HOMEMADE RICOTTA GNOCCHI WITH FRESH HERBS
Ricotta gnocchi are the weeknight answer to homemade pasta. Just mix together ricotta, eggs, basil, mint and Parmesan until a workable dough forms. Then roll it into logs, cut into bite-sized pieces and boil for a minute or two. Tossed with an herby tomato sauce and finished with fresh herbs and Parmesan, this is the perfect dinner for chilly fall evenings.

- Line a plate with a clean kitchen towel or a layer of 2 to 3 paper towels. Spread the the ricotta on the towel in a thin, even layer with a rubber spatula; this will help remove any excess moisture from the ricotta. Fold the edges of the towel over the ricotta, lightly press down and set aside to drain, about 15 minutes.
- Finely chop 1/2 cup of the basil leaves and 1/2 cup of the mint leaves, reserving the remaining leaves for garnish.
- In a large bowl, mix the chopped basil and mint, drained ricotta, Parmesan, eggs, 1/4 cup of the chives, 2 teaspoons salt and a healthy crack of black pepper with a rubber spatula until smooth and well-combined. Add the flour in 4 parts (1/4 cup at a time), delicately folding with the spatula between each addition to make sure the gnocchi dough remains light and fluffy.
- Bring a large pot of water to a boil. Line a baking sheet with parchment paper and dust with flour. Set aside.
- Dust a clean counter or cutting board with flour. Scoop the dough out of the bowl and onto the floured surface, dust with more flour and use your hands to form into a thick ball. Divide the dough into 4 equal pieces. Roll each piece into a 12-inch-long and 1/2-inch-thick snake. Using a sharp knife or pastry cutter, cut into 1 1/2-inch pieces and place on the prepared baking sheet until ready to cook.
- In a large skillet, bring the tomato sauce to a simmer over medium heat, 2 to 3 minutes. Reduce the heat to low to keep warm.
- Season the boiling water heavily with salt. Add the gnocchi and cook until they float to the top, 1 to 3 minutes. Transfer the gnocchi directly to the sauce using a slotted spoon or spider, add 1 cup of the pasta cooking water and delicately toss together until warmed through, taking care to not break the gnocchi.
- To plate, divide the gnocchi and sauce among 6 shallow bowls and top with Parmesan, the reserved basil and mint, the remaining 1/4 cup chives and a drizzle of olive oil. Enjoy!

- Place the ricotta in a large bowl and stir in the Parmesan, egg, parsley, thyme, tarragon and salt and pepper. Stir in the flour. Begin to knead the mixture in the bowl with your hands until it holds together. Turn the dough out onto a lightly floured surface and, with lightly floured hands, gently knead the dough until smooth and well blended, working in more flour if it is too sticky.
- Divide the dough into 8 pieces. Roll 1 piece out to a rope about 1/2an inch in diameter. Using a knife, cut the rope into 3/4-inch segments. Hold a fork upright on your work surface with the tines curved toward you. Gently roll 1 segment of dough against the tines to mark it lightly with ridges. Transfer to a lightly floured baking sheet and repeat until all the dough is used. Refrigerate, uncovered, until ready to cook. The gnocchi will keep, refrigerated, for 1 day.
- To cook the gnocchi, bring a large pot 1/4 full of salted water to a boil. Add the gnocchi and stir once very gently. Cook until the gnocchi float, then for 1 minute more (about 4 minutes total). Immediately drain, toss with olive oil and serve as desired.

- Blend ricotta cheese, milk and Parmesan in processor until smooth. Heat oil in heavy large skillet over medium heat. Add onion; sauté until beginning to brown, about 5 minutes. - Bring a large pot of well-salted water to a boil over high heat. Add the pasta and cook until al dente, according to package instructions. Reserve 2 cups pasta cooking water, then drain the pasta.
- In the same pot, make the sauce: Add ricotta, Parmesan, olive oil, pepper and a large pinch or two of salt, and stir until well combined.
- Add 1 cup pasta water to the sauce and stir until smooth. Add the pasta and herbs, and continue to stir vigorously until the noodles are well coated. Add more pasta water as needed for a smooth, soupy sauce. Taste and add more salt if needed.
- To serve, spoon the pasta into bowls and finish with more Parmesan, olive oil and pepper.

- Line a large sieve or colander with a double layer of fine-mesh cheesecloth and place it over a large bowl.
- Slowly bring the milks, cream and salt to a low boil in a large (4 qt or more) heavy pot over medium heat, stirring occasionally but shallowly, to prevent scorching (try not to scrape the bottom of the pot while stirring once the heat gets going. Scorching happens, and you don't want brown bits floating around in your ricotta). When the mixture reaches 190°F, remove from the heat and add the lemon juice. Stir gently until the mixture curdles (i.e., when the curds separate from the liquids in big, floating icebergs), about 2 minutes.
- Spoon the solid curds into the lined sieve and let drain for an hour (or an hour and a half for a drier curd). Move the ricotta to a bowl and give it a good stir. If the curds are too crumbly (i.e., too dry), add a bit of the drained liquid, stirring well to incorporate until you reach the desired consistency. Add the herbs and work them in with a spoon to combine. Cover and chill in the fridge. Discard the liquids or use for another purpose, such as bread-making (the liquid by-product of this process is whey, and whey is a wonderful substitute for the liquids in a yeast bread recipe). The ricotta will keep in the refrigerator for 2 to 3 days.
