RICOTTA TOASTS WITH ROCKET & PINE NUT SALSA

Ricotta toasts with rocket & pine nut salsa image

Rather than plating up a first course, keep things casual and share your starter from one big plate

Provided by Jane Hornby

Categories     Dinner, Starter

Time 15m

Number Of Ingredients 10

3 anchovy fillets from a can or jar, drained and roughly chopped
½ or 1 garlic clove , roughly chopped, depending on your taste
50g bag wild rocket
20g pack basil , leaves only
1 tbsp capers in brine, drained
zest 1 lemon , juice of half
3 tbsp extra-virgin olive oil , plus extra to serve
1 tbsp toasted pine nuts
½ 200g tub ricotta
sourdough bread , to serve

Steps:

  • Put the anchovies, garlic, rocket, basil leaves, capers, lemon zest, juice and olive oil into a food processor and pulse until you have a slightly chunky, bright green sauce. Stir most of the pine nuts through the sauce, spoon into a serving bowl and scatter the remaining pine nuts over the top.
  • Put the ricotta into a mixing bowl, season, then whisk until it becomes billowy and soft. Spoon into a serving bowl, drizzle over a little olive oil and add a grind or two of black pepper.
  • When you're ready to eat, heat the grill to high. Cut thin slices of bread, each big enough for a couple of bites. Spread evenly over a baking sheet and grill for 2 mins on each side until golden and crisp. Drizzle a little oil over each piece of toast, sprinkle with a little flaky sea salt, then serve with the ricotta and salsa.

CREAMY RICOTTA TART WITH PINE NUTS

Creamy Ricotta Tart with Pine Nuts image

Provided by Giada De Laurentiis

Categories     dessert

Time 2h35m

Yield 1 (11-inch) tart

Number Of Ingredients 10

1 1/2 cups plus 2 tablespoons all-purpose flour
4 tablespoons sugar
1 1/2 cups pine nuts (about 5 ounces), toasted
Pinch salt
1 stick (4 ounces) unsalted butter, melted and cooled slightly
1/2 cup water
1 cup ricotta cheese
6 ounces cream cheese, at room temperature
2 large eggs
3 large egg yolks

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of a food processor, pulse flour, 2 tablespoons of sugar, 3/4 cup of pine nuts, and salt until finely ground. Add the butter. Pulse dough just until it comes together.
  • Place the dough into an 11-inch diameter tart pan with a removable bottom and press down to cover the bottom and sides of the pan. Refrigerate until the dough is firm, about 30 minutes.
  • Line the tart shell with aluminum foil and fill with pie weights or dried beans. Bake the tart shell in the lower third of the oven until just set, about 25 minutes. Carefully remove the foil and pie weights. Bake until the tart shell is lightly golden, about 10 minutes. Cool completely.
  • Combine the remaining 2 tablespoons of sugar with the water in a small saucepan over low heat. You don't want to boil the water, you just want to heat it so that the sugar can dissolve thoroughly. Stir until the sugar dissolves and remove from heat.
  • In the bowl of a food processor, pulse the ricotta cheese and cream cheese until smooth. Add the eggs and egg yolks, 1 at a time, and process until smooth. With the machine running, add the sugar syrup in a thin steady stream and process until smooth.
  • Pour the custard into the tart shell and bake until the filling is almost set, about 20 to 25 minutes. Scatter the remaining 3/4 cup of toasted pine nuts atop the filling. Bake until the custard is set, about 10 minutes longer. Let the tart cool completely before serving.
  • The tart can be wrapped in plastic and refrigerated for up to 3 days. Return the tart to room temperature before serving.

