  • In large skillet or Dutch oven, combine drained wild rice, brown rice, onion, carrots, celery, chicken broth, thyme, marjoram, salt, and black pepper. Bring to a boil over high heat.
  • Reduce heat to low and simmer, covered, until rice is tender and liquid is absorbed, 50 to 60 minutes.

Rice Cooker Pilaf With Brown Rice, Lentils, and Wild Rice image

This is a quick and easy pilaf with my favorite spice--cardamom! If you don't have cardamom on hand, you can omit it--the pilaf is still delicious without it. I improvised it one evening when I was short of canned chicken broth and time. I like the recipe because it combines two of my favorite rices with lentils. The lentils add protein. The dish is a perfect accompaniment to chicken baked with a generous sprinkling of cardamom.

1/2 onion, chopped
1 1/8 cups brown rice
1/4 cup lentils
1/8 cup wild rice
4 cups water
fresh ground pepper, to taste
1 teaspoon ground cardamom
3 teaspoons chicken bouillon granules

Steps:

  • Remove the inner pot from the rice cooker.
  • Place the rices and lentils in a sieve, rinse under running water.
  • Add the onion, the rices, and the lentils to the inner pot. Add the water, the pepper, the cardamom, and the chicken bouillon granules. Stir ingredients.
  • Return inner pot to rice cooker and press "cook." If pilaf is not sufficiently done after it switches from "cook" to "warm," re-close the rice cooker and keep on "warm" for another 5-10 minutes. Cooking time should be approximately 45 minutes, your rice cooker may vary.

1/2 teaspoon kosher salt

Steps:

  • Rinse the rice in a fine-mesh sieve under cold water for 30 seconds. Drain.
  • Combine the rice, salt and 2 cups water in a wide, medium saucepan and bring the water to a boil. Reduce the heat to low, cover and simmer until all liquid is absorbed, about 30 minutes. Remove from the heat and let sit, covered, for 10 minutes. Fluff with a fork before serving.

2 cups uncooked wild rice
8 cups low-sodium chicken broth or stock, plus more if needed for thinning
3 heads broccoli, cut into small florets
8 tablespoons (1 stick) butter
1 pound white button or cremini mushrooms, finely chopped
1 medium onion, finely diced
2 carrots, peeled and finely diced
2 stalks celery, finely diced
1/4 cup all-purpose flour
1/2 cup heavy cream
1 teaspoon salt, or more to taste
1 teaspoon black pepper, or more to taste
1 cup panko breadcrumbs
2 tablespoons minced fresh parsley

Steps:

  • Add the wild rice to a medium saucepan with 5 cups of the chicken broth. Bring to a boil over medium-high heat, then reduce the heat to low and cover the pan. Cook until the rice has just started to break open and is slightly tender, 35 to 40 minutes. Set aside.
  • Meanwhile, bring a pot of water to a boil and prepare an ice water bath. Blanch the broccoli by throwing the florets into the boiling water until bright green and still slightly crisp, 1 1/2 to 2 minutes. Immediately drain the broccoli and plunge it into the bowl of ice water to stop the cooking process. Remove it from the ice water and set aside.
  • Heat a large pot over medium-high heat, then melt 6 tablespoons of the butter. Add the mushrooms and onions and cook, stirring occasionally, until the liquid begins to evaporate, 3 to 4 minutes. Add the carrots and celery and cook until the vegetables are soft and the mixture begins to turn darker in color, 3 to 4 minutes.
  • Sprinkle the flour on the vegetables, stir to incorporate it and cook for about a minute. Pour in the remaining 3 cups of broth and stir to combine. Bring the mixture to a gentle boil and allow it to thicken, about 3 minutes. Pour in the heavy cream, stirring to combine. Let the mixture cook until it thickens. Add the salt and pepper, then taste and adjust the seasonings as needed.
  • Preheat the oven to 375 degrees F.
  • Mix together the cooked rice and broccoli and tip into a 2-quart baking dish. Using a ladle, scoop out the vegetable/broth mixture and spoon it evenly all over the top, totally covering the surface with the vegetables.
  • Melt the remaining 2 tablespoons butter, then pour it into a separate bowl with the panko breadcrumbs. Toss the mixture together to coat the breadcrumbs in butter, then sprinkle the breadcrumbs all over the top of the casserole.
  • Cover with foil and bake the casserole for 20 minutes, then remove the foil and continue baking until golden brown on top, another 15 minutes. Sprinkle on the parsley after you remove it from the oven.

My husband loves this rice pilaf. Everytime I make rice he requests it. Hopefull you'll like it too! It takes a little extra preparation than a rice mix, but I think it's well worth it. You can also use wild rice, instead of white rice, but you'll need to add more liquid and it will take longer to cook.

1 1/2 cups white rice (I use jasmine, but any white rice will work)
2 cups chicken broth
1/4 cup slivered almonds
1 cup sliced mushrooms
1/2 small onion, diced
2 teaspoons margarine or 2 teaspoons butter
2 teaspoons minced garlic cloves

Steps:

  • In a small frying pan over medium heat, sautee the onion and garlic until onion is translucent. The garlic will cause the onion to scorch a bit, don't worry, it gives it flavor.
  • Add the rice, sauted onion and garlic, almonds, mushrooms, and chicken broth to a 4 cup capacity or larger rice cooker.
  • Stir briefly to distribute ingredients.
  • Set to cook. When done, let sit for 10 minutes.
  • Stir and enjoy!
  • Depending on your rice cooker, the bottom may get brown. I like it, it gives it some extra zip!

We eat this very nutritious rice dish a lot and frequently serve it to our guests. It is almost a meal in itself, and may be served simply with Karhi, a yogurt sauce, and any vegetable you like.

Yield serves 6

Number Of Ingredients 8

1/2 cup lentils
2 cups basmati rice
3 tablespoons olive or canola oil
Two 2-inch cinnamon sticks
8 cardamom pods
2 bay leaves
1/2 medium onion, cut into fine half rings
1 1/2 teaspoons salt

Steps:

  • Soak the lentils in warm water for 3-5 hours. Drain.
  • Wash the rice in several changes of water. Drain. Soak in fresh water for 30 minutes. Drain.
  • Pour the oil into a heavy, medium pan (that has a tight-fitting lid) and set over medium-high heat. When hot, put in the cinnamon, cardamom, and bay leaves. Stir for 10 seconds. Put in the onions. Stir and fry until they turn reddish brown. Add the lentils, rice, and salt. Turn heat to medium and sauté rice very gently for a minute. Add 3 cups water and bring to a boil. Cover tightly, turn heat to very, very low, and cook gently for 25 minutes.
