3 egg whites
2 eggs
1 cup skim milk
3/4 cup mashed potatoes
1/4 teaspoon salt (optional)
1/8 teaspoon white pepper
1/8 teaspoon nutmeg, to taste
1/2 cup all-purpose flour
2 tablespoons melted butter
vegetable oil cooking spray

Steps:

  • In blender combine first 7 ingredients. Blend until well combined.
  • Gradually add the flour beating after each addition until smooth. Add butter and mix thoroughly. Let stand in refrigerator at least 1 hour. Stir thoroughly before making crepes.
  • Heat pan over med heat. Spray with the vegetable oil and add about 3 tbsp batter. Tip the pan to coat bottom evenly with batter.
  • Cook the crepe for 1 minute or until the top is no longer wet and the bottom is lightly browned. USE A WIDE SPATULA carefully flip the crepe over. Brown other side. Turn out onto a clean kitchen towel. DO NOT USE TERRY.
  • Repeat until batter is finished. If you are making ahead let them cool on towel. Then stack with a sheet of wax paper between each and refrigerate or freeze them.
  • DO NOT FILL THEM BEFORE REFRIGERATING OR FREEZING.
  • The time is the sitting time in refrigerator.

1 pound boiling potatoes, scrubbed
1 1/2 tablespoons flour
Salt to taste
1/8 teaspoon freshly ground white pepper
3 eggs
1/3 cup heavy cream
1 to 2 tablespoons milk, optional
8 tablespoons unsalted butter
Sour cream or creme fraiche and caviar, or sugar and jam, optional, for serving

Steps:

  • Place potatoes in a pot of cold water, bring to a boil and cook gently until they are tender, 35 to 40 minutes. Drain, then peel and finely mash the potatoes in a mixing bowl. You should have about 1 1/2 cups potato puree.
  • Add flour and salt and pepper, then beat in the eggs one at a time. Add the cream, mix until smooth, cover and refrigerate overnight.
  • The next day the mixture should have the consistency of Russian dressing. If it is too thick, thin it with a tablespoon or two of milk. Check seasonings.
  • Preheat oven to 200 degrees. Place 1 1/2 tablespoons of the butter in a large, heavy skillet over medium heat. When the butter turns a light amber, drop about 1 1/2 tablespoons of the batter in the skillet, allowing it to spread by itself. You should be able to fry 3 pancakes at a time, allowing enough space between them so they have a nice round shape. They should be about 3 1/2 inches in diameter. Cook about a minute on the first side, flip them over and cook about 30 seconds longer. Remove from the pan, and place on a heatproof platter in the oven to keep warm. Continue adding butter to the pan and frying the rest of the batter.
  • Serve the crepes warm as a side dish, or topped with caviar and sour cream or creme fraiche or, for dessert, with jam and a sprinkling of sugar.

2 Idaho potatoes, peeled
Salt and pepper
1 cup warm clarified butter
4 (5-ounce) snapper fillets
Beurre Blanc Sauce, recipe follows
Fresh lemon herbs
2 cups heavy cream
1 cup white wine
12 whole black peppercorns
1/4 cup freshly squeezed lemon juice
2 shallots, diced
1 pound whole butter, cut into pieces, softened

Steps:

  • Using a Chinese or a regular mandoline, finely julienne the potatoes, and immediately put them into cold water and rinse thoroughly. Repeat 2 or 3 more times, or until water is clear. (The purpose of this is to rinse all the starches and sugars so potatoes do not burn when cooking). Drain water from potatoes and towel dry thoroughly. In a mixing bowl, add potatoes and season with salt and pepper. Add about 1/2 cup of the warm clarified butter, or enough to coat.
  • Preheat oven to 375 degrees F.
  • Season snapper well with salt and pepper. Take julienned potaotes and put a thin layer on the top side of the fish only. In a large saute pan heat about 1/4-inch of clarified butter over medium-high heat. Carefully lay fillets in pan, potato side down, and pan-fry until potatoes are golden brown. Turn fish over and finish cooking in pan in the oven. Place 1 fillet on each of 4 dinner plates. Top with Beurre Blanc Sauce and garnish with lemon herbs.
  • Heat cream in a heavy saucepan over medium-high heat until reduced to 3/4 cup. Reserve. In a large skillet, reduce wine, peppercorns, lemon juice, and shallots over high heat until almost dry (only a little liquid remains). Add reduced cream, whipping constantly. Remove from heat, and slowly whip in butter until thickened and smooth. Serve over snapper.

1 cup all-purpose flour, sifted
1 1/2 cups milk
2 eggs
1 tablespoon canola oil
8 eggs
salt and pepper, to taste
1/8 teaspoon mrs dash garlic and herb seasoning
1/2 teaspoon parsley, chopped
1/4 cup milk
1 1/2 cups potatoes, to 2 cups, cooked and diced
2 shallots, finely chopped
1 teaspoon fresh tarragon, finely chopped
2 tablespoons wine vinegar
1 teaspoon parsley, chopped
3 egg yolks
3/4 lb unsalted butter, clarified
salt and pepper, to taste

Steps:

  • For Crepes:.
  • In bowl, combine all ingredients and 1/4 teaspoon salt; beat till smooth.
  • Lightly grease a 6-inch skillet or crepe pan; heat.
  • Remove from heat; spoon in about 2 tablespoons batter.
  • Spread batter evenly.
  • Return to heat; brown on one side for one minute then turn over and cook the other side till lightly browned.
  • Grease pan lightly for each crepe. Makes about 12 crepes.
  • **Shortcut: These crepes can be frozen for later use. Make the crepes the day before and layer parchment paper or waxed paper between the cooled crepes, wrap in plastic and refrigerate. You can warm them in the microwave until slightly warm then fill.
  • For Filling:.
  • Beat all ingredients together except potatoes with wire whisk until well blended.
  • Add diced cooked potatoes.
  • Cook over medium heat in skillet until desired doneness.
  • Spoon mixture onto crepes then fold sides of crepes to make a roll, seam-side down. Makes 4 servings of 2 crepes each.
  • For Bernaise Sauce:.
  • Place shallots, tarragon, vinegar and parsley in stainless steel bowl.
  • Place bowl on stove top over low heat.
  • Cook until vinegar evaporates.
  • Remove from heat and let cool.
  • Add egg yolks and mix well with whisk.
  • Place bowl over saucepan containing hot water.
  • Add clarified butter, drop by drop, mixing constantly with whisk.
  • When sauce begins to thicken, continue to add butter but in a thin stream.
  • Mix constantly with whisk.
  • Season sauce well and serve.
  • **Shortcut: For a short cut, use a package of Bearnaise Sauce which works just as well. This also can be made the day before and refrigerated. If it is too thick the next day, you can add a little bit of water to thin as you warm it.

1 1/2 cups long-grain white rice (not converted; 10 oz)
3/4 cup urad dal (white split lentils; 5 oz)
1 1/2 cups plus 1/3 cup water
1 teaspoon salt
About 1/2 cup vegetable oil for cooking
For potato filling
1 1/2 lb Yukon Gold potatoes, all about the same size (4 medium)
1/4 cup vegetable oil
1 teaspoon black mustard seeds
8 fresh or thawed frozen curry leaves
1/2 teaspoon cumin seeds
1 medium onion, chopped
1 fresh green chile (such as Thai or serrano; 2 1/2 inches), minced, including seeds
1/2 teaspoon turmeric
1 cup water
3/4 teaspoon salt
Accompaniment: bottled mango chutney
Special Equipment
a well-seasoned 10-inch round cast-iron griddle or a 10-inch nonstick heavy skillet

Steps:

  • Make dosa batter:
  • Place rice and lentils in separate bowls. Fill each with water to cover by 2 inches and soak 4 hours.
  • Drain lentils in a sieve and purée in a food processor with 3/4 cup water until light and fluffy, 3 to 5 minutes. Transfer to a large bowl. Drain rice in a sieve and purée in food processor with 1/3 cup water until a gritty paste forms, about 1 minute. (Rice paste will not be as smooth as lentil paste.) Stir rice paste and 3/4 teaspoon salt into lentil paste.
  • Let mixture ferment, covered with plastic wrap, in a warm (about 80°F) draft-free place until doubled in bulk, about 24 hours. (Mixture will be light and foamy.) Stir in remaining 3/4 cup water and 1/4 teaspoon salt. Let batter stand, covered, in a warm (about 80°F) draft-free place 2 1/2 hours.
  • Make filling while batter stands:
  • Combine potatoes with cold salted water to cover by 2 inches in a 2 1/2- to 3-quart saucepan and simmer, uncovered, until potatoes are just tender, 15 to 25 minutes. Drain potatoes in a colander. When cool enough to handle, peel potatoes and cut into 1/2-inch cubes.
  • Heat oil in a 10- to 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook mustard seeds, partially covered with lid, until they just begin to pop, 15 to 30 seconds. Add curry leaves and cumin and cook, stirring, until cumin turns a shade darker, 10 to 15 seconds. Reduce heat to moderately low, then add onion and cook, stirring occasionally, until softened but not browned, 8 to 10 minutes. Stir in chile and turmeric and cook, stirring, 1 minute. Add potatoes, water, and salt and bring to a boil. Reduce heat to moderately low, then simmer, covered, stirring occasionally and mashing potatoes slightly, until sauce is thickened, 8 to 10 minutes. Discard curry leaves.
  • Cook dosas:
  • Put oven rack in middle position and preheat oven to 250°F.
  • Spread 1 teaspoon oil on griddle using a paper towel, then heat over moderate heat until hot but not smoking. Dip a 1/3-cup dry measure into batter, scooping gently to fill without deflating batter, and pour into center of griddle (scrape out batter remaining in measure). Quickly spread batter with back of a small spoon in a circular motion to thinly cover griddle. (Dosa may be lacy around edge.) Drizzle edge and top of dosa with 1 teaspoon oil and cook until underside is golden and crisp, 1 1/2 to 2 minutes. Turn dosa over with a metal spatula and cook, pressing occasionally, until underside is pale golden, about 1 minute more. (Adjust heat up or down if necessary to prevent overbrowning.) Transfer dosa to a foil-lined large baking sheet and keep warm, loosely covered with foil, in oven.
  • Make 9 to 11 more dosas in same manner, transferring as cooked to baking sheet in 1 layer and separating additional layers of dosas with foil.
  • Assemble dosas:
  • Spread 1/3 cup hot potato filling in a line across middle of each dosa and loosely fold dosa over filling in thirds like a letter.