RICOTTA TOASTS WITH MELON, CORN AND SALAMI

Ricotta Toasts With Melon, Corn and Salami image

Fresh cantaloupe and corn star in these meal-worthy toasts. They are mixed with spicy salami to complement their sweetness. You can use any cured meat with a kick, such as black pepper salami, cubed Spanish chorizo or torn soppressata. Whole-milk ricotta, made extra creamy with "milk" scraped from the corn cobs, is spread on crusty bread, then topped with the salad of melon, corn, salami, plus almonds and cilantro. Play with the balance of sweet, spicy, juicy and crunchy by adding fresh chile, thinly sliced cucumbers or snap peas or swapping the melon for stone fruit.

Provided by Ali Slagle

Categories     sandwiches

Time 15m

Yield 4 servings

Number Of Ingredients 9

2 ears of corn, kernels removed, cobs reserved
1 cup whole-milk ricotta (8 ounces)
Kosher salt and black pepper
1 cup chopped cantaloupe
1/2 cup chopped spicy or black pepper salami (about 2 1/2 ounces; if using pre-sliced salami, rip into smaller pieces)
1/2 cup cilantro leaves and stems, finely chopped
6 tablespoons roasted, salted almonds or Marcona almonds, coarsely chopped
2 teaspoons Sherry vinegar, plus more as needed
1 baguette or another sturdy bread, like ciabatta

Steps:

  • Use the blunt edge of a knife to scrape any corn milk off the cobs into a medium bowl. Add the ricotta to the corn milk, season with salt and pepper, and set aside.
  • In a large bowl, stir together the corn kernels, cantaloupe, salami, cilantro, almonds and vinegar. Season generously with salt and pepper, then taste and adjust salt, pepper and vinegar until the flavors pop. (The salad will keep covered and refrigerated for up to 5 hours. Add the cilantro and almonds just before serving.)
  • When ready to eat, cut or rip the baguette into 4 pieces crosswise, then cut or rip in half lengthwise through the middle (as if you're making a sandwich). Toast if you'd like. Spoon the ricotta onto the cut sides of the baguette, then top with the salad.

RICOTTA TOAST FOR EVERY SEASON RECIPE BY TASTY

Ricotta Toast For Every Season Recipe by Tasty image

Enjoy whipped ricotta toast all year around, simply by switching up the seasonal toppings-from winter citrus and spring greens to summer berry and fall pear. The Tasty team has these ricotta toast recipes on repeat and we think you will, too. Perfect for an easy breakfast or snack!

Provided by Betsy Carter

Categories     Sides

Yield 4 servings

Number Of Ingredients 40

3 ½ cups Homemade Ricotta, or store-bought, loosely packed
¼ cup olive oil
1 tablespoon heavy cream
toast
4 slices sourdough bread
4 teaspoons olive oil
1 orange, skin removed and cut into 1/4 in (6 mm)
1 blood orange, skin removed and cut into 1/4 in (6 mm)
2 teaspoons demerara sugar
1 tablespoon pomegranate molasses, optional
pomegranate seed, for garnish
fresh mint leaf, for garnish
olive oil, for garnish
flaky sea salt, for garnish
3 cups arugula
1 cup mixed fresh herbs, such as dill, parsley, tarragon, and/or chives, plus more for garnish
¼ cup walnut halves
2 tablespoons lemon juice
1 teaspoon kosher salt
⅓ cup olive oil
1 tablespoon water
½ cup frozen peas, thawed
1 small radish, thinly sliced
olive oil, for garnish
flaky sea salt, for garnish
freshly ground black pepper, for garnish
1 cup fresh berries, such as blackberries, strawberries, and/or raspberries
1 tablespoon balsamic vinegar
2 teaspoons sugar
½ teaspoon vanilla extract, or vanilla bean paste
⅛ teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper
fresh basil leaf, for garnish
balsamic glaze, to taste
1 medium ripe red Anjou pear, thinly sliced
3 tablespoons walnuts, roughly chopped, toasted
1 tablespoon honey
1 sprig fresh thyme
freshly ground black pepper, for garnish
flaky sea salt, for garnish

Steps:

