1/2 cup sugar
1/4 cup baking cocoa
Dash salt
1/3 cup hot water
4 cups milk
3/4 teaspoon vanilla extract
Miniature marshmallows, sweetened whipped cream or cinnamon sticks, optional

Steps:

  • In a saucepan, combine sugar, cocoa and salt. Add water; bring to a boil. Cook and stir for 2 minutes. Stir in milk; heat to serving temperature (do not boil). Remove from the heat; stir in vanilla. Whisk until frothy. If desired, garnish with marshmallows, cream or cinnamon sticks.

4 ounces dark chocolate candy bar, chopped
3 tablespoons sugar
Vanilla rum, optional

  • In a small saucepan, heat heavy whipping cream, milk, chocolate and sugar over medium heat just until mixture comes to a simmer, stirring constantly. Remove from heat; stir until smooth. If desired, add rum. Pour into 2 mugs; top with sweetened whipped cream.

When I got older - and had long since abandoned real cocoa for the instant variety - I had a craving one night for a more wholesome treat. Here's my recipe for a creamier, homestyle cup of cocoa. Perfect for those snowy winter nights!

⅓ cup unsweetened cocoa powder
⅛ teaspoon ground cinnamon
1 pinch salt
⅓ cup boiling water

1 cup half-and-half, divided

Steps:

  • Whisk together sugar, cocoa powder, cinnamon, and salt in a saucepan; stir in boiling water. Whisk until sugar is dissolved.

4 ¾ cups sifted confectioners' sugar
1 ¾ cups unsweetened cocoa powder
1 ¾ cups powdered non-dairy creamer

Steps:

  • In a large mixing bowl, combine milk powder, confectioner's sugar, cocoa powder, and creamer. Stir till thoroughly combined. Store cocoa mixture in an airtight container. Makes about 15 cups mix, or enough for about 45 servings.
  • For 1 serving, place 1/3 cup cocoa mixture in a coffee cup or mug, and add 3/4 cup boiling water. Stir to dissolve. Top with dollop of whipped cream or a few marshmallows, if desired.

2 tablespoons unsweetened cocoa powder
2 tablespoons water
2 cups milk
1/4 teaspoon vanilla
whipped cream or mini marshmallows
1 medium banana, mashed (combine in blender)
1/4 cup creamy peanut butter (combine in blender)
1 teaspoon instant coffee granules
1 tablespoon crushed peppermint candies or 1/4 teaspoon peppermint extract
1/4 teaspoon ground cinnamon or 1 cinnamon stick
1 -2 tablespoon Grand Marnier

Steps:

  • Combine sugar, cocoa, and water in small saucepan. Bring to a boil over medium heat, stirring constantly.
  • Add milk and heat to serving temperature. Do not boil.

12 ounces evaporated milk
1 1/2 cups hot water
1/4-1/3 cup sugar
1/4 cup unsweetened cocoa powder
1 dash salt
1/2 teaspoon vanilla

Steps:

  • Measure water into a 2-quart sauce pan. Add sugar, cocoa and salt. Heat water over medium heat. Stir mixture until cocoa dissolves completely. Gently bring mixture to a boil. Reduce the heat to a fast simmer and simmer it for about 5 minutes. Finally add the evaporated milk and stir to blend. Reheat briefly, but don't boil. Pour the hot chocolate into small mugs.
  • This recipe makes 4 6-ounce size servings.
  • I added a spoonful of whipped topping on the top of each filled mug. It was delicious!

¾ cup white sugar
1 pinch salt
⅓ cup boiling water
3 ½ cups milk

½ cup half-and-half cream

Steps:

  • Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs.   • Put water in small pot to boil.
  • Once boiling, add cocoa mix and stir with whisk until well blended. When bubbly, continue to stir for another 2-3 minutes.
  • Slowly add in milk (or both milk and cream). Occasionally stir until milk is on the verge of boiling.
  • Stir in vanilla and remove from heat. Pour into your favorite cocoa mug! It may need time to cool. Enjoy!
  • **If there's extra, you can store in the fridge for 1-2 days. Just reheat and stir and will still be good!