  • Whip the ricotta: Add the ricotta, the olive oil, and 1 tablespoon heavy cream to the bowl of a food processor and blend on high speed for 1-2 minutes, scraping down the sides of the bowl as necessary, until the mixture is completely smooth. If the mixture is too thick, add another tablespoon of heavy cream to reach your desired consistency. The whipped ricotta will keep in an airtight container in the refrigerator for up to 3 days. Before using to make the toasts, transfer the ricotta to a piping bag and cut an opening about ½ inch from the tip. You should have about 3⅓ cups.
  • Toast the bread: Preheat the oven to 425°F (220°C).
  • Arrange the sourdough on a 9 x 13-inch (22x33 cm) baking sheet and generously drizzle with the olive oil. Toast for 12-14 minutes, flipping halfway through, until golden and crusty.
  • Make the winter citrus toast: Preheat the oven to 500˚F(260˚C). Line a baking sheet with parchment paper.
  • Arrange the orange and blood orange on the prepared baking sheet and sprinkle with the demerara sugar. Broil for 8-10 minutes, or until the oranges are caramelized and charred in some places.
  • Pipe the whipped ricotta onto a slice of toasted sourdough. Top with the caramelized oranges, drizzle with the pomegranate molasses, if using, and garnish with pomegranate seeds, mint leaves, a drizzle of olive oil, and a sprinkle of flaky salt.
  • Make the spring greens ricotta toast: add the arugula, herbs, walnuts, lemon juice, salt, and olive oil to a food processor. Blend until smooth, 1-2 minutes, scraping down the sides of the bowl as needed. Add the water, 1 tablespoon at a time, to thin the pesto to your desired consistency.
  • Pipe the whipped ricotta onto a slice of toasted sourdough. Top with the peas, radish, and pesto. Garnish with more fresh herbs, a drizzle of olive oil, and a sprinkle of flaky salt and black pepper.
  • Make the summer berry ricotta toast: in a medium bowl, combine the berries, balsamic vinegar, sugar, vanilla, salt, and black pepper. Stir to coat the berries well, then let macerate for 30 minutes, until the berries release some of their juices.
  • Pipe the whipped ricotta onto a slice of toasted sourdough. Spoon the macerated berries and some of their juices on top. Garnish a drizzle of balsamic glaze and basil leaves.
  • To make the fall ricotta toast, pipe the whipped ricotta onto a slice of toasted sourdough. Top with the sliced pear, honey, and thyme and garnish with flaky salt and black pepper.
  • Enjoy!

BRUSCHETTA WITH FRESH RICOTTA AND PINE NUT SALSA VERDE

Bruschetta with Fresh Ricotta and Pine Nut Salsa Verde image

Make this with homemade ricotta and you will be rewarded with a starter that is rich, pretty, and piquant. It is perfect for entertaining, because you can prepare the crostini, ricotta mixture, and salsa verde ahead of time and put the bruschetta together when your guests arrive.

Yield serves 4

Number Of Ingredients 4

2 cups Fresh Ricotta (page 110)
1/4 cup extra-virgin olive oil, plus extra for brushing
1 baguette, sliced into 12 to 16 pieces (see page 10)
1/3 cup Salsa Verde (variation with pine nuts, page 219)

Steps:

  • Before you begin, make sure all of your ingredients are at room temperature. Preheat your grill, if using. (You can also crisp the bread in a toaster.)
  • Combine the ricotta and oil in a metal bowl and whip with a whisk until fluffy. Alternatively, use a stand mixer with the paddle attachment and beat for 30 seconds to 1 minute, just to lighten the mixture and make sure the oil is incorporated.
  • Brush each slice of bread with a little olive oil, and then grill until lightly toasted and crisp, about 2 minutes per side. Alternatively, use a toaster to crisp the bread then brush with olive oil.
  • Spread the ricotta mixture over the crostini, about 2 tablespoons per slice. Dollop about 1 teaspoon of the salsa verde on each and serve.
